    IF you want to half the recipe here it is:
    1 1/2 cups + 2 tablespoons Flour
    1 teaspoon salt
    2 tablespoons sugar
    1 1/8 teaspoons yeast
    1 tablespoon butter
    1/2 cup milk
    2 tablespoons + 2 teaspoons water
    1 1/2 teaspoons vanilla extract

    I've made these donuts and they are great. If you want a nice yeast donut that's baked and not fried, this is it.

      Leann Ferraren they are very light and fluffy but not exactly the same if you put a thin glaze on them I would assume they would taste similar I used a strawberry glaze so I’m not sure

      I made them last year - hand-kneaded - and we were very happy with the outcome. I had been looking for a baked doughnut that was as near to a fried one that you can get in terms of the texture (delicate - perfect), aroma and taste and these fit the bill. I am making them again tomorrow and have three glazes planned: plain, lemon and maple syrup (thanks be to Canada!). I just need to remember to double-dip the glaze!

    Made these yesterday and they turned out AMAZING!! Although I put the yeast in warm water alone +1 tbsp of the sugar instead of adding it with the dry ingredients and the tasted the same. I might leave out a wee bit of the yeast next time though, it had a very strong yeast-y flavor.

    Omg this dough is gorgeous!! I made the dough and put little bits in my cake pop maker . Got the perfect round little bread balls. Dipped them in melted butter while still warm. My family just loved it .

    I did them by hand and they actually turned out amazing, if anyone's interested! With cocoa (and a bit of rum flavoring) glaze on top, loved them

    Wow gemma, I doubled the recipe and still kneaded it for 8 minutes and it turned out really well, I used strawberry jelly to fill the donuts and dipped the donut holes in cinnamon sugar. The bottoms were a light caramel brown but they were pale but still tasted good. I am definitley gonna make it again and although they weren't really crispy like fried ones, they are at least more healthier and I think it taste better. Glad it wasn't and waste and they look and taste amazing.

    I tried these out and they were amazing. I recommend the glazed one the mot but I also tried using biscoff cookie spread to fill them and it turned out really well.

    Hello Gemma! I used this donut recipe for like the hundredth time! I halved the recipe and they still went amazing! I made a dozen tiny 1 1/2 inch donuts for my baby sister and she loved it! She especially loved the pink one with sprinkles. Thanks again for such an amazing recipe! This is a keeper!

    [edit] For all us non-North Americans, pumpkin pie spice is basically an autumnal/wintry spice mix found in various ancient forms the world over. You can't go wrong with flavours like cinnamon, ground ginger, nutmeg, allspice and cloves. For all you Dutchies, this probably sounds suspiciously close to speculaas (arguably where pumpkin pie spice originated). For all those familiar with the Asian kitchen, the westernised Chinese 5 spice is very similar to this as well. Only with the sub of Sichuan pepper and Star Anise it tends to be a little more intense. Even those who love a curry might be like "hey! That's almost Garam Masala!" as it is also very close with cumin, coriander and cardamom as the core spices in order to make it a little more suited to savoury flavours. BASICALLY, you can make your own pumpkin pie spice with anything from cinnamon, cardamom, ginger, star anise, fennel powder, cloves, nutmeg, and allspice as their all traditionally autumnal spices that lend themselves well to sweet dishes.
    In regards to your initial tip about salt and yeast, check out Charlie the Chain Baker's vid about what he has proven to be an urban myth as he conducts a number of control-based experiments that demonstrate how salt has little to no effect on yeast within a 15min period. Even beyond that, he suggests salt would still have little effect unless left for a ridiculously prolonged period of time before mixing (like overnight). In the world of baking, 5 mins is already a ridiculous amount of time to leave something you intend to mix "right away", so leaving it for any longer than a minute is already a bizarre thing to do. When baking, the time it takes to locate, measure, and mix everything would take less than 5 mins. So even if it's sitting in the bowl, nothing will happen. Literally nothing. At least that's been my experience.

    I made these yesterday, following the recipe exactly, and although they were very yummy, the didn't taste like doughnuts at all, but were quite 'bready'. Will try again with the new recipe where you proof the dough over night, thank you anyway :)

    I made these yesterday and they came out amazing! Better than the store bought ones. Everyone esp my kids loved them! Thank you for the wonderful recipe. Wish I could upload some pics of the final outcome here!
    P.S.: I don’t have a stand mixer, so I kneaded the dough for a good 20 mins and it worked out great! So all the folks who don’t have a stand mixer.... this recipe still works well.

