Thanks so much for sharing this video - It is so evident that both chef & sous chef are highly skilled - I can literally taste the lip smacking food, simply watching it - preparation is especially quick, efficient, clean and very skillful (compared to other videos I have seen) - the kitchen itself is also very tidy (a place for everything and everything in its place :) - I will make it a point to visit you guys at 1-133-5 Omiyacho, when I am in Japan - I can't wait to eat your Mapo Tofu (looks fiery hot :P) and Fried Rice - highly honored to see chef and sous chef in action - Kudos to you and kudos to the chef/sous chef - all the best to you all

I see the chef had a taste test on every order of mapo tofu. I can think of either A) they don't have many orders or B) the chef's lack of confidence.Great prep work tho.
I was just wondering, what do you do with the trimmings of your vegetables and the such? Do you give or sell them to people who have animals such as farmers?
FYI, the stove/burner should use very high heat to cook most of the Chinese foods. In order to cool down the temperature a little bit to prevent deformation of the metal cooking bench caused by over heating, that's why they turn on tiny water flow all along as temperature regulator.

めちゃくちゃ家の近所のお店だ。ここいつも開店30分ぐらい前から人が並び出してるから美味しいんだろうなといつも思ってた。ちょっと高いお店だからいつも躊躇っている
以前はこの場所は寿司屋さんか和食店が入っていたけどすぐ閉店しちゃって長らくテナント募集中の場所だったけど今回は長く営業してくれそうな人気のお店で良かった
豆腐を切ってまたケースに戻すのシンプルなことなのに目からウロコ❣
盛り付けや食器へのこだわりが町中華のレベルじゃないですね…素晴らしい
もちろん料理自体もおいしそうだし奈良に行ったら鹿さんと触れ合うのと四神さんへ行くのを忘れないようにしよう

炒飯、麻婆豆腐、海老マヨ、麻婆茄子、汁無し担々麺、焼餃子、サラダ、ザーサイ、杏仁豆腐、青椒肉絲、豚肉とピーマン炒め、鶏の唐揚げ、マンゴープリン、蒸し鶏四川ソース、美味しそうですね。
全部美味そうやし、黒い服の人の手際の良さ半端ない。プロすぎ

ここのお店、めちゃくちゃ美味しいんだけど、駐車スペースがなくて付近のコインパーキング使うしかないから遠方から来た場合は注意が必要。
今回は紹介されていないが天津飯もフワトロ食感で個人的にオススメ。
