Ghana Gravy (Tomato Stew)

This quick and easy stew goes well with absolutely anything and adds a bit of African flair to a basic tomato sauce. Watch the tutorial and also follow instructions below.

    Ingredients
    Sunflower Oil #KTC
    2 Medium Onions (chopped)
    Fresh Garlic/Garlic Purée (2 cloves, crushed/tbsps)
    Fresh Ginger Purée (2 cloves, crushed/tbsps)
    Red Chillies (chopped) - Optional
    6 x Large Tomatoes (chopped)
    Shrimp Seasoning/Stock Cube x2 #Maggi
    Scotch Bonnet
    Tomatoe Purée #Lidl
    Salt
    1. Pour 3 tablespoons of sunflower oil into the pan/pot.
    2. Pour the chopped onions into the pan and fry for a few minutes.
    3. Add in half a tube of tomatoe purée and stir into the onions.
    4. Add the crushed or puréed garlic and ginger and stir in.
    5. Add the chopped red chillies into the pan and mix in to the other ingredients.
    6. Once mixed in allow to fry for 1-2 mins.
    7. Add the fresh chopped tomatoes and mix in till the mixture is even. Then cover with the lid and bring to the boil.
    8. Add the shrimp seasoning and scotch bonnet to your taste, and stir in well for the flavour to carry through the whole stew.
    9. Stir in your choice of herbs (I chose Basil and Thyme), to add aroma to the dish.
    8. Cover and allow to cook on low heat for another 10-20 mins.
