These kinds of things are my go to meals, I always start with ground turkey and brown rice, then use different seasonings and the appropriate vegetable, Mexican spices and peppers. Asian spices with peapods, carrots and celery. Curry and whatever veg.
I'd suggest doing these recipes with leftover rice that's been in the fridge overnight. It'll be less mushy when you cook it. Eat freshly cooked rice when it's fresh. Then re-purpose the leftovers the next day.
I am guessing the rice is precooked. Would have appreciated a few tips on cooking the rice, graininess and whatnot, Is the rice added cold, or right from the pot? Love the ideas tho.

Just made it tonight, it was fantastic. I added sliced grilled chicken. Also, make sure you put a healthy amount of salt and pepper on the whole dish before chowing down. Kind of bland without it.
If anyone is making the chickpea lemon curry rice mix, I recommend you substitute the water for a cup of flavorful chicken broth - or make a cup of chicken broth by using chicken bouillon powder. Tastes much much better.
I did not add any meat, I just made the beans and rice version for a light lunch. Really tasty. It would be great with some sliced grilled chicken or steak.
Hi Robert Irvine I am a fan of yours because of the way you cook you do not do things we can afford an I mean is cooking, but I have a question what is fiber my Doctor said to put more fiber in my diet,I don't know what fiber is (if it is vegetables )because I have never heard that name before fiber.
