While there is no "wrong" way to make a martini, the classic way was around 1 part dry vermouth and 2 parts gin, varying a bit for taste and always stirred.
the recipe people are most familiar with changes as the vermouth was abandoned more and more until completely omitted, popularized by Winston Churchill.
Vodka martinis were popularized by the James Bond movies and books, often abandoning the vermouth as well and shaken rather than stirred(basically watered down cold vodka).
olives were often a garnish but its called a dirty martini if you add some olive juice as well.

Even the experts was something you'd expect from a bad sports bar.
    Smaller, chilled glass.
7 parts gin to 1 part dry vermouth for dry.
3 parts gin to 1 part dry vermouth for wet.
    Good large ice.
Stir until approximately 20% dilution and a temperature of around -3 degrees centigrade is achieved.
Total drink volume should be no more than 3oz otherwise it will warm up too quickly as you drink.
Vermouth should be treated like white wine and be refrigerated once opened.
I really think they should have got a bartender instead of a chef for the expert portion of this video.

    • @5avan10
      @5avan10 5 ปีที่แล้ว +35

Yes! Not a single person in this video made a proper martini, including the chef! A vodka martini is a variation and not a proper martini. You use gin, not vodka, to make a martini. If you don't like gin, then that's fine, but if you're teaching people how to make a martini, you use gin. Likewise, if you prefer your martini shaken, that's fine, but when you are instructing people on how to do it right, then the proper form is to STIR a martini. A skilled mixologist would never make such rookie mistakes.

@@livingshangrila Well, yeah. Because that's basically what he made. You want a martini, dump a bunch of ice in a pint glass, add one part dry vermouth to 2-5 parts gin (depending on how dry you want it), stir it for 20 seconds or so, and strain it into a cocktail glass. Garnish it with an olive or a lemon twist. You can sub vodka for the gin if you want a vodka martini. If you have any orange bitters laying around, you can also add 1-2 dashes before stirring, if you want.

This dude made the James Bond drink, but he sure didn't make a proper martini! The classic martini is with gin, stirred so that you don't bruise the gin and leave it sharp and less blended with the vermouth, and add the vermouth before stirring. Some olive juice if you want it dirty. If someone served this lightly aromatized vodka to me at a bar as a martini, I would send it back.

No! The James bond one ( the Vesper) is 3 measures of gin, half a measure of vermouth and 1 measure of vodka garnished with a lemon peel. It is shaken not stirred tho, to water it down for it not to be too boozy cause Bond needs to stay focused.

I'm sure many other wonderful bartenders have left recipes as well, but here's a few pointers for anyone that's looking. Martinis are all about balance and preference, and the best drink to make is the drink the guest enjoys. For me a truly elevated martini has careful gin and vermouth selection highlighting specifically what you or who you're serving enjoys. I prefer citrus forward martinis so I will do 2.5oz of Tanqueray No 10. (a gin distilled with cirtus as well as traditional botanicals) .5oz Dolin Blanc (not technically a dry vermouth, but similar, a touch sweeter with nice bright citrus aromatics and flavors as well as elderflower and passionfruit) and a dash or two of orange bitters (kind of like salt and pepper for cocktails, bitters help enhance other flavors in the cocktail, also in this case, help balance the additional sweetness of the blanc vermouth.) All of these ingredients are poured into a mixing glass, topped with ice and stirred to dilution. Proper dilution is somewhat a matter of taste, but becomes second nature after a while, like a chef tasting if something has enough salt, essentially all of the ingredients need to be incorporated and enough water needs to be introduced to the cocktail to bring the overall %abv down to a level where it is pleasantly drinkable. Stirring allows you to more carefully control reaching this dilution level and not introduce bubbles that muddy the final appearance of the drink that would be incorporated by shaking. Shaking gin for martinis is commonly referred to as bruising gin because the excess dilution and over-chilling will cover up a lot of the wonderful delicate notes that distillers work so hard to put in their gins. Finish off the cocktail by straining into a chilled cocktail glass (either using the method the chef mentioned or by putting the glass in a freezer) and I prefer to garnish with a lemon expression or twist to further enhance the citrus aromatics, first twisting to express the oils over the top of the drink, then rimming the glass and finally dropping in. If you're looking for a vodka martini recipe, I'd skip vermouth entirely because realistically it does not pair well with vodka, and frequently those that order vodka martinis aren't looking for nuanced flavor, pour 3oz of your favorite vodka into a shaker tin (hopefully Boston Shakers and not Cobbler Shakers like in the video), maybe a dash of orange bitters if you're feeling fancy, shake to dilution (eventually its something you can hear and feel and the length of time you need to shake is heavily determined by the ambient temp of the room, the type of ice you are using and a myriad of other factors) and fine strain into a chilled cocktail glass (fine straining involves using a small mesh strainer to remove ice chips from the finished drink.) Some martini drinkers like to "skate" on these ice chips and find them desirable, but typically what they end up doing is over-diluting the drink over time and creating a thin layer of water on the drink. Cheers, hopefully anyone who actually reads any of this finds it helpful.

Been bartending for a bit. The way I learned to make a classic Martini:
    1: Chill martini glass.
    2: Fill shaker/pounder with ice.
3: Pour 1/2 oz of dry vermouth over your ice to "season" it.
4: Dump ice water from martini glass.
5: Strain your cold vermouth into your chilled martini glass.
6: Pour 3 oz of gin (Gordons, Bombay, Tanq. 10, Plymouth, are all good choices) into an empty shaker/glass.
7: Put "seasoned" ice into gin (spirit first then add ice. Do not pour room temp spirit over ice. This causes dilution).
    8: Stir for 30 seconds
9: Dump vermouth from tini glass after washing it with the vermouth.
10: Strain gin into tini glass and add a large thin slice of lemon peel/one or three olives. Never put two olives in a martini. Never put more than three olives into a martini.
I prefer Gordons gin in my martini.
