Well.. I had a second try on this and they did pop. The thing is that the oil has to be really hot (max) before adding the grain. The taste is same as popcorn but smaller and it doesn't have hard bits.

Do you soak and dry your sorghum before popping it?
I normally don't but if you want to do it, make sure you do it quickly so the sorghum doesn't lose its consistency
Sorghum is not a keto friendly food no matter how you pop it.