    I made these delicious donuts yesterday and although I found them to be dry and hard, I put them in an airtight container after cooling and the next day it tasted soooooo GOOD!! Just like Krispy Kreme :) yayyyyyy thank you Gemma you're amazing love your recipes

    My older daughter cannot have anything oily or deep fried. Thank you for this awesome recipe. I tried it today and they were perfect. Both my girls devoured them completely.       Delighted it's of help!
      Most of my donuts are cut into ½ inch (1.5cm) thickness with a 3-inch round cutter and a 1-inch (2.5cm) cutter for the hole. Bake at 350°F /180°C (conventional oven) or around 325F-335F/165C-170C (convection oven) for roughly 15 minutes. Use the same way to tell when it's done.

    I baked these and they tasted like a nice, sweet bread. Fiancé said they were chewy but good. I recommend cinnamon sugar if baked. Going to try frying them next.

    Hi Gemma, I don't want to sound like I'm judging you or anything but I just wanted to let you and anyone that may have had an issue with the recipe (although it shouldn't affect this particular one, though it might in the future, Iike in a cake or something) but 2 tablespoons of butter is actually only 30g not 60g.

    I made these yesterday and they're pretty good! I agree with other commenters that they're a little bread-like on their own, but a little glaze really goes a long way :) I made 3 types of glaze for a little variety : vanilla, chocolate and maple. The maple donuts are delicious!
    I used a 3" cutter with a 1" hole and got 15 donuts, plus 3 small donut holes.

    I tried this recipe, and I ended up making bagels... but they were delicious in the end, but not what I wanted. I took the same dough and fried it, then it became a donut.

      Gemma Stafford When I made the donuts using this recipe, it was too watery so I am letting it sit overnight and I really hope that these will work because I have been trying to find the best donut recipe there is and right now, this recipe is failing.

      Vanessa Luu All flours are different, so it's your flour, not the recipe's fault. Add some more flour, just until the dough seems right :)

    I LOVE your videos! Thank you so much for "demistifying" so many baked treats for us and making them accessible for any baker.     I made these today and they did not taste like donuts at all. more like sweet bred or bagels even though I followed all the instructions. I think it's because of the yeast and not enough sugar.they tasted good anyways. they were nice and fluffy but if you want donuts that taste like donuts I would recommend using a different recepie...

      same thing happened for me, do not taste at all like a donut but some sort of sweetbread, might as well toast them and put garlic butter on them for a bagle like snack.

    Made these again to share with neighbors because it makes so many! Mine never get browned on top at all but they're still so good. Refrigerated the dough overnight after cutting them out and they were still perfect.

    Hello Gemma ! I made these today and it tuned out awesome ! Once slight problem was I couldn’t roll the dough a second time after I cut out the first batch. Any idea why ?

      It might have been overworked. Let the dough rest for around 20 minutes, to relax the gluten. Then roll it again. Hope this helps.

    I'm in love with the donuts and the Pumpkin Pie spice donut holes. I rolled out the dough a little thin and my holes were off-center but no one noticed because they were all in love with the flavor and texture. I may never try another donut recipe again. Thank you for posting.

    I live at 5,000 feet above sea level. Dough rose and baked beautifully! Due to altitude, as usual, I had to add a little more water and bake a little longer! Highly recommend this recipe! THANKS, GEMMA!

    Aaaand... yet again I must thank an American youtuber who gently makes an immediate conversion of imperial to metric measures in both ingredients list and recipe description. Liked and subscribed. These little things save others a world of trouble. Plus, I loved the monkey bread I tried at a restaurant, but I suppose it's imported and it felt really... fatty, it was probably filled with hydrogenated fats. So I'm yearning to try this dough for both donuts and monkey bread. They look calorie-ridden, but much healthier than anything you can buy pre-made. What I haven't found is the vanilla extract, although I have vanilla pods. Maybe I could try with a pinch of cinnamon? Or could I boil the vanilla pods in water and use the result?

      You can buy a second-hand bread machine from FB marketplace/gumtree. most have dough kneading settings and second hand, It can be a lot cheaper than a stand mixer.

      ost vegetable oils are flavorless, olive oils can ber strongly flavored, so it si best to avoid this one,

    What kind of chocolate filling could you use besides Nutella our family hates Nutella

      Elissa Celino You could use chocolate mouse filling, but then I would keep them in the fridge. Or you could dip them in a chocolate donut glaze. Also you can fill them the same way with Jam, cream, Lemon curd etc :). Thanks for watching.

      it means mixing two of the ingredientes, then another one and so on instead of dumping all of them at the same time and mix
