The SORTED guys make this British classic their own by featuring a splash of Lea & Perrins Worcestershire sauce to create the ultimate cheese on toast.
Ben and Mike are making this from scratch, starting with a roux of butter and flour, which they plan to cook out with some pale ale before adding wholegrain mustard, plenty of grated Cheddar cheese, some cream and a dash of Lea & Perrins Worcestershire sauce, which they'll serve on top of some sourdough bread.

I put Lea & Perrins in my scrambled eggs and omelets... So yummy! A lot of condiments can be store brand, however Worcestershire Sauce HAS TO BE Lea & Perrins!

Simple to find alternatives, I think the sauce it'self is, so just alternate flour and GF bread! YUM! That's what I plan to do. Good luck!
Had an argument with someone about cheese on toast. He said you need to toast both sides of the bread but I disagreed. Bottom toasted only with a soft squidgy top. How do like yours?
And there's me been making cheese on toast with just cheese and toast all my life.. well not anymore!
With that type of sauce, I would probably make potato gratin or macaroni and cheese.

Yep, just pale in colour. Tends to have a milder taste, and lower ABV as well.

What's the difference in taste between your "English" more light yellow/white cheddar and my "Irish" more orange cheddar? The one I have is like the cheese Americans put on Taco's (where it is amazing) but is it different from yours? Because mine has a pretty specific and strong flavour and if I have the wrong one it will turn out completely different and in my opinion weird.
Cheddar is cheddar - the thing that makes orange cheddar orange instead of white is that they add annatto, which doesn't really do anything to the flavor.
Just make sure you've actually got cheddar, rather than a "processed cheese product", and I'm pretty sure you'll be OK.

To someone like me, who hails from the USA, the obvious use for a sauce like this is to pair it with some elbow pasta, and maybe put all that in a baking dish with some breadcrumbs on top for a quick broil. Voila, macaroni and cheese a la Worcester!
On the Sorted TH-cam Channel, they actually did Deep Ffried Mac 'n' Cheese Balls, albeit the cheese sauce they used was a bit more "generic". Wonder how it would taste with this sauce :D
Does anyone happen to know if there's a vegetarian friendly version of Worcester sauce? Or something like it? I'd love to try making this, but they use anchovy in the sauce...

I am quite disturbed by an obviously modern video in HD also being a 9 year old video? That does not compute. It seems YT allows old videos for corporate companies to update and keep their old statistics while they ban everyone else from doing the same. Hmmm....
Now I actually do love Lea & Perrins - by far the best Worcestershire sauce, that crappy Yorkshire Henderson's sauce is pathetic and miserable wet water with a bit of sugar.
Can we please clarify the original "old school", classic, Lea & Perrins recipe for Welsh RABBIT? Perhaps that is exactly what you have shown in this video, but "rarebit" or especially "cheese on toast" is more politically correct? Some of my ancestors were Welsh, but I take no offense nor do I consider it a micro-aggression to know that they were limited to eating cheese, while sacrificing tastier rabbit meat to their English masters and land owners. In subsequent generations, we have been able to afford any and all varieties of the best food, meat and wine, by not indulging in self pity or identity politics. Indeed, we have even become Anglophiles. Thank you and best wishes.

I assume that the objective of this channel is to use lea and perrins in everything but you are truly missing out on a lot of things you can do with a grilled cheese for starters the grilled cheese sandwich is better than an open top as it's easier to eat and generally nicer, secondly if you are going to the effort of making a rue you should probably make your own bread as homemade has a much more satisfying taste, then of course when you are toasting the bread you can give it a light sprinkle of paprika and a nice amount of cinnamon to act as a complimentary flavour to the cheese.
I'll give this approach a try at some point but I'll mix it up a bit as the way you have done it doesn't seem perfect.
Also another advantage to having it sandwiched is you can just do more.
