  • After learning some techniques from our viewers, we incorporated a longer soak, several rinses, an overnight stay in the refrigerator, and a quick blanch just prior to canning this recipe. We wanted to infuse the potatoes with great flavor so they would work well in the air fryer. Success! They are delicious.

    Dear Pam, using a spray oil in your airfryer basket will ultimately defeat the nonstick coating (it contains an additive that builds up or something like that). It actually is recommended that you don't use those types of products in an airfryer (or waffle iron) but just put oil on your food as you did.

      Yes, I believe it's the propellant in the spray & it will also make it more difficult to clean as time goes by. They also make perforated parchment paper if you want to try that as well.

      You can put Regular Oil in a mister or a spray bottle- or brush it on.
      Even toss in a bowl
      NEVER USE AEROSOL PROPELLANT.
      It will trash the surfaces

    Looks delicious. I gasped when broth went to the sink. I keep to use in a veggie puree soup to which I add a potato for creamyness without adding cream.

    You said that you have been enjoying cooking potatoes in your air fryer... I know this is not related to canning or prepping (which we do a lot of), but, back when we were not living "low carb" we used to LOVE LOVE LOVE cooking those little new potatoes (many times the multi-colored ones) in the air fryer. Just toss them whole in some olive oil, salt and pepper, garlic powder... and air fry as you would cut up potatoes. They would be nice and crispy on the outside and soooo creamy on the inside. Thanks for your canned potato videos because, although we are low carb, we can potatoes so we can eat them (occasionally) with little fuss while RV'ing and boating. Will definitely try the Mediterranean potato recipe!

    Oh Pam - how do I even start to thank you? I have seen you use your mask in pan so many times, and I thought of so many great uses for it, but just too expensive. For two years, I have been checking prices. Then, finally, sale! I got one for forty-nine dollars. I just started using it, and I love it! I an handicapped, and that handle is a game changer!     I think I will try this. My Amish store has 50lbs of potatoes on sale for $17 right now. I wasn’t going to can more potatoes because I already have close to 200 quarts of plain potatoes but with this new recipe I think I’ll can some of these kind of potatoes. It looks really good!

    My husband has stage 4 kidney failure. Therefore we have to minimize his potassium intake and potatoes are high In potassium. I always soak and rinse our potatoes three times to help remove as much potassium as possible. This will make canning potatoes much healthier for him. However others that are healthy should be aware that by soaking and rising they are removing a lot of the potassium that our bodies need. We healthy folks just need to ensure we pick up some additional potassium with other foods in our diet. Keep up the great work you two are doing!!!! We all love you!

      My husband also had to do dialysis and you are correct. But it is hard for the average person to get enough potassium (4700 mg) unless you avoid processed foods. Potatoes are not considered all that healthy to begin with, then to strip the main redeeming factor (potassium) out of them is just terrible. Plus all that soaking is taking most any other nutrients out too.

      My daughter is in a similar situation. But sometimes (especially Christmas and Thanksgiving) she wants something familiar such as mashed potatoes. So we will soak them first and double boil them. It's about tradition and taste not nutrition. Best wishes for everyone.

    You never stop, thank goodness for your efforts. On another note, I had canned some chicken broth and the jars had all sealed. I opened one last night but saw that it had unsealed……and thank God I did not use it……would you know why a sealed jar would un-seal on the shelf and if this sometimes happens. I think it would be a good thing to warn people against. I smelled the broth and it was off but…..my husband whose nose is not as sharp as mine believed it to be OK. When I dumped it in the sink, the odor conformed that I had done the right thing, you have made me very conscious of my canning and I thank you for that from the bottom of my heart.

    Hi from Australia to both of you! Thank you for all the work you do for all of us! I'll be trying this one as I have your meals in a jar! I loved the stroganoff and Chicken a la King! Delicious! I have a few kilo's of Roma tomatoes and capsicum etc and plan on canning those tomorrow. I think its a great idea to have prepared veggies in the pantry. You were one of the people that convinced me to tackle pressure canning. I have ill health a lot of the time and it is so nice to just go to the pantry and grab a jar or two and not have to cook but still get a good meal! Thank you again!

    These are very similar to a recipe I found on another channel, they was called "Breakfast" Potatoes. They use water instead of Broth and no Lemon Zest. These sound wonderful, I am goin to try them, Thanks for the Video :)

    adding this to my growing list of canning ! I agree with doing quarts instead, so that part could be saved for another meal side once you open and use 1/2 contents. thank you for reinforcing safe canning practices.

