@@mirhamzadombki711 It depends on the temperature of the oven. I actually found a better cooking method than this one. If your oven keeps the heat well 3-4 hours with the floor temperature around 300-400. Instead of cooking in a very hot temperature(500-700) in 1-2 hours, try cooking it in lower temperature (300-500) in 3-4 hours .
I've stopped video several times trying to see if your andiron is the one rail style or not. It looks like it may be more complex. Is it? If so, does it help with the fire?
I cook in my oven 2h at 400deg, the tray need to be lifted 10 cm from oven floor using the grill of the pizza oven or bricks if the oven I add a bit of water too. Also u can cook over night retaining heat …

Any kind of hardwood is fine, just don’t use pine and white wood.

whole point of wood fire oven is to get smokey taste. when you wrap it in tinfoil defeats the purpose
I disagree. I think the main point of cooking in a wood oven is to enjoy cooking outside, especially in an oven you build yourself.
