Finally made it! It’s good! I used eggs from my daughter’s chickens and made my own bone broth so it is yellow and needs more salt but otherwise it dresses up my burger nicely and I can’t wait to make egg salad!
This is basically the hard boiled egg pudding the way that I prefer it. I decided that what i liked about puddings, ice creams, mousses was the creamy texture and not the sweet or chocolate (too much oxalate and tannins), so I prefer the egg pudding with savory coconut flavor using the canned coco milk and coconut oil. Sometimes I’ll add coco flakes to sit in the pudding and rehydrafe for chewiness but i find that’s too much fiber for my carnivore lifestyle. Too much fibery pooping and bloat. YMMV I just made the hard boiled egg pudding with avocados and achieved creaminess perfection. Thank you for the inspiration!

If I add lemon juice I can use it instead of hollandaise sauce. I make your pudding all the time, but make it vanilla instead of chocolate. Call me weird, but I don’t care that much for chocolate.

I love your videos, your recipes, and you (you're so kind and have such a nice way about you). I'm fairly new to the Carnivore weo and am now about 95% carnivore. I'm a single adult female, will turn 62 years old in March. In 2018 my top weight was 360 and my A1C was 10.9. I started with alternate day fasting and gradually moved from the SAD to low-carb and then Keto. It took 18 months to lose 60 lbs. I did a lot of fasting; daily intermittent, alternate day, and periodic prolonged water only fasting, one 5-day per month water-only fast during that time. I loved fasting, I had forgotten what it was like to not be hungry all the time and to not have uncontrollable cravings. It took 7 months of that before I saw a blood glucose reading on my CGM under 100, on day 5 of that particular 5-day water fast. Then COVID hit in 2020 and I got off track, gained back 40 lbs. of what I had lost, stopped fasting, was eating too many carbs, etc. I've had type 2 diabetes for 20 years, most of that time I took a non-insulin injectable in one form or another. By the beginning of 2023 the highest dosage of Trulicity was no longer working. In April I went Carnivore over-night and 3 weeks later was in the ER with cardiac symptoms; rapid heart rate combined with arrythmia and near-fainting episodes that presented as soon as I laid down, which made going to bed a very anxious experience. 3 weeks with little to no sleep will mess a person up. in hindsight it was either an electrolyte imbalance (I was using electrolytes but maybe not enough or maybe too much) or I was dumping oxalates. Either way, all the cardiac tests came back normal, I followed up with a cardiologist, wore a holter monitor, multiple rounds of blood work, EKGs, all normal. I added back in some carbs on the advice of the ER physician, until my blood sugar stabilized, which had gone sky high due to cortisol and adrenaline. We then switched my meds to Ozempic with my intent using it short-term while I again lowered my carbs, this time slowly, which is exactly what I did. I've been off the Ozempic now 5 months, after taking the lowest dose for 3 months. My blood sugar continues to improve. I've lost a total of 70lbs. from my top weight, so I'm currently at 290 lbs. down from 360. Still a long way to go regarding the scale but I know now that this is the path to reversing the type 2 diabetes and sustained weight loss. A year ago, all the toes on both feet were perpetually numb, I was fortunate to have never had any diabetic ulcers on my feet or legs, but that was likely next, and from there, amputation. I do have glaucoma, macular degeneration, and the early stages of cataracts in both eyes. I'm hoping to see improvement there because I must continue to work as I have no retirement savings after a 20 year failed marriage earlier in life in which I was left with a mountain of debt, combined with having to cash out what retirement savings I was able to accumulate in the years after my divorce when my mother passed away in 2013 and I had to stop working for a time due to I became responsible for my dad's care (he had dementia and Alzheimer's). He passed in 2014 and I went back to work shortly after. I've been with the same company since then, but have been furloughed twice, both times I was able to gain a different position and be rehired, but both times I was off work for a few months, and without savings to fall back on I used credit to get by, so I am again deeply in debt. Now I'm finally getting a handle on my health, thankfully because I must continue to work and the path that I was on would have not allowed me to continue working much longer, if I had lived. I think I was very close to my pancreas ceasing to function at all resulting in becoming a type 1 diabetic. By the grace of God and discovering the Carnivore way of eating, that didn't happen. Keep doing what you're doing Maria. You and others like you are absolutely changing lives, mine being one of them. God bless you.
THANK YOU!! I'm afraid to make mayo with raw eggs. I can't convince myself that lemon or vinegar will kill all the bacteria, at least when I make it. I trust it more when the big brands do it, lol. However, I know store bought mayo isn't healthy unless it's made with olive or avocado oil, yuk. I am going to try this!!
Wolfgang Puck, I believe, had a mayo recipe using poached eggs for those concerned about going raw. I made this hard-boiled one earlier today and it turned out great and so easy! I added salt, pepper, lemon juice, a bit of vinegar, garlic, a good dollop of dijon mustard--yum!

I have an issue with dry (as in low fat) foods getting stuck in my throat after having the lap band yrs ago. Steaks, ground beef, hard boiled eggs, PSMF bread recipes led to choking. The only way I can get them down is with mayonnaise, butter, sauces or ketchup. This gives me great hope for cutting back on my fat intake. Thank you so much 💓.

I must try this! I made Mayo earlier today and I think the avocado oil I used is slightly problematic for me. I make the pudding fairly often and have learned to blend it a good while to avoid a grainy texture.
This is intriguing. Some Mayo recipes call for lemon juice or apple cider vinegar so it will keep longer. Is that required for your mayo? We have chickens so I’ve made mayo using their eggs. It’s nice because we know the food they’re getting. Not everyone can do that though. Luckily you can get good quality eggs at the store.
I made this as is from the recipe. It just tastes like pureed eggs. While it tastes good, this is nothing like Mayo. This is a great based for Deviled Egg filling.

The salmonella is on the outside of the shell. So don't go back and forth between the shells to separate the yolk.

I was afraid to use raw eggs too, so now I make homemade mayo with Vital Farms pasteurized liquid eggs (they come in a carton). Works every time.

I added all the same stuff I´d add to oil mayo: lemon juice, vinegar, salt, pepper, dijon mustard, etc. Whatever flavors you like :)
When you hard boil your eggs…..Are your eggs cold out of the fridge when you put them in the boiling water or room temperature?
I have done it both ways. If the eggs are cold, boil for 11 minutes. If they are room temperature, try 10 minutes.
Won't they crack putting in boiling water?
