hello and first of all, thank you for watching. Welcome to our tribe! This is very much different than shito. Shito is a condiment that's used in many ways. This Ghanaian Tomato Stew is exactly that, a stew. It great over a bed of rice, it's great when creating a thick "sauce" to pair with meat or fish of choice, and it's amazing with boiled plantains or yams to name a few. The shrimp is added as an enhancer but it is completely optional. Please feel free to omit it. The difference will not be greatly noticeable. As you are cooking you will taste to see if it meets your flavor. So there are adjustments, but you don't need to wait until the end if you are satisfy with the flavor.

Could I make it with less to no oil ?
Absolutely! You can use 1/4 cup to 1/2 cup oil. The oil help the tomato cook. Instead of using Canola oil, you can also use olive oil.

Do you always add the spices and salt near the end of cooking the stew? The last 10 mins or so, or can you add it at any point?
