  • This corn was a favorite when I was growing up but I have not been able to find it in the stores recently. I was thrilled to find this recipe. It is so easy to pressure can, so pretty to look at, and so good to eat!

    I just can’t thank you two enough! I bought a Nescoe electric canner and learned how to use it by watching you and your videos. I’m 74 and had never canned a thing in my life! I just had a terrible bout of the flu, very sick for 5 days and I live alone. Because of YOU I had a small supply of delicious and nutritious chicken soup, potatoes and a few other things.. and now will can up this corn. When I could hold liquids down I was able to have the chicken soup and finally recover. You are helping all of us in more ways than you can imagine.. much love to you both 💕💕💕

    I did 12 pints of this last month. We have already used it in soup, Mexican beef enchiladas, as a side with rice and beans for a meatless Monday, and cold with canned chicken salad. I need to make another 12 pints. I read to use a small amount of pickle crisp to keep the pepper color, I think I will try with a couple of the pints.

    Mexican Street Corn:
    3c. corn, 1 cup chopped onions, 1 cup mixed bell peppers, chopped, 2 teaspoon cumin, 2 teaspoon oregano, 2 teaspoon salt. Divide into 4, 1 pt jars, & fill with vegetable broth. Wipe rims of jars with vinegar and place lids finger tight. Process 55 minutes.

    Hi Pam and Jim! Haven't commented in a long time but want to share a tidbit. (see the end for the advice) I did this exact recipe in my Instant Pot Max yesterday and the Max blew an error code! The display was flashing and where the time would be it read "Alt". Did some research and found that there are 2 probable causes: (1) the altitude is set incorrectly; (2) the Max failed to reach/maintain correct temperature/pressure. I will go with 2 because I confirmed the altitude, tried again and same thing again -- 30 minutes into processing. I tried 2 more times, even unplugging the device but to no avail. So that batch of Mexican corn has be heated to pressure and maintained at pressure 4 times at around 30 minutes each plus the cooldowns (it won't restart until it cools to an extent).
    Here's the advice: absolutely take a picture of any errors on the display. I called the company, explained that the Max was purchased literally one year to the date, everything I did, etc. and the woman said they would start a warranty return ticket and replace it, but that I had to reply to the e-mail with requested information (photos of various bits). One of the photos they wanted was a photo of the error! Well, dang, that meant I had to recreate the exact situation again. So I did and this time it got past the 30 minute mark but eventually the error happened again, wrecking yet another canning session. I took the photo and replied back.
    So, 2 bits of advice to share: (1) Be sure to register your product. I did and they had my info in their records. (2) Absolutely take a picture of any error on the display. If it becomes an error that can't be solved, you will have the evidence you need for service under warranty.
    Update: I heard back from Instant and the Max is no longer manufactured. They have offered me a free upgrade to the Instant Pot® Pro™ Plus 6-quart Smart Multi-Cooker. That made me nervous until I confirmed that it absolutely does canning. Whew. I hope this info is somehow useful because your community will no longer be able to purchase the Max once existing stock runs out from vendors.

    About that pesky ‘keep warm” feature on the Instant Pot Max, all you need to do is tap your finger on the screen icon, and then the icon will change to reflect no stream rising above the little pot (which indicates the keep warm feature is turned off). Unfortunately, this feature turns on everytime you use the Max, but it is an easy fix. Thanks for the wonderful idea of Mexican corn. Instead of canning it I plan to freeze dry the mixer and then will use the vegetable broth to rehydrate it rather than using water. You could easily do this for your trail grazer channel. Please keep up the wonderful job you are both doing.

    I want to try this but I will substitute poblanos for the green bell peppers. I don’t think they will fade quite as much and add a little spice! At our house we say a little spice is nice!

      Just remember that the longer that sits on the shelf the Poblano spice will increase.

