- Healthy low calorie ice cream, guilt free, great when you are trying to lose weight, or you like me and want to replace the calorie bombs that I have been eating for decades. The whole recipe has only 840 calories! and 44 grams of protein. Divide in 10 servings, add the cookies and you get 100 calories per serving.

2.5 cup (625g) 2% milk
12 oz can evaporated milk
2 tbsp (20g) cornstarch
1/3 cup (70g) monkfruit sweetener
1 tsp vanilla extract
pinch of salt
4 biscoff cookies (optional)

Can you use plant based milk?
you can use any type of milk you prefer. I did play with cashew milk and they come out alright, the only thing is that the ice cream is watery. I would probably mix plant based milk with a more fatty milk like coconut milk (the thick kind - 120 calories per 1/3 cup)

Hi, does it have to reach a boil or do you switch the fire off as soon as it starts to bubble?
From what I know, ice-cream batter should never reach a boil.
I turn it off when it starts to bubble. Do you know why ice cream batter should never reach a boil?
@@MyFavoriteFWord hi, when I make ice-cream using milk, butter yolks and condensed milk I just slightly heat them together because if it reaches a boil, it becomes thin and doesn't turn into ice-cream into the machine.
I tried your recipe and it works, I did what you said, turning it off when it reached the boil.
