I’m just a husband who cooks once in a while. I made this soup last week, and it was easy and delicious! I substituted pancetta (just for kicks) for the bacon, and scallion for leek (forgot to buy leek), and used a bit more potato, perhaps 600 grams. For the sausage, I used salami. Otherwise, I followed the recipe closely. My wife and I ate most of it in the original form, but I took a bit and puréed it just to see if I liked it that way. I did, but the original form is best. Every bite tastes the same when it’s puréed, but not so in original form.
I used salami and it did not work for me. Its texture and flavor did not go well with the rest of the soup's ingredients. The next time I make this soup, I will just double the amount of bacon. This recipe (minus the "sausage") makes a delicious soup.

Looks good, except for me the bacon cooked crispy, set aside, then crumbled on top of soup as a garnish. Would not like the texture of the bacon not crispy.

I can't explain how delicious it is. I will cook it again today. I has become a vice now. I do it every week. I love MAJORAM , which goes wonderful with the soup. Instead of the smoked sausage ( Salami) , I love to put in a WIENER SAUSAGE or a KNACKWURST ( a thicker and shorter " wiener" sausage). The word KNACK comes from the noise it makes, when you bite into the hot sausage ( knack- crack ). Put the whole sausage into the soup. When it's done, take it out and cut it up. The flavour stays in the sausage. It would be a shame, when all the flavour disappears into the soup. Give it a try.

Similar to my grandmother’s though she had a special version too. Before the potatoes are too soft, lowered to medium heat and added half a jar of sauerkraut seasoned with caraway seed. Once potatoes could be slightly mashed she then lower to simmer and add fresh cream. I still make this recipe.
I’m from the USA my German auntie taught me a dish when she was a cook at school. She always added cream to her potato soup but once her cream had soured and she put it back in the soup with green beans. Our family had her special soup for generations, called sour cream bean soup. Sometimes we added sausages. I hope this inspires someone.
We were stationed in Germany in 1970-71 & our landlords showed me how to make this! I made it several times back then & haven’t made it since. But, now, I will make it again! Thank you for sharing this recipe!

Very similiar to American potatoe soup. I actually prefer using a smoked sausage( kalbasa) for making my soup. In fact I use smoked sausage for my bean soup, green split pea soup too. The sausage gives a flavor bacon just doesn't have. Salt, pepper, garlic, onions, carrots, bay leaf, parsley, milk & thicken( your preferred way).
My mom also used kielbasas in a lot of soups, potato, split pea, navy beans, and made delicious soups all year. Her potato was similar to both the original posted one and yours regarding seasoning. I do miss her cooking since she's passed. I make similar, but plant based. Potato soup is so good and so many ways to make it.

@@juschatan321 make sure you use fresh celery and wash it. In Mediterranean cultures pretty much all soups start with the Trinity, which is onions, carrots, and celery.
Remember guys, german potatoe soup varies heavily from family to family and from region to region. Adding nutmeg and marjoram are must have ingredients in mine for example and not a classic sausage, but chopped Bockwürstchen, or Wiener Würstchen. If you are vegan, or vegetarian or dont have meat to throw in, thats also fine. Please use Floury potatoes. They are the best kinds for soups.
All recipes vary. This looks great. I would not add salt as there is salt in the bacon. Would probably use less water and add white wine, few more carrots. Love all the herbs and spices. Add whatever veggies you have in the fridge. Love leeks. Happy cooking. Be creative. From Burlingame, California.

Genau mein Rezept!! Mache ich schon seit Jahrzehnten so! Ich mag es aber mit mehr Wurst! Ich brate mir dazu noch extra 2-3 Wiener lägst geviertelt und gewürfelt an.
Nicht wirklich typisch Deutsch, Jeder in Deutschland kocht diese suppe anders.ABER! trotzdem sehr lecker. Ich mag diese Kartoffelsuppe nach " deutscher Art"
Ich denke, daß die Kartoffelsuppe in ihrem Land so zubereitet wird?! Es hat aber absolut keine Ähnlichkeit mit einer deutschen Kartoffelsuppe. Sie sollten sich das Rezept im Internet runterladen. Trotzdem ❤liche Grüße

This reminds me of the potato soup my grandmother used to make. She would add 15-30ml of heavy cream after serving.
Yes, the cream is really good, I use milk. But my grandma used cream though. She didn't know or would not have cared about chloestrol at the time.

I love this recipe! I keep it right next to my chicken soup recipe. Sometimes I omit the oregano. It is still wo nderful! Mm'mmm good 👍

Kleiner Tipp..Am Anfang würde ich fetten Speck nehmen und ohne Öl richtig auslassen !! Und darin alles anbraten :) schmeckt richtig gut :)
BUT HE USED VERY LEAN BACON SO THE OIL, (olive oil), IS NEEDED.
Too much bacon fat is not good plus it would too greasy.
Ich denke, daß die Kartoffelsuppe in ihrem Land so zubereitet wird?! Es hat aber absolut keine Ähnlichkeit mit einer deutschen Kartoffelsuppe. Sie sollten sich das Rezept im Internet runterladen. Trotzdem ❤liche Grüße
Немецкая кухня особенно хороша в части всего мясного (ох, эти колбаски!), ну и протёртые немецкие супчики нравятся. Картофельный суп с копчёной утятиной - топ!

@@William-Marshall Germans alone have over a thousand different types of sausage. Wurst just means sausage, so its a legit question.