    Great idea! I'm 57 yrs old and being a Northerner, I never knew what Mexican corn was until I stumbled upon it at our local Safeway. I LOVE the stuff, but it's pricey! Luckily hubby says we are going to grow LOTS of corn this year in our garden so I'm happy to have this recipe.

    I made this yesterday, and had a jar that did not seal. I decided to practice a grid down meal. Pulled a jar of black beans and a jar of Chipotle beef and added the corn. Made a quick fry pan Flatbread, and holey moley.....it was pretty darn good!! I can also see it as a soup with a can of chicken breast and some stock. I WILL be canning more!! Thanks for the great idea!

    I made this recipe a few months ago as my husband grew up with more real Mexican food in Southern California/Az area. He thought it had a little too much oregano but definitely a big fan of this recipe. Pints are perfect for the two of us. Thanks!

    I'm down to my last jar. I had canned up some a few months back in my Presto Digital canner. I had recently purchased it and thought this was an easy recipe to give a test run, This canned corn is delicious. I only used red bell pepper for the peppers and go easy on the cumin because we are not big fans of too much of its flavor. I did use organic frozen corn though I do believe all corn even organic now is GMOed.

    Thank you for this very timely video. I have 8 lbs. of frozen corn waiting on me to can. I know what I will canning tomorrow in my brand new Presto Precise electric canner!     This is on my list to make this week. I was thinking that the roasted corn stock that I bottled up would be delicious in place of the vegetable broth. Gonna give it a try. Thanks for all you do.       Hmm.. sounds good. I’m using fresh corn so I’ll repurpose the cobs for broth. Gonna substitute one ground, Morita pepper (chipotle’s smaller and fruiter brother) for the black pepper. It’s got a fantastic smoky flavor and considerable heat, which are everything, to me😊

      I bought the Nesco mainly because it will hold pints or quarts. I like some of the features better on the Instant Pot Max, like the temperature readout and the automatic venting. If I only needed pints, I probably would have chosen the Instant Pot Max.

    My mom always made Mexican corn for my birthday dinner, although finding fresh bell peppers in the grocery store in mid was tricky at best back in the mid-mid-60s. But as I think about it, the recipe may have come from my Mammaw in WV since no one in my Baltimore family ever served it. The only difference was that mom used some home-canned tomatoes and a bit of sugar. Mammaw was big on adding sugar to cut the acid in tomatoes so that's's where I think the recipe originated in my family. I'm looking forward to making some to can for myself.

    The Mexican Corn looks tasty! I wonder if blanching the green peppers briefly in water with a little baking soda added then rinsing them off and adding them to the jars to be canned would help the green color not fade as much?

      I saw on a Mennonite canning channel that 25 mg of zinc (available on vitamin aisles) will keep green beans from fading. I texted the lady and she promises no change in flavor. I’m about to make this corn recipe, myself, with a few variations; this is one of them😊

    Miss Pam, I am intrigued about nixtamal. I don’t digest corn very well, but I love the taste. Could you make this with nixtamalized corn, and how would you do it? Cook it first? Or can you only use nixtamalized corn for grinding?

    My family loves a recipe I found several years ago for corn dip, which uses 2 can Mexican Corn. Will be canning this for that, and as a side dish, will be so much cheaper.

    My IP Max allows me to turn off keep warm. I've never had this but I think I'm going to give it a try! This has made me crave succotash, though, so maybe I'll do that as well!

    QUESTION, could you use dehydrated corn, green poblanos and red sweet peppers, onions and a seasoning packet as well as a packet of dehydrated cheese to make as a "side" in a jar?

      First, you are not supposed to can dairy. Second, I think those might be too many changes, and you would be working with an untested recipe 🤷🏻‍♀️

    With thawing frozen corn, then canning it, doesn’t it make the corn mushy?

    I tap the keep warm off when I’m setting the time to process. I think turning off the keep warm function hastens the cool down time.

    I found out that I have chronic kidney disease stage 3. I have to reduce my salt intake by about 75%. I have also been pursuing the craft of canning. So I am at a crossroads and hope you can answer my question here. Is salt required in canning everything, somethings, or not at all?

