  • I’m a huge fan of roasting vegetables and this colorful side dish of Honey Roasted Beets, Carrots and Parsnips will brighten up any dinner table. Beets, carrots and parsnips all have a natural sweetness to them. Honey helps to enhance the sweetness. There’s also a mild earthy flavor that comes through from this combination. This trio of vegetables is roasted together with garlic and thyme. A little fresh lemon juice is squeezed on at the end.

    If there was a love button, I would hit it :) This is the first beet recipe that my family ate without complaining. It was delicious 😋 We finished it all in one seating. I substituted onion for parsnips and that worked well. Thank you!

    I cooked mine for 45 min at 420 and they were way over done. Should have checked them sooner. I know everyone’s oven is a bit different, but that time and temp didn’t come close for me. Love the idea. Will definitely try again.

    I made this for my hubby and he LOVES IT! This has become a staple side dish for us. It is even helping me to cure him of eating so many carbs, rice, potatoes, pasta. Nowadays I can just make this with some meat and he is happy! Thank you for this wonderful recipe!

    Yum. Can’t wait to make this. I’ve roasted veggies but never thought of using parsnips or beets. We also have bees so anywhere I can slip in some super healthy yummy honey, I do. Thanks for recipe😊😊.

    Someone at work made this & brought it in. I was surprised i liked it so much bc I couldnt imagine me liking beets, it was delicious!! This is the exact recipe. I didnt have parsnips but still yummy

    Add red onion, in quarters and it will kick it up 10 notches! Also, instead of honey I drizzle an Olive Oil and balsamic vinegar dressing before cooking. Enjoy!

    Perfect recipe. Loved this. Even made beets yummy. Used turnips instead of parsnips and lime juice instead of lemon. We’re sheltered in place and that’s what we had. Even did great stuff with leftovers.

    Beets have been hit or miss for me. One of those veggies I'm not convinced I like. But I'm definitely willing to give this recipe a try. I already enjoy roasting veggies with honey or maple syrup.

    Looks delish! I like to cook my beets either in foil in the oven or in the Instant pot. After they cook a bit, the skin comes right off with paper towels. The color is amazing! I like to use the stems in my veggie stock. And the greens, yum! I cook them just like spinach.

    Nicely prepared and I tried your recipe and it is Amazing. I am happy to tell you I will be serving your beet recipe with a baked turkey and brisket at my annual Christmas in July dinner on the 25th. I liked and enjoyed the parsnip as an added vegetable and especially the tyme seasoning.

      @@a.j.b.8658 Hi there 😊 you can have it fresh in salad. Sauté some onions, garlic, ginger, fresh chilli in olive oil and do a quick stir fry with the leaves. Bon appétit!

    I ‘m not sure about temp and time. If I followed 425° for an hour my beets would be burnt to a crisp. I’ll try exact ingredients with a small amount and test. Maybe The wet ingredients keep it a little more moist so it can stay in the oven longer without burning. It sure sounds good!

    Why do you give them a scrubbing if you peel them anyway? And why peel the carrots when there’s so much fiber in the peel? Just wondering. You could just scrub those. I like the sizes you cut the veggies too…and wow, lemon! Never thought of adding lemon. Thank you for the fun video!

      The butter may burn. If you want to try an alternative oil, use avocado oil.

    It looks so good! But honey is meant not to be heated up, all the nutritions will be destroyed. It's better to add the honey after baking the vegetables!
