    I tried avocado for the first time in about 20 years, not long ago. I used to think they tasted like candles! Now, I understand what they are about, and they are such a great ancillary for flavour. Cool little recipe, going to give it a bash.

      there can be quite a bit of variety. I have had avocadoes that really tasted like butter but usually they are not so strong. they are amazing if you see the trees it is absolute abundance like they are big and just loaded with fruit. so much food. they are not good heated though which should tell something about cooking other fats. people know this it is a good example coz even people who never heard about eating raw know that they prefer avocado raw.

    Such a great recipe and easy to riff on/add more stuff to. Had it with red onions, garlic, cherry tomatoes and poblanos cooked in the pan with beans and topped with raw red/green cabbage, cilantro and radishes. And a few tortilla chips sprinkled around for texture. So good!

    I am definitely getting the book Jamie advertised in this vid. I like all the healthy ingredients and don't really care if it is an authentic Mexican dish or not. Nice, Simple, Easy and... Awesome!

    P.S. I had the perfect salad in Mexico last week but I know I won't be able to make it turn out right without a recipe. It was double portion butterflied grilled orange shrimp over dressed greens with a creamy Chipotle dressing. I don't know what the greens were dressed with that was separate from the showcased dressing. It was culinary perfection that makes you rethink everything about food and how you want to live....

    I'm from Mexico and I've been eating this since I was a child, so yes, I think this is a Mexican breakfast, the difference is that I use pickled jalapeños from a can instead of these fresh peppers. Excuse me for my bad English.
    Mexicanos, México es muy grande y no creo que conozcan todo el territorio y sus diferentes platillos o incluso diferentes formas de preparar un platillo popular.

      Adri Ramírez jajaja, me hiciste reír con lo del aguacate por que se que suena y se ve grotesco hacerlo, pero de niño un día que mamá no estaba en casa y tenía hambre, preparé unos huevos revueltos con aguacate, lo sé suena asqueroso pero hey! Estuvieron deliciosos para mi, además todo lo que preparaba por mi cuenta a esa edad me sabía muy rico y estaba super orgulloso de ello.😂

      Si, es dificil hasta leer el titulo que generaliza que es de Mexico, cuando puede ser de una region en especifico (jaja eso nadamas por molestar).
      En mi caso lo veo como muy su version, lo que si me duele es ver que saca frigoles en lata cuando en nuestro caso (por lo menos de la parte del norte de donde soy) uno los hace, el aguacate se come sin poner en el sarten, esos limones no van en mi caso, a menos que sean tacos mañaneros de carne, y se sirve en plato como se debe pero bueno, el lo quiere hacer ver sencillo y rapido, eso si es lo unico que me pudo, el no verlo poner frijoles jajajaja.

    One Mexican breakfast that i love bcs my grandma used to make it, it’s called huevos rancheros.
    Recipe :
    For the salsa get two red tomatoes then roast them directly on the fire until the skin gets burned then add some onion and some garlic and some chilies to a blender and pulse till you get a chunky salsa and add it to a pot and reduce for 15 min add a little water if you need
    Get some corn tortillas and a pan add oil and fry the tortillas until they get crunchy and it’s called a TOSTADA
    FOR THE FINAL PLATING
    Cook your egg sunny side up and put it on top of the tostada then add the salsa on top of that tostada AND YOURE IN MEXICAN HEAVEN

    Want those eggs to be mexican? just make the chillies into salsa(tomato, onion, chilli...maybe garlic) its called huevos al albañil. Serve them with tose beens on a side, and some coffe

    For those who feel offended, I understand you, but it's says it clear, it's Jamie's Mexican breakfast, so it's his version of a Mexican breakfast, it doesn't say "el mero mero desayuno mexicano guey!" so yeah I don't like hot avocado either

    I tried it and it was 😋!!
    I even did the pickle but I also added red onion and he was right this is addictive!! I also added some chop green onions on top of my dish! What can I say?..I like onions and I like to experiment. 😂😊

    Mexican breakfasts for me are beans on bread with queso fresco and pico de gallo, or beans eggs, chorizo and queso fresco and tortilla, its more rustic and hearty than this

      You kind of cut round a piece then lift it with a spatula.

      You have to eat it from the pan, using a wooden spoon which is slightly too wide to fit your mouth

    LoooL los mexicanos no le pones limón a todo, pero el aguacate con un toque de limón es verdaderamente delicioso, igual ese huevo sabría aun mejor con un poco de cebolla frita y retirando el limón XD

    Why is it that Pinto beans are almost left out of Mexican recipes. Pinto beans are just as available as black beans, and just as tasty and nutritious. Love to both of you! Joe, I try to do some of your exercises (modified, due to a feeding tube in my jejunum).. But, try to stay strong and healthy. Thanks again Gents for this recipe!!!

      I think the recipe might actually taste good, but let's not kid about it, it's as far as traditionally Mexican as possible :D I don't mean it in a bad way. You know it, I know it, Saintvictorie knows it, even Jamie knows it :P Itwas not meant to be traditional. :D You can still complimetn Jamie Oliver though

      I'm Mexican and I can't think of a single person in Mexico that would have a breakfast like this. Comfort food? I almost barfed at that warm avocado.

    I usually like jamies recipes but ,for this one I really think you should have done a better mexican breakfast.