      Salt is not required in pressure canning. It is for flavor.

      Salt does "not" aid canning in any way. If you dont want it in your canning recipes..leave it out.

    I love this recipe! Since I haven't seen any lately, I usually mix a can of Rotel with 2 cans of corn. Sometimes I'll add a can of drained and rinsed black beans. But I will definitely give this a try. Could canned corn be used or would it turn out too mushy?

    Pam, This looks delicious. I don't have an electric canner, so how many minutes would I pressure can this? I would probably do mine in 8 oz jelly jars to be used as a side dish for just my husband and I.

      The canning times are the same in a pressure canner. But you would still have to can it for the same time as pints, since there are no tested times for half pints. But why don’t you can pints and refrigerate leftovers?☺️

    Just for practice, I always can one jar with a tattler lid. One time I was too confident and canned 12 pints with a tattler and all but 2 failed. Never again. Is that water bath or pressure?

    This Mexican corn looks like it will be a good base for a black bean and corn salad. I am wondering if the corn can be used right from the jar, or if it should be boiled for 10 minutes as is sometimes recommended for home canned vegetables, and then cooled before adding the beans and the dressing.

    Yum! Could chicken broth be substituted for vegetable broth? Our UGO had big boxes of Swanson low sodium chicken broth for 99 cents. I bought more than I probably should have.

    I've heard Instant Pots are not a safe pressure cooker for pressure canning. I could not find any info on the IP Max on the Instant Pot website. Have you researched this? What have you found?

    I know you have an outdoor setup for pressure canning. Do you have a video on that set up. I was just looking at a cooktop for outside to pressure can on and thought I’d better check for any special specifications.

    Can this be done in nesco electric canner, that is what I have tempted to get an instant pot max too! Ty so much for your channel I have learned so much! Also can you substitute oregano or leave out? I have stomach problems with oregano.

    I am an infant in this canning business! However I appreciate all that you teach in an understandable way!!
    I am from Ontario Canada. I can't say I have ever heard of Mexican corn. I'm wondering how you use it? Is it just a side dish ? Or as a condiment? Or is there other ways?

      I've used it in taco type soups and chilis. Don't drain the broth! I had used chicken broth when I made this and it was great in a white chicken chili.

    Do you think blanching the peppers would prevent them from fading? Also, I can’t think of any reason why blanching them would cause an issue, but do you know of one? Thanks!

    I love the thought of an electric canner. I am extremely concerned that there is no way to be sure that it is functioning properly after continued use, say 3 years later.

    What would be the pressure in a stove top pressure cooker. My elevation is 3500

    You used frozen corn which I think is blanched and then frozen, but could I use canned corn which has been well..canned/cooked well? Wondering if the canned corn would be too cooked after I have canned this recipe?🤔

    How do you prevent the corn from darkening? Every corn recipe I've ever canned has resulted, after a week or so, of the corn becoming a brownish yellow.

    Well I blew it. I was making this while on the phone with my sister and was trying to do it from memory. I did enough for nine pints but I used tablespoons instead of teaspoons for my oregano and cumin. Did not realize the error until I finished canning. Oh well I guess I will be doing another batch without the seasoning and I will just combine two jars for a meal. One seasoned and one unseasoned. I usually never talk on the phone when I am canning but because she had called me twice I decided I should answer on her third call. Oh well it's a good thing I love Mexican corn. Thanks for the recipe.

Also, last bunch of summers when I checked my elevation it was 1001 feet, only time I have ever checked is in summer, cause that is usually when I can stuff. Today I am making the potatoes from your other video and I checked my elevation just to be sure, and it is 918 feet . color me surprised. Is this right? I didn't know your elevation could change.

      I have no idea how it changed between the two checks. It could be the way it was measured or where the they took the highest point reference. It could also be that the highest point was annexed into the local area after the first measure. Just guessing. Jim
