I thought that the inability to find mutton was just a US thing. Very surprised to hear that no one sells it in Ireland either. I had though that eating meat from mature animals has less health risks than eating meat from juvenile animals. I guess I'm in the minority that values flavor over tenderness.
Would be handy to have a table or stand to leave the buckets on up close to the pipe as the nuts are filling, you'd have better control and less spillage, lovely bin though.

Some pork sausages are filled into a filling called sheep casings.
Around my neck of the woods the saying is, when it comes to sheep and meal you need sheep running away from you, not running too you.
