Hi James, I agree with in general. But traditional deep fried akara, has no casual link nor correlation with diabetes or obesity. In fact, it's quite healthy. Not all deep fried is bad. Tomorrow the oyinbo will discover this and start saying so. Obesity and diabetes is on the rise due to fast foods, fried pastries, sugary drinks, snacks and sweets (which are the opposite of akara). This akara pancake, is not akara, but a new derivative. And is ok. But, If e no be Panadol .. Also, custard is not akamu/ogi (Not in a million years) nor is yogurt the same as milk (I make Greek yogurt almost every week, my freezer is always filled with containers of whey). But this economy sha. Summary, after years of eating all these oyinbo technique of cooking Naija food, like custard, I have come to appreciate the basic akara and pap, even the one sold on the street. Do you remember Akara ekpo? Homework for you. BTW James, what do you think of the fruit with condensed milk popular in Naija?? Cheers.

Winnie, this is even healthier than the original pancake made from white flour which is all carbohydrate. Beans is protein. Thank you for this recipe. I can eat alternative pancake now without fear of carb.

It is true what you said about our ancestors but you are making a catastrophic mistake if you eat, sugar, grains, bread, pasta, noodles, pizza , maggi cubes and thousands of ultra processed foods in the supermarkets. Then when you deep fry your Akara in seed oil which is effectively engine oil then eat such food along with ultra processed/ processed foods you are opening the gate for massive inflammation, insulin resistance, diabetes, high blood pressure, cancer and heart disease. The reason you ancestors lived longer, the fried akara but they did not eat processed food in tins and plastics. I hope you get the drift here?

I'm a Ghanaian n I realized that the local people fry akara in Shea butter, which has a high boiling point n has a lot of health benefits, some even used clay pots now we fry in seed oils which are highly infammatory n use cookwares like non-stick which have teflon as cotings n become toxic at certain high temperatures. It's only those who want to be left behind who blindly say they r keeping the traditions of their forefathers without knowing what their fathers knew n where they fell short
