In Kerala we don't use bread. It's usually just rice, coconut, a little cooked rice, yeast, salt, and a pinch of sugar to promote the yeast. My grandma taught me how to make Appam and as a student in the US, it's a good taste of home. And if you're making more, you don't have to reintroduce the yeast, just add a little batter that is left over from the previous preparation. Personally I like to keep my yeast culture alive through this method and I always use a little leftover batter to make new batter.

For appan either we add toddy or yeast for fermentation, salt and sugar is also added sugar to prune the yeast, and salt for taste ...also it's eaten with either egg or chicken stew.

Sanjeev ji meine aapka process follow kiya but the batter did not get fermented. Though It's hot summer here.. What can be done? Pls suggest.

i use yeast for fermentation...and tbsp of sugar adds taste to the sour appam...with salt too...y brewd chef? any advantage?im from kerala but not seen this method

It's a travesty to see him using white factory toast full of bleached flour and preservatives in the appam batter. Appam is supposed to be a simple and healthy delicacy.
In Indonesia we call it 'serabi'. Now i know that is originaly from India.

Without yeast good receipy
The team forgot to add the required sugar and salt. They were hurrying to rotate the chatti. Need the batter be so thick I wonder. Bread has yeast thats an ok substitute but if there is coconut water grind with it

Appam is not Appam without Toddy. There is no substitute for Toddy. Yeast is western style and s substitute as Toddy is not available in foreign countries or even some parts of India.
