  • "Malai Kofta is a classic North Indian dish. Koftas added into a richly flavored tomato cream base sauce to make a yummy and silky gravy which is served as a great side dish for rotis or pulaos

    Ingredients:
    oil 2 Tablespoons
    cumin pdr 1 Tablespoons
    ginger garlic paste 1 Tablespoons
    garam masala 1 Slice
    cream 1/2 Cup
    coriander pdr 2 Tablespoons
    coriander chopped 1/4 Bunch
    chopped chilli 2 Piece
    onion 2 Numbers
    paneer grated 1 Cup
    red chilli pdr 1 Teaspoons
    salt 1 To Taste
    turmeric 1 Pinch
    sahi jeera 1 Teaspoons
    grated mix vegetable 1 Cup
    grated boiled potato 1 Cup
    cashew/pista or almonds 20 Grams
    tomato 2 Numbers
    Directions:
    Mash the potatoes, mixed vegetables, paneer and mix together. Add the spices to this mash and mix well. The resulting dough should be firm. If not add some bread crumbs ( only if you mess up} Season with salt.
    Make this dough into balls and put 1/2 a tsp of the nuts and mix in the center of each ball. Roll into perfect rounds. Coat it with some cornflour or all purpose flour.
    Heat the oil and deepnbsp;fry the koftas on a medium flame till pale golden color
    Drain on paper towels and keep aside.
    For the gravy, first heat the 2 tbsp of oil in a deep pan and fry the onions till light brown
    Grind into a paste along with the tomatoes, onions, ginger, garlic, coriander, and red chilli powders.
    Heat oil add black cumin.
    Put this paste back into the pan and fry till the oil begins to separate from the masala.
    Add 1 cup of warm water (the sauce for this dish is meant to be thick so do not add too much water) to this masala to form a sauce/gravy. Mix well. Season with salt.
    Bring the sauce/gravy to a boil and then reduce the fire to a simmer
    Add cream, If you donÔÇÖt have cream add little milk and mix fast with out curdling and add finely grated paneer that will give good creamy texture.
    Gently add the koftas to this sauce/gravy and stop cooking.
    Turn off the fire and sprinkle the garam masala and chopped coriander all over the top of the dish.

    I am half Indian (Punjabi) from America. My Dad is Punjabi and my Mom is Italian American. I love Malai Kofta soooo much, it is my most favorite dish! My Dad doesn't like it though, he says it is too creamy and does not like it. I like to make it at home. :) But I like totally mild Indian food, I don't like hot.

    I made to my children because one of them dont like vegtables... He ate it alll!!! So amazing.. go and make it!!! Since i didnt found paneer, i used fresh mozzarella... It worked. Thanks for the great tips your true teacher. Thanks!

    I tried this recipe, it was fantastic. Everyone was asking for recipe.It takes only 30 min to cook since I microwave the veggie and potato. I will be cooking more of this item in my upcoming parties. Thank you vahchef for uploading such wonderful ways of cooking on youtube.

    i have also worked with Maurya Sheraton 1989 to 92 in Madira....i loved the way you present ur cooking skills and enjoyment while cooking ....i have observed that ur father says right that you don't like vegetarian dishes ....LOL...Since i loved to see ur expressions while taking a bite after finished the preparation .....with Malai Kofta you had broken heart of that delicious kofta....thank you so much and congrates for your new studio ......keep it up bro

    Thanks for tip on substituting cream with cottage cheese and milk. My dad is a heart patient and this substitution made it easy for him to relish this dish. I did not add milk, but added cottage cheese while blending tomato onion in mixer. And then boiled the entire puree once again. It was smooth as the original curry with cream.

    I totally want to make this now! I had this at an indian restaurant at my local mall and I didn't know what it was. I feel so bad when I can't understand the indian accdent, especially in a loud setting like a mall food court. So glad I found this video because this is totally what I had and it was SOOOOO delicious!

    hello Chef, Malai kofta recipe is excellent. I didn't added any vegetables to the koftas as my child doesn't like it. I made it with potatoes and paneer. The dish was mouth melting and tasted lot more tasty than any restaurant food.

    Hi priya , you need more binding add some corn flour and also bread crumbs too help , fry only one piece and check it if it comes good fry the rest or else rectify the mixture

    Wow Sanjay...excellent recipe. i tried tons of your recipes and they always turn out great. i have one question. do u use roasted cumin to make the cumin powder? bcoz in the store u get just powdered cumin without roasting it. thank you.

    You are so cool. I just have one question. Do you have a tip about grating the paneer- its very soft and I don't understand how it can grate easily. Should I freeze the paneer first before I grate it or just grate the paneer at room temperature! THanks chef you are the best!

    I have been making it for some years but my recipe has no tomatoes in the sauce, or ginger. It has cinnamon, cloves, cashews, tumeric and coriander powder in the sauce. I'll try this sauce for a change. Very nice explanation, chef!
