Dave, I live in Mexico, and because of the altitude, the water boils fervently at about 92ºC. a friend who is from Arengtina told me that the BEST temperature to "cebar" the Mate is at about 70º-80ºC, so it's good to keep the altitude in mind.
I love yerba mate! Monte Rosa is my favorite brand. I am from Australia and a workmate of mine, who is of Argentinian parentage, introduced me to the benefits of mate. Yerba mate has become part of my daily breakfast routine. Mate gives me a gentle wake up rather than the sudden hit of regular coffee.
Very well explained. I would just empathize on one thing to avoid the first drinks from being too bitter. Right through where the bombilla fits, the water should at first be poured in a trickle. Later, as the flavor wears out, amounts of water can increase. Thanks 'circle of drink' ......you guys are amazing.
Thank you. I've been drinking from a french press. You're absolutely right. A friend gave me a gourd and bombilla from Belize and I am still learning how to make it withe gourd and bombilla.
I am new to Yerba Mate. I just tried it for the first time last week. Loved it. I thought the video very informative. I had never heard of a bombilla. Now I'm going to have to have one. Thanks! Great job.
When you put the Bombilla in, should the end of it stay in the hollow section or should it be put in at such an angle that it submerges into the bottom of the mound of yerba the other side? Another thing, I use a Calabash gourd and it's got a thing coming out of the bottom inside (I assume this is normal?). This means when I put the bombilla in so that the drinking end is coming out away from the hollow side, the bit that sticks out at the bottom gets in the way causing the top of bombilla to swing round to the mound side?? Is this okay to have the top of the bombilla resting against the mound of yerba and coming out the opposite side of your video? Again this goes back to my first question of whether the bombilla should be in the hollow section or submerged in the yerba mate. Thanks
+James Watkins The bomilla's filter is submerged diagonally under the mountain of mate (my preferred method). Or you can literally place it anywhere and pour water indiscriminately over everything, which is called "flooding the mate." The little part inside the calabash is normal. Sometimes it wears down over time or some people attempt to cut it out. I recommend just working around it as best as you can....you'll figure out how, and where, to place the bombilla with time and experience.
Dave what about the tempature from a coffee maker?? Ive been using the water from a coffee maker. I think it heats to about 180 degrees. Thanks in advance. If you could please let me know. Quite an art to making yerba mate. Great video.
Thanks a lot, this helps. One thing though, why is the water dead once it's boiled? Why would getting the (accidentally) boiled water cool down to just the right temperature (using a cooking thermometer)\ and then pouring it negatively effect the taste?
you are shaking it to shake the smallest particles away from the straw/bomba, and then you have the larger, more straw-like particles on the outside layer, closer, so that they act as a filter to reduce the particulate that goes into your straw/bomba. Living with a gaucho, here in brazil, for years, I have never seen anyone obsess about the quality of the water and the bubbles the way you do. Seriously.
Once youve enjoyed the first serve, do you then incorporate the dry leaves on the edge with the next cycle of water dave? If so, how many times would you refill a gourd with water with one batch of yerba? Great video man, thank you
you can buy yerba mate tea sacks, its a small package, usually it has 10 units or so, and its cheap, however its not "the same" as he were teaching in this video :)
Maximum respect brother ..... may I ask ... what's with the 'inverted hand kettle holding' manoeuvre? Is that like a Tai Chi energetic thing? Thank u for putting this OUT DER!
My pleasure! I learned that trick from watching older Argentine men pour their water that way. It offers a lot of control of the water flow. Here's a link to join one of our small, but powerful, mate groups on facebook if you're interested: facebook.com/CircleofDrink
Where did you get your bombilla? I have been looking everywhere for that exact shape of spoon and I can't find it. The bombilla I have now is absolutely horrible (straw with slits on the side) Ugh! Heeeelp!
Is it normal for the yerba to get more bitter the more water you add (as in the more you drink from the mate and refill it)? I've already cured the mate/gourd and the first couple sips were OK but it kept getting bitter the more I drank (and I made sure not to use boiling water).
***** How do I prevent it from getting bitter? I use Cruz de Malta so I don't think it's supposed to be bitter like the other more powdery ones. I still get the small powdery stuff through the bombilla too.
***** I don't mind a little bitterness, but the way mine comes out is the kind of bitter you can't stomach and have to spit out. Thanks for the suggestion though, I'll check it out.
NewDawnFades608 Cruz De Malta has a fair amount of dust in it, giving it the bitter taste and the powdery bits in your mouth. Try a brand which only includes the leaves and stems. Plus you can always add a little honey or brown sugar ;)
i understand that using water that is too hot would damage the mate etc so definitely dont wanna use boiling water, but why cant you let it cool down and use it then? why is it 'dead'?
Yerba mate is naturally caffeinated, so how do you drink it all day with out your heart exploding? People can't drink coffee that much all day without getting sick or hurting themselves.
Good question. Mate is the only caffein-containing herb that actually adapts to the body and helps regulate normal functioning-and enhances it! Here's an article on how it's done: circleofdrink.com/adaptogenic-herbs-explained-reduce-stress-and-fight-disease
I know you're talking in an Argentine accent but if you didn't know IF you didn't that is it's actually pronounced bombiya it's spelled bombilla but I'm sure you know that but I just had to tell you I don't know why but I did...
That's how we say it in the Rio de la Plata region. It's not wrong, it's just our particular accent. just like your version of pronouncing words isn't wrong either, it's just your version of spanish or castellano.
just make sure its clean water. Water does not water that much. I've been drinking for years with all kinds of water and honestly can not tell a difference.
Hi Dave, great staff here. You speak quite a bit about water quality but your yerba mate is not organic as I can see, so you are drinking some anwanted adjectives anyway. Keep it going mate!

