  • @Donsdoom
    @Donsdoom 2 ปีที่แล้ว +21

    I've been making mine with 1oz/pint of reduced fat cream cheese as the fat source and it works perfectly. Also, you gotta do more than just vanilla extract to get a complex vanilla flavor. I'm onto making 10 pint batches and at that size I'm doing vanilla extract, vanilla pudding, vanilla protein powder, vanilla almond milk, vanilla bean powder. Just like when you mix xanthum and guar you get a better result, mixing all these artificial/natural vanilla flavors makes for a real depth of flavor that extract alone cannot touch. In reality you need egg yolk for a truly rich flavor but I'm just not going to eat raw egg yolks all year round.

    • @Exercise4CheatMeals
      @Exercise4CheatMeals  2 ปีที่แล้ว +13

      I agree with some of your points and disagree with some.
      I agree an egg yolk being an emulsifier bring a great consistency, possibly even unmatched. I think cream cheese would also work well as an added fat to make the ice cream even creamier.
      I disagree that you need more than vanilla extract. I researched tons of vanilla ice cream recipes before testing and either only vanilla extract was used or both extract and vanilla beans were used. Using fake vanilla flavorings like protein powders, pudding mixes, and vanilla almond milk would take away from the pure vanilla flavor you get from an extract.

I don’t doubt that the xanthan gum take these to the next level BUT I will say that I have made 7 or so pints without it and they are still incredible. They are definitely good still, but i promise you the xanthan gum takes it to the next level or even the level above imo. Does store bought items with gums in it affect your stomach? I would put money that there is at least a gram of some sort of gum in a pint of any store bought ice cream and in that low of an amount doesnt mess with anyones stomach. To my surprise nearly everything liquid at the store has some sort of gum in the ingredient list. Thank you for the feedback Vasnik!

    Nick, suggestion for the future: after you weight the dry ingredients, if you want to avoid spillage, put them in the centre of a baking paper sheet. Then, when you need to add them, fold the sheet in half by bringing together opposite edges (as simple as that, you don't need to create a central crease) and tilt the sheet towards the mixing bowl, letting the dry ingredients slide. This is also useful when you sieve dry ingredients, to avoid spillage and to allow more speed: just prepare the baking sheet paper and do it on the centre. After you are done, you can still reuse the sheet. Important: don't use your silicon sheet, it needs to be a baking *paper* sheet. These are tricks used in pastry shops' laboratories.

    • @Exercise4CheatMeals
      @Exercise4CheatMeals  2 ปีที่แล้ว +8

      Hey Federico! Of course I tried using a bigger bowl for the video and had some dry ingredients spill over, but I never had an issue when testing in my kitchen. I do think that the baking sheet is a good idea though for really foolproofing the process!

    165g 1,5% fat milk and 265g almond milk is the base. Then I add different flavour pastes. Tonka, vanilla, banana, coconut, even irish cream. The icecream is unbelievably creamy and milky. It tastes better than most (if not all) regular soft serve icecreames I tasted with a fraction of the calories. It's even better than my favorite low calorie icecreames from the market. @lenisemicolon 2 ปีที่แล้ว

      It wouldn’t be low calorie. Almond milk is about 30 calories per cup, coconut is over 100 calories per cup. Tons of other options would work if calories weren’t a concern.

    • @Exercise4CheatMeals
      @Exercise4CheatMeals  2 ปีที่แล้ว +1

      As teenage said it would work, but it defeats the purpose of being lower calorie, unless you are going to replace the regular milk with coconut milk, but then idk how the final product will turn out

    Great video Nick and I will be trying soon. Long time sub first time commentor. Wisconsinite so of course a fan of the greatest team in the NFC North The Packers *cough* not da lame bears *cough* I've had my Creami since January. I make almond milk ones that turn out to be more soft serve consistency. I can tell you the reason real vanilla extract works better and not imitation because it's made with alcohol. In fact I make my own vanilla extract and recommend anyone too do so as well, it's just vanilla beans and vodka (and time) traditionally. You can use any alcohol and make like a Bourbon Vanilla extract like trader Joe's sells. But back to my point, making any ice cream (ninja Creami or not) it's a good idea to add a little vodka to the ice cream batter because it helps make the it not freeze so hard and remain the smooth creamy texture and not icy as alcohol has a way lower freezing temp like -15 or -20 and freezers are typically at 0.

      @Exercise4CheatMeals  2 ปีที่แล้ว

      LOL. Thank you for commenting finally! I like to talk to everyone especially people that have been around for the long haul and put up with me. 😂 Yeah and because its made with the real vanilla beans and not science engineering making the vanilla flavor. I will be trying to make my own vanilla extract soon! I have been using vanilla bean pods as we speak to prepare for it! I may add a little vodka in the future! That would make sense since vodka never freezes in the freezer.

    Thanks for all of these great recipes! I guess there is no issue leaving pints longer than 24 hours since frozen is frozen but what about after you have mixed assuming you don't eat the whole pint. Do you put back in the freezer and respin. Does it taste the same if you do that or does it lose something? I'm considering buying one of these. One other thing, I'm in Canada and it looks like if I hit your affiliate link it goes to the US site. I'd give you the affiliate sale if I could but I don't see a way to do this

    • @Exercise4CheatMeals

      Not sure how the canada amazon works. I figured amazon wouldnt make the affiliate l links that complicated. Not a big deal, but I definitely appreciate you trying to support. Thank you.
      As far as respinning a half frozen pint, I usually add a little milk to the top, but i havent found a great way to do this yet in general. Imo the respun half pint is like 70-80% of what it was when first spun. That is still good but not great.

      Hey Topaz!
      I have not. Not sure how itd be less cals, but i would not take out the cereal as it adds so much depth and texture to the cream and the sugar in the syrup does the same not to mention the overwhelming fruity pebs flavor in the cream itself from it. I am sure it can still taste great w the protein powder though. Another goal of mine is to not use protein powder for alot of the bases then start adding protein powder in at a later date.

      While I think you can still make a decent tasting ice cream with it, I think there is a reason for hundreds of years ice cream has been made with milk and cream. Through numerous tests there is a very obvious difference even between skim and 1% milk. Plus 240g is 100 calories 13 protein while for cottage cheese 1% is 113g for 80 calories 12 protein, making it an easy choice. Not only is milk time tested but you get double the volume for only 20 more calories.

    Finally got around to making the vanilla base from this video. I only had fat-free Fairlife, so I added fat from heavy cream. Messed up the ratio (somehow decided I needed to replace 15g of the milk with cream... like 3.5x what it should have been), but each pint of vanilla is still under 150kcal. Next time I'll try with the fat ratio from the recipe to see if the texture is effected too much.
    Flavor is top notch. I used vanilla flavored almond milk (all they had at Costco that day), and kept the vanilla extract the same; perfect amount of vanilla for a plain vanilla icecream (not sure how it would do with the mix-ins).
    I also want to try completing one of the actual cereal flavors (probably CTC).
    Of course, I'd love to see if there's a way to give it a bit more protein, but the amount of icecream goodness with such low calories already makes this an excellent treat, even on a diet!
    Great job, Nick!
