Thanks to all of you incredible humans who not only tried my viral Whole Orange Blender Cake but looked at the variations and substitutions and thought, “Say no more 🤌.” Because of you, the Whole Lemon Blender Cake was born. Made with Meyer lemons 🍋, this Whole Lemon Blender cake is no average lemon loaf. Unlike regular lemons, Meyer lemons have a much thinner skin that’s almost sweet, making them the ideal choice for this fluffy, moist and perfectly citrusy cake.
INGREDIENTS

Where's the recipe? There are 4 eggs but how much oil, sugar and dry ingredients. Does it bake at 350F? Looks good but you have to guess how to put it together😢
U must have the high power blender, like this one, if not the lemon peels won't blend properly.

Yummy, I have been picking orange blossoms from my orange tree. I've been making all kinds of things as orange blossom water, and infused orange blossom sugar. I may add the infused sugar for this recipe. Along w/using the blossom water to drizzle on top.

@@themodernnonnaremove the seeds. And then I say this is ten out of ten. Also, blend all dry ingredients, minus baking powder. Let the mix sit in the blender. Thirty or more minutes, for better gluten development. Then add baking powder and blend a bit. Then pour.

I said that to myself until I saw that she used Meyers Lemons which are seasonal and have a different skin texture are sweeter & milder than ordinary lemons because otherwise it would be like bitter. (Especially the white parts once you remove the yellow part).
@@LaVern57 the Meyer’s part is kind of an important detail. It’s like night and day compared to a standard lemon. She should have mentioned the variety.

Wish I saw this back in January when my lemon trees were full of lemons and I had a pile of lemons on my countertop. Now I'll have to wait until next fall/winter if I want to use my own fresh grown meyer lemons.
I think using the rind and a couple teaspoons of the juice is enough to give it the lemon flavor 😂

Quick breaks are not that hard at all...
3 basics for you ....
1: quicks breads are usually ALWAYS baked at 350 for 45m to 1hr.
2: mix dry ingredients together and mix wet ingredients together in separate bowls combine them until just incorporated DO NOT OVER MIX.
3: ALWAYS allow the bread to cool IN THE PAN then pop it out. Glaze ONLY AFTER the cake is completely cool.
This recipe is SUPER SUPER SIMPLE.

Make sure to use organic lemons when doing this, as non organic lemons get sprayed with pesticides, wich u really don’t want to be consuming.
Just wash the lemons with vinegar.
Organic fruits and vegetables are also sprayed with “organic” pesticides which are harmful to consume just like “non-organic” pesticides. Always wash your produce.

These types of lemons are usually organic where I live anyway, otherwise just get the unwaxed ones
So you really need 2 lemons 🍋 🍋 because your putting 1 whole lemon into the blender, so you’d need the second lemon for it’s juice. Or you’ll need the fake bottled stuff. Or maybe you have true lemon like me. 😊

Looks yummy. I love everything lemon. But most people will have the lemon on hand, but not pure lemon extract.
You won't need lemon extract using the entire lemon including the rind. Looks delish

I’m going to substitute almond and oat flour instead of white flour and swerve instead of sugar
I might use oats instead of flour, I don't know if it will work

It's too dense for me. How can I make it fluffier?
Hi love, always check the baking powder and flour before use! If the cake comes out too dense and not fluffy or moist, the baking powder is most likely out of date. ❤️ Hope this helps!
Maybe you overmixed. Happens a lot bc it feels that the longer you mix the fluffier but that is contra intuitive

I will never put lemon 🍋🍋🍋peels in my 🎂 cake 🤔 Peels might have some pesticides on it also white inner peel will have bitter flavor maybe after peeling and getting rid of the seeds it's ok 😋😋🤔👋Cake looks good 😋

The Cake
-Please check if the baking powder or flour is expired prior to starting.
-Preheat the oven to 350F (180C). -Line a loaf pan with parchment paper and spray with baking spray. -You can use a bigger size pan as well, but the cake will be larger and thinner, so you may need to adjust the baking time.
-Wash the lemon really well. You can also soak it in some vinegar + water to draw out any impurities. Cut into slices or quarters.
-Add all of the ingredients to a high-power blender, starting with the wet ingredients. Be sure to add the wet ingredients first so that the blender doesn't get stuck. Blend for 15-20 seconds or until a thick pourable batter forms. Do NOT over-blend as this will break down the pith and result in a very bitter cake.
-Pour the batter into the lined pan and bake at 350F (180C) on the middle rack for 45 to 50 minutes or until a toothpick comes out clean 2 inches from the side.
-Remove the cake from the oven and let it cool for 10 minutes. Take the cake out of the loaf pan once it has cooled, and optionally top it with the lemon glaze. You can also enjoy this cake on its own or with a simple dusting of powdered sugar on top.
The Lemon Glaze
Combine the powdered sugar and lemon juice until you reach your desired consistency. Pour the glaze over the cake and enjoy!

▢avocado oil spray
▢4 eggs, at room temperature
▢¾ cup avocado oil , 175 ml
▢1 cup granulated sugar, 200 grams
▢1 whole Meyer lemon, washed, quartered, and seeds removed
▢1 teaspoon lemon extract, 5 grams
▢2 cups all-purpose flour, 250 grams
▢¾ tablespoons baking powder, 8 grams (make sure it's not expired)
▢½ teaspoon salt, 3 grams
▢powdered sugar, for dusting (optional)
The Lemon Glaze
▢½ cup powdered sugar
▢2 tablespoons lemon juice, or until desired consistency
