@@RashidaHussain Actually washing the chips after they have been cut cleans away a lot of the starch which allows them to cook both faster and better. It also lengthens the use of the oil. The starch in potatoes breaks down the oil, shortening the length of time you can use it.

I take my hat off to the lads for the fact that they are trying something to make a living. BUT, they really have a great deal to learn regarding Food Hygiene. Here in the UK an EHO (Environmental Health officer) would have a field day. But I suppose in that country the standards regarding Food Hygiene are somewhat lower than we expect here in the UK.
My friend works at McDonalds and he always picks his nose and puts boogers in customers' food. I told him that's not cool but he thinks it's funny and continues to do it. If you're in London and unlucky, you may have eaten his boogers in your burger.

Hot food must be kept at a minimum of 63 degrees between it being cooked and served to a customer. I can't see those chips being kept that hot between cooking and serving, can you?

If EHO come and tell you someone has made a complaint and you don't have your paperwork in place, you really do stand a chance of prosecution, your hygiene rating being lowered, and even losing your business. Thankfully you don't have all that to do in the kitchen at home.....

There is no need to peel the potatoes. Just wash them with the skin on and fry then eat. The skin is the healthiest part of the potato. It should always be eaten

I can understand this but when the potatoes are fried at 175 ° C, you can be sure that all the bacteria diseappear.