You mean, Rosamonte, right? Great brand!
It's like this:
when I drink coffee, I feel okay.
When I drink tea, I feel alright.
When I drink mate, I feel...contentment.
I have to get one of those hooded sweatshirts. Still amazes me how many people don't know about YERBA MATE.
Great explanation on how to prepare a good "mate". I'm from Argentina and this is the best way to prepare "mate". Thanks!
Distilled water is stripped of all minerals. Spring water for drinking, distilled for sterility.
Very well explained. I would just empathize on one thing to avoid the first drinks from being too bitter. Right through where the bombilla fits, the water should at first be poured in a trickle. Kathy Pittman enjoy! :)
whats that background music ???
Thanks alott for the useful detailed video. I just got into mate recently... enjoying it
Hey Dave Mate. Thanks for the great Yerba tips! Just curious, is there a reason for your inverted kettle pour technique?
Just helps me cool down the water and it's fun ;) Actually, someone in Argentina taught me to pour that way.
Makes sense! Thanks for the clarification.

It wouldn't. That's homeopathic nonsense.

Thanks for the comment. Indeed, I do take my mate seriously.

Taste heavenly. Like bittersweet green tea, but with more depth.
Great detail explanation about a healthy good drink!....Thanks
Once youve enjoyed the first serve, do you then incorporate the dry leaves on the edge with the next cycle of water dave?

Great video man, thank you

you can buy yerba mate tea sacks, its a small package, usually it has 10 units or so, and its cheap, however its not "the same" as he were teaching in this video :)
Great video...pajarito is a very strong yerba. i Drink mate since 42 years ago and i use rosamonte or taragüi. greetings from argentina
my hollow always collapses and it never stays in a slope shape like that with a dry area, I dont know why
Maximum respect brother ..... may I ask ... what's with the 'inverted hand kettle holding' manoeuvre? Is that like a Tai Chi energetic thing? Thank u for putting this OUT DER!

Tai chi... you got me laughing man. I wonder if anyone else caught that. He's a kettle ninja.
if you accidentally drink parts of the plant like some parts of the leaves and stem can that do any kind of harm to you or is it perfectly fine?
Perfectly fine
I drink yerba mate all day... Changed my life.. BEST DRINK ON THE PLANET!!! Thumbs up!!!
YAYYYY!!! Mate alll dayyyyayyy!!!
shouldnt you wait a little bit longer before drinking it? Give it time to infuse.
Totally optional.
I really want to start getting into this, but I don't have a gourd. Any recommendations on where to get a good/ high quality one?
Pick up a cococup from circleofdrink.com/shop/cococup
Eben Matthews doesn't really matter which one, they all do the job. amazon is a good place to look at
how long do you have to wait in between the time you fill/refill the water to the time its ready to drink? (infusion time)
I drink it right away
okay thnx for the tip ill try to use spring water my parents by 5 Lbs of springwater from whole foods so ill use that thank u
what is the water-yerba mate ratio ? say one teaspoon of mate for 50 cl of water? i got frenchpress of 250-300 cl
Roughly 5 grams per 8 ounces is what I go for.
What did you mean by the water being dead if it boiles
You kill the minerals
Are you from Brooklyn?
Nah, yo! I'm from Queens!!! Represent!
Where did you get your bombilla? I have been looking everywhere for that exact shape of spoon and I can't find it. The bombilla I have now is absolutely horrible (straw with slits on the side) Ugh! Heeeelp!
Circleofdrink.com and Yerbamateland.com sell the Katana Bombilla
I have one of this type, if do you need yet...

No, that's not normal. After several hot pours, it should become less bitter.

Mate is naturally bitter. You may like to try a blend, which are less bitter. If you like mint, try Lady's Breath yerba mate.
***** I don't mind a little bitterness, but the way mine comes out is the kind of bitter you can't stomach and have to spit out. Thanks for the suggestion though, I'll check it out.

You can certainly do that. But for the best tasting water, it should retain as much oxygen as possible. Once boiled, a lot of oxygen is lost.
ahha, that makes sense, thanks for the info and the quick response, drink on
Why do you make this so complicated? It just isn't that complicated fam.
+john tatum I'm a mad scientist genius!!! help me!!
so complicated to just have a cup of tea.
haha... don't worry, curing a wooden gourd is only optional. You can start drinking immediately. Or use a teapot / french press.
Mate is more than tea...lol

Hi Dave, great staff here. You speak quite a bit about water quality but your yerba mate is not organic as I can see, so you are drinking some anwanted adjectives anyway. Keep it going mate!
That particular brand wasn't organic, true. All the stuff we sell on our site is organic, though. Thanks for the feedback.
;) thanks and sorry for my gramma and errors. Viva Yerba mate!
Kangen water is a scam. Don't spend a ridiculous amount of money on a water scam. Better to go distilled water or r.o.
