I made this a couple of weeks ago and have been devouring it ever since. The longer it sits, the better it gets. It is delicious!!!! I’ll make it over and over again in the future. I didn’t have pickle crisp so I just placed a bay leaf on top of each jar once filled and it has stayed super crunchy.

How does the bay leaf affect the flavor?

Can't be too bad..tons of ppl do it. Could also use a grape leaf (wild grape i'd use)

Hi! I made this yesterday for the first time and hubs and I had some to go with dinner. It was sooo good! I cannot wait to see how much better it gets as it sits. I am new to gardening and canning, buy I gotta say that I am loving it and so is my family. Thank you for sharing your knowledge and hope to pass it on.

This sounds like a wonderful recipe! I grow cabbage for cabbage rolls and some fresh coleslaw. The rest of the family won't eat cooked cabbage, and not fond of coleslaw. But I love it! This recipe will help me use the cabbage, and I can have pickled salad in the winter and cut down on wasting my precious cabbage!

I made this 11/5 exactly per your recipe. We let it sit on the shelf for a month. Today was the day to try it and wow we were surprised. It tastes great. Thank you for a tasty recipe. Now to buy a box of cabbage from Azure to make a year's worth. I'm not changing anything. We really liked it exactly as written. I had really low expectations because we've never liked the fermented vegetables we've bought. This recipe is a keeper.

I made this today and I love it! We don’t like peppers in our slaw so this recipe is perfect for us. I love the brine, it has just enough of a kick from the vinegar to give it a bit of tang. I will be making this every year from now on. I made a different recipe a few years ago but I didn’t like it that much!
So far the recipes that I have used from your channel have been perfect! Thank you!

Hmmpf. Learn something new every day. Super thanks for your great work! Ok, been doing my due diligent research to see how everyone packs coleslaw...which never occurred to us. Each year I plant a dozen cabbages to get from one to a half dozen, depending. On overage years it's way more than we can use. Times being like they are no mas with that! So, on top of everything else you just introduced me to pickle crisp. Our solution to date is to refrigerate per Klaussen, which works very well. Just didn't know about the crispy stuff. Just ordered Hoosier Hill Farm Pickle Fresh granules, 1.5 lb Jar from Amazon which is way cheaper. We kinda got away from pickles...but now onto cabbage, the crunch is class. Again, super thankees! Liked and subscribed! Woof!

Had a storm go threw last night that toppled the tomatoes I have in containers right on top of my cucumber plants. Everybody seemed to be ok thankfully. Just saw this - you can use food grade calcium chloride from brewers and cheese making suppliers. It must be food grade.

Got plenty cabbage. I will try this instead of freezer cold slaw!

As I write this, I finally made your pickled coleslaw from produce I grew in my garden. First time I've ever canned anything. It was going great until...all the jars were in the canner....I forgot the celery seeds and pickle crisp. I had all my stuff laid out...even the ones I forgot. Oh well...next time.

I would love to know how your Kitchen Aid attachment broke? I bought one after watching you slice up your Jalapeno peppers, and after about 10 minutes of use a groove was gouged into the part that holds it in place on the on the Kitchen Aid machine, and it flew off of the mixer. I now have a dent in my hardwood floor, but at least it missed my head!

Do you think I could do this in my steam canner instead of setting up my water bath canner. I want to make this, it looks so good.

You've probably found your answer by now but, yes, you can do this in a steam-canner. Anything that can be water-bathed may also be steam-canned. They are interchangeable and have the same processing times (unless it exceeds 45 min).

Have you ever made coleslaw with the brine you use for your zucchini relish? i love that brine and have extra from making your recipe.

Can you drain off the brine and add mayo to make a creamy coleslaw?

My food processor shredded the cabbage way finer than yours, but the carrots looked the perfect size on the same setting. Hopefully it will turn out ok. I have a beginner canning question. I had to water bath a second smaller batch and one jar tipped over and broke. Can you lay a jar down and boil them or do they need to stay upright? I feel like I wouldnt have lost it if I layed it down to even out the weight more, but didnt know if it was a good idea and then it broke anyway.🤦🏽‍♀️🤷🏽‍♀️

If you do red cabbage with pickled beet spices and brine that might be cool.

Do you think this would be okay to leave out the sugar? I am trying to reduce sugar intake.

I didn't see any salt in this recipe. Did you salt cabbage and rinse before adding other veggies? I cut the sugar to 1/3 cup and it was perfect for other dishes using the slaw.

At the 20 second mark she shows the bowl of cabbage in a big bowl and said it was soaking in salt water. Hope that was helpful. Happy Easter.

This is delicious, I made it last week (made 5 pints) and couldn’t wait to try it. I was wondering if it would be alright to cut the sugar down so its not so sweet. That way I would have a variety and will be making this again.

This looks so good. In El Salvador, we have what's called curtido, which I wonder if it could be canned as well. It's basically the same as this recipe but it also has onions and oregano. Would these ingredients make the recipe be ok to include? Is this a ball recipe?

    • @1870s
      @1870s  2 ปีที่แล้ว +1

Yes it's a ball book recipe and I'm sure you could add onions and oregano

I was just wondering ... would it be even crispier if I was to leave it in a salt bath for a while and drain off some of its own water? Or is that overkill?
