I started making gyoza almost 45 years ago for my buddy's dad Dr. Sato...I would try those deep fried ....but, not my style of cooking. But, the pork was so perfect.. I loved that piece you held in front of your face....you are so funny... That is MY kind of fried pork... The camera catching the.oil splash and editing was great. Those big fryers are very dangerous and across the world burns are probably the most common kitchen injury. Easy to burn yourself on busy night...around boiling oil or working in kitchen with hot pans... Many burns over the years...one, very bad. So, great to show the danger of their job.. Great pork... Marination...like to know recipe.. This video makes me want to go buy sach chrouk...Khmer for pork meat....and cook some. Believe it or not I am making ma po tofu today for lunch... Not as good as your fried pork. Love when your videos make me hungry and want to cook.. 🙏
It doesn't matter, just don't be absent in the future, haha. Uncle, you are very smart, you know that I put dangerous clips, not because of fun, but to remind the audience to pay attention to safety. Mapo tofu is also my favorite food, I decided to choose mapo tofu for dinner tomorrow, haha. I think this fried meat is delicious, but the way of marinating was not invented by the owner, but by the owner's ancestors.

i tbink this is the same stall at the local morning market that some taiwan food show gt show.. they sell only certain day in the morning..red yeast deep fried pork ( can choose different cut of pork) Not cheap i think but very popular
Because pigs have many parts, different dishes are prepared according to the fat and meat quality of the parts, but this type of fried meat is often used in the position of the abdomen and shoulder blades. I also thought it was expensive, although it was delicious, haha.

這種炸粉類的油應該要每天換, 結果繼續用回鍋油
我看不出來用的是不是回鍋油
很明顯,油色偏暗,油倒完最後有渣,就是用回鍋油
這家用的是自熬的豬油
生意這麼好,油竟然沒有換新只是加新的上去...真是勤儉美德
要拍攝的店家,應該都會注意
我讓您長知識,那個倒油的影片,就是一開攤倒的新油,可不是舊油再添加,如果您覺得是油顏色讓您誤解是舊油,我再讓您長第二個知識,老闆用油都是肥豬肉現爆豬油,不是桶裝食用油,豬油顏色沒有桶裝沙拉油;好炸油來的金黃亮色,所以評論別人前,現衡量自己的知識!現在社會最不欠的就是酸民。

這家也算是名店,有新聞採訪過,我個人認為確實好吃,可惜沒拍到醃漬過程,跟老闆約太多次一直失敗,有點沮喪

@@blue710227 我一週出2片,所以每週一定要拍2片,老闆拍攝當天才跟我說沒進肉,這本來是可以提早說讓我改日再約,結果沒說,後來我得另外安排時間卻屢遭已讀不回......
@@blue710227 我也能選擇不說這些,但我認為店家的素質,不只是做菜好不好吃,人的部分也很重要,是否誠信、認真等,我可是有付錢的,還免費宣傳,怎麼讓我這麼難做事呢?

很少休息,最多是戒備狀態,喝點水之類的,怎麼了?

@@Theoryofcatsndogs 出去外面拍攝,加上車程最多20小時,有時要撐到食物煮好要很久呢,還有隔天才能處理好的...
我是從新竹出發,到外縣市都要1小時以上,沒辦法暫時回家啊