    I just love your channel! I have been watching for years. I watch on my tv and can’t comment. So I’m now using my iPad. You remind me so much of my dear grandma. She was always impeccably dressed and loved jewelry. (I guess that’s where I get it from!) You look so lovely all the time as well. Maybe you are her secret twin? 😊 did you grow up in Star Valley? Hahaha. I just finished the Chipotle Chili, now on to these potatoes. I grew up in a canning family on both sides. It’s so satisfying to see it on the shelf. Wave when you go Cindy’s house next time.     I have the USDA recipe book and it's mostly just for storing the food it seems. It never occurred to me that I could pressure canner to prep food and then crisp it in an air fryer before serving. I was getting discouraged that too much of my food was soft. Thanks for this video.

    I can potatoes but normally don't use russets because of the excess starch. Will definitely try this method and this recipe as you can find russets on sale a lot cheaper than red or yellow potatoes normally.

    Pam thank you so much for this recipe, it reminds me of a side dish we used to have with dinner or breakfast. I have a Swedish an Irish background only one generation from your country before me, my aunts and uncles etc. but grandparents were born there and traveled to America so some of these recipes came with them & they are very familiar ti me.I’m glad to have the recipe.     Thanks for showing another way to add variety to our canned potatoes. We canned a lot of potatoes, some with carrots mixed in and have found them to be so convenient. I love this idea and plan to implement it into my future canning.

    My batch is in my new Nesco as I type! I would add that I used 32oz. of vegetable broth for 5 wide mouth pints and had approx 1/2 cup of broth left over so those who dont want to waste the broth thats a pretty close amount. The seasoning smells perfect so I too, am excited to taste them tomorrow!

    Have these in the canner right now! I used a 10 pound bag of russets and quadrupled the spices, peppers, and onions for this size bag of potatoes. I got 7 quarts and used about 10-11 cups of chicken broth. The seasonings on these is so good! I can’t wait to try them! Thanks for the recipe!

    Mediterranean Potatoes were the first item I preserved in my Instant Pot Max. We finally opened a jar yesterday and air fried them. They were so delicious. 🇦🇺

    Those look so delicious! I love when an experiment turns out sucessfully! I don't have an air fryer but can use the oven to crisp them up 😋. I also love that you show the good and the bad (so glad that you were OK). I have always said that I may make mistakes, but that I don't (or try not to) make the same one twice. That being said, I hope that you don't mind my correcting the spelling of "oregano" (sorry, it just jumped out at me 😊). I hope that the rest of your weekend is great! I think that I'll go buy some potatoes while everyone else is home watching the game.

    Good Morning Pam, I just watched this video and I can't wait to try this potato recipe. May I recommend liners for your air fryer so you don't have to use the spray that really should not be used on non stick surfaces, over time it makes them sticky. I speak from experience, I had to throw a skillet away because it got so sticky food always stuck whether I used the spray or not. I bought some liners on Amazon and I use one every time I air fry, they are wonderful and the fryer stays clean.
    Thank you for all you do with the testing with your special tool and the recipes, you really gives us the confidence to know we can preserve our food for long term storage and we won't make our families sick. Have a Great Day

    Just as a FYI you can actually save that starch, pour out the water until as little as possible and let dry. Works just like corn starch. Same with rice.

    I just had to tell you. I went ahead and measured it all out to 10 lbs of potatoes which is 1.125 too much if my quick calculations were correct. But . . . I have 7 quarts heating to the venting stage in the AA canner and 1/2 tray cut smaller to go into the freezer for the freeze dryer. So excited. They are so beautiful!!!! I buy the toaster oven trays for smaller amounts and it works so well. But thank you - this is so pretty . . .

    I wouldn't throw the broth out you can freeze it and add the broth to potato soup any starch in that broth would help thicken the soup as well. I have learned so much from you and others on utube. Thank you so much for time you put into educating us. God bless. Happy canning.

    Wow! This looks delicious! I'm with you, on making it in quarts, instead of pints. This really has inspired me to get out my Nesco canner. I've had it since last spring and haven't used it, yet. I know, sad. Thank you for sharing.

    Always use non-aerosol propellant. It is available in various types of oil at most groceries. I use the avocado and the olive oil. Thank you and Jim for all you do.

    Those potatoes look so delicious.. a winner for sure.. I like the idea of using broth and I am definitely going to do a few pints.. I love doing potatoes in the air fryer..
