This is quite similar to a recipe you posted a few years ago but the other one was not cooked. What's the difference when cooking it compared to just mixing raw?

Anyone that does not like bitter tastes, omit the bitter melon and peel the lemons and limes before boiling in vinegar. The vinegar does not take away the bitter from the lemon and lime skin. The recipe is great, this is just a matter of preference.

Thanks for posting this. So I made this and it tastes very good but it is a little bitter. That doesn't put me off but the fact there is nothing sweet added like carrot or pineapple coupled with the culantro and bitter melon causes this. Someone else mentioned the lemon peels cause this. I have no idea. Next time I would add pineapple, mango or carrot and make it even better.
I have a nice batch of Orange Habanero in the freezer, might cook this up (using cilantro, and leaving out the bitter melon since I can't find that here).
I’m going to try boiling the lemon and lime. Last time I used it with the skin the bitter of the skin took over the pepper sauce. Thanks for sharing ❤️
