This was particularly helpful because i was replacing a shower valve for a family friend and after putting everything together the water wouldn't shut off.
I bought this from lowes on sale. Turns out that last piece inside the valve was missing. Lowes exchanged it no hassle, but i took an extra two hours trying to figure out what i did wrong lol.

How tight do you wrench the bonnet nut back on? I've seen people saying only go hand tight with components like that to prevent breaking your pipes. I was wondering how tight we need to go on that.

Is the piece behind the cartridge removable? My problem is the piece behind the cartridge keeps getting clogged with sediment every so often. I tried to pry that piece out, but I didn't want to pry to hard and accidentally break it in case it's not supposed to come out. I used my air compressor to blow it out so that it works good enough for a while, but I don't want to keep doing this every few months. I suspect if all you do is replace the cartridge or clean it, you're just wasting your time and the problem will come back if you don't address the root cause, which is the rust particles coming through the pipes themselves.

I wonder if there was a way to reverse it going back in so that “hot side is cold side now” and cold side is hot side now?”

Should i turn the main water off to the house to do this? Help

Unless you have shut-off valves for your shower’s hot and cold, yes. If you turn off the water pressure to your property, remember that hot water from your water heater could still flow through your fixture. Test the shower by turning on both hot and cold. If no water comes out, or comes out then stops, you’re good to begin work.

Is there a way to adjust the water pressure? Or a reason why I have low pressure, just in the tub and shower faucet.

If your water pressure is fine everywhere else in your house the cartridge isn't the problem. The orifices in the piece behind the cartridge are the most likely culprit. They're very small and it doesn't take much to plug them up.
