Really good information. Dylan, you made a good point about machines and being careful with sending money. I’d love to see a video of companies you recommend that are trust worthy!
Thank you Dylan for this video. I´m a standalone bonbon and chocolate maker and I struggle with everything appart from making chocolate. This is very helpful. Cheers from Buenos Aires
THANK YOU!!! This was awesome! It's so hard to find business info that is specific to the chocolate industry. I run a tiny, one person bonbon company and I am ravenous for ALL the business tips. I am also getting ready to buy a building and build out a commercial kitchen from scratch so would love any tips and content about that.
thank you Dylan! I’m starting my own small cacao farm and your videos are very helpful to me esp that I’m trying to add value to my end products by not just selling beans. 😂
Found one of your videos at random and was stocked the factory is where I live how random!! I will definitely stop by and get some chocolate keep posting!!
Hello Dylan, I would like to thank you for the very informative videos on chocolate making. We are planning to start a small chocolate factory in Lebanon with a capacity of about 150 kg/day, thus it will not be feasible to buy beans and go through the initial processes of roasting to winnowing. Instead we intend to start by purchasing the ingredients such Cacao powder, butter, sugar etc... Would like to check in such case if the Conching process is still required.
Hello Dylan! Thank you for you very instructive videos. I've got a question, if I may. How many kilos of white chocolate bar could you make when you were by yourself at your parents' place? I'd like to go into some cottage industry business with craft chocolate bars, mainly with cocoa butter, no roasting of beans at this stage. I am trying to see my breakeven point. Thank you.
I've been a little lost with the cost of the machines. Are you assuming that in that three-year projection there aren't any big investments in that area?
You should really be splitting your streams at distribution e.g. $2.50 - $3.50 if they are wholesaling and $7.50 if they are going to be retailing and looking to do events based experience packages to your largest retailers regions (or in conjunction with them depending on what is most lucrative) both domestically and non-domestically. After which looking to expand out and take over the retailing / wholesaling sector centrally.
so I have a question am looking to start out making chocolate from my house and can't afford all the machines would it be ok to just start with cacao powder instead of beans? I would later on use beans just starting out real small
NO! Cacao powder is already processed and has most of the cocoa butter extracted from it. It's not the same as using beans. Even if you are super small, you still need a melanger to get a fine enough particle size. They start at around $250 (really affordable as chocolate equipment goes).
No, any powder is still not fine enough, you still need a refiner/melanger. And remember, you still have add sugar, and you need to refine that down in the refiner/melanger as well. Can't remember the exact particle size, but it needs to be around 10 microns. Watch this, it will probably answer your questions th-cam.com/video/v6gmCIaCkNo/w-d-xo.html
Man im disappointed. I agree with most of your advices specially with urban location and retails rather than whole sales but the my budget isnt that big . So what do u think about startups with low budget?
For myself, and probably for others too who are starting off in this industry, this is absolute gold, Dylan. Thanks so very much!

Is it better to start with bulk cocoa powder rather than from the bean so u can skip the bean processing?
I have planted 900 cocoa trees soa far this year, can help me get a good market, when my cocoa starts to mature

Hi
Our creative friend, can we know how many bars of chocolate produced by 1000 kg of cocoa beans????? With all due respect to you.
