    5 egg yolks (蛋黄)
    1 whole egg (全蛋)
    80g Lotus Biscoff crunchy spread (焦糖饼干酱)
    50g corn oil(玉米油)
    60ml Milk(鲜奶)
    100g plain flour(普通面粉)
    20g rice flour or corn starch (粘米粉或玉米粉)
    5 egg whites (蛋白)
    1 tsp lemon juice (柠檬汁)
    70g sugar (细砂糖)
    6 pieces of Lotus Biscoff Biscuits (焦糖饼干碎)

    Do you have to use rice flour and corn oil? I wonder what substitutes could be used instead? Can I use all self raising flour and sunflower oil? Thank you.

      You can substitute with corn starch and melted butter

      @@KathrineKwa hello, thank you! I am Irish and I had to Google, - what is corn starch? - we call that 'corn flour'. We rarely use it in baking. I do recall my grandmother and my mum, she's only 66, in the 80s, using corn flour to make a white sauce for chopped, boiled carrots but it was not a roux. Honestly, I don't know how they both made it but I didn't like the thick, corn flavour of that white sauce. I don't understand why it is needed in a cake. I would add butter to things, to give them flavour alright, like I would fry my scrambled eggs in some butter but they don't actually fry, if I nedded to fry something like mushrooms I'd add some sunflower oil and butter, as you know, butter doesn't fry well, it just burns. Can you please explain what would happen if I didn't use corn flour here? I'm just don't understand why using all self raising flour isn't enough. I have never seen rice flour used in a cake either. We generally just use self raising flour, unless a recipe dictates that only plain flour is to be used. Is the corn oil to make your cake moist? Thank you. I bet you're a great cook.       @@mathonamoore123 Kathrine is a fantastic cook, the best there is. All her recipes are amazing. Corn flour has lower protein content so when added to cake batter it becomes much lighter. For example, cake flour is a mixture of all purpose flour and some corn flour. It is used to make light sponge or chiffon type cakes. This cake uses beaten egg white for leavening so you do not need other leavening agents. Self raising flour has baking powder added already. If too much leavening agent is used, the cake can collapse when it cools down. In terms of the oil, I used canola oil and it turned out fine. I think that most flavourless oil would work. Hope that helps.
