For the curb form, what you have done many contractors do. Like your wall you can do a row of ties. You can through bolt w all thread rod. You can form higher and tie w 2x4. Most concrete contractors add chamfer to the top edge and is how we set grade.

See if the concrete company can put your yard of concrete in a small batch heading to another site. After they pour that load, they can come and pour the left over at your site. we used to do that where I worked.

When removing forms you just cut wire. I believe wooden inserts are left within concrete. There are different specialized systems for doing same thing with 6 or 8 mm wire but i guess thats not available overseas

There are concrete mixers, and then there are mortar mixers. Since concrete has stone as one of the ingredients, its best to use a concrete mixer rather than a mortar mixer. The main difference is that a concrete mixer has the mixing blades attached to the drum, and both rotate. Whereas with a mortar mixer the blades only rotate while the drum is stationary. Also,mortar has 3 ingredients plus the water, those being cement, lime, and sand. Concrete also has 3 ingredients, those being cement, sand, and stone. Its best to not attempt to make concrete by using mortar mix by simply adding stone to the mix. For those who want to use the same mixer for mixing both mortar and concrete, its best to use a concrete mixer and not a mortar mixer.
In an attempt to prove how smart you are you completely missed the underlying reason for them using the mortar mixer. They own the mortar mixer and use it improperly at most once or twice a year, meaning the risk of damaging it is monetarily worth it.
@ Makes no difference as to whether they own it or not, or how often they use it, the same rules still apply for using them. Yes, they could just mix the sand and cement in the mortar mixer, then dump it into a wheelbarrow and add the stone there. And hopefully thats what they did, but by looking at what they had for ingredients, it dosent look that way. Otherwise, there would be a very good possibility of locking up the mortar mixer due to stone getting wedged between the blades and the drum. As for your smart comment, its not a question of being smart, its simply a matter of having experience using the equipment, which you obviously dont.

What you have there is a mortar mixer. The stone in the concrete mix will tear apart the rubber pads on the mixing arms
We have small batch trucks here, they carry materials in the truck and mix as it is discharged. They can batch as little as 1/4 yard.

there's a small pry bar with a side you hammer around a sunken hex screw in order to remove with socket head

An easy bead of caulk on your inside form would both help secure and prevent leakage from under it while vibrating.
Short loads also don't mix as well in the truck.

The real answer of why 3 yards is a minimum that's bc 1 yard is neither worth their time nor are they making any money off of 1 yard.
