I've cooked them first too but I've found the soak/grind/form then cooking adds extra firmness and texture and the meatballs hold together better. JMHO

Soak 1 cup of lentils for 3 hrs Drain and Blend into a paste Shred one whole carrot Dice 1/4 white onion Chop 1 clove of garlic Sautée (in that order) until soft and translucent Mix into lentils and add 1c cooked rice Add in 1/4 c of gluten flour 1 tsp cumin 1 tsp Italian seasoning Salt and pepper Knead into firm dough Roll into golf ball size and cook until browned
Since I can’t use wheat gluten flour, I use garbanzo flour with a dash of psyllium. This mix blends amazingly well with Impossible burger/sausage for an extender and hybrid taste.

These meatballs come out with a perfect amount of bite and chewiness! Like a real meatball! I added the seasonings you recommend, but left out cumin in favor of coriander and used crushed felnnel seeds instead of hot pepper flakes. I added a bit more oilive oil in the mix, onion powder, garlic powder, & paprika, a little soy sauce, & a little Worchersershire sauce. I made the fresh tomato sauce like yours, cooking down fresh garden tomatoes, & omitting the peels before blending. This made about 21 meatballs using basically just 1 cup soaked lentils, 1 cup rice, a little gluten flour, chopped veggies and seasonings. Such a money saver over the frozen ones, but also infinitely more tasty! Like these are a million times more tasty than the vegan meatballs I've been buying. They're addictive. The ones we didn't demolish are in the freezer, can't wait to have them again! Yum! Thanks !!
Hi there!! I just made the lentil balls!! They are great!! I did them alittle different, as I don't do gluten or oils. I used millet flour, no oils and cooked them in the air fryer!! They are fantastic and sooo easy to make!!! They came out perfect!! Thank you sooo much!!!!!

But I love store bought processed fake chicken nuggets and I don't want to eat "isolated pea protein" as it might increase production of IGF-1. This is exactly what I made the other day only I used a boiled potato instead of rice. I used some spices and salt and sugar. Very much like an expensive vegan breakfast sausage. It's cheap and easy and delish. Liked and subbed long ago. Love your channel!
Hi, to change up the flavour, do Scandinavian ones for cocktail on sticks or for potato mash and cooked green peas and deep fried crunchy onions if you can find these. The spices for the mince -1 tbs finely ground allspice, a dash of ground mace, white ground pepper, 1 tbs soy sauce, 1 tsp dark sugar and salt to taste. For the glazy sauce 1 tspstarch 1/2 cup cranberry jam or lingon, 1 tbs mushroom powder or omit, 1 tbs soy sauce dark, 1 tbs of mustard, 1 cup water, 1 tsp thyme. Make hazelnut (with shell) sized balls. Fry balls in margarine on medium heat, not high, until well browned on all sides. Mix glaze and pour over scandiballs. Heat and stir gently until glaze is thickened.

This is my absolute favorite recipe from We Cook Vegan. I change it up as the mood strikes. Your version is good but it's excellent without the added gluten as well, although I'll put in ground flax sometimes. I've cooked the meatballs directly in the sauce and they don't fall apart. But where they really shine for me is a filling for stuffed peppers and cabbage. I add more onions and a bunch more rice and the texture of the filling is so close to what my old-style meaty filling was. It firms up quite a bit on cooking so you can get away with adding extra veg or grain and it retains its texture and cohesiveness. I've yet to make it into a loaf but that's next along with trying it out for burgers. Great recipe. I was without a couple ingredients like garlic, but I threw in some extra spices, and it worked out. Truthfully, I did not like the sauce much or the lentil meatball much or even the vegan cheese, but when I put everything together I found it a great meal. I did not use any protein gluten. I put some nutritional yeast in for fun. I can't wait to eat more for breakfast. My wife even liked it. LOL

These were fun to make. I made the We Cook Vegan recipe, when it came out, and I really like your input. The rice was a great addition I never would have thought to add, and the VWG provided the chew, that the other recipe was missing. I used taco seasoning in the lentil balls and went salsa-style with the tomato sauce. Really enjoy your work. Look forward to your next output!
Lentils are SO meaty - honestly, probably the best pulse of them all for recipes like this one! I loove Sam's (from It Doesn’t Taste Like Chicken) lentil-vwg meatball recipe and made is many times a milion different ways (the base proportions are just awesome). Will happily try yours as they seem simpler to make!
We made a burger using similar ingredients except used quinoa instead of the lentils and it was delicious! Whole Foods has discontinued their 365 vegan meatballs and I was bummed…. But plan to try your recipe and I’m sure it’ll be perfect. Thank you! 😊
Just made some of these, but just with what I had in the kitchen + pretty much ignored your entire process. I'm an idiot. However, it was pretty close. Even with all the mistakes, it tasted extremely nice!
I made these meatballs last night, but tweaked the spices a little to make Swedish meatballs (I added about 1/4 teaspoon each of nutmeg and allspice and salted them with Bragg's Liquid Aminos and simmered them in some beefish gravy i threw together). They turned out great! Just let me say though, that pan really needs to be HOT to brown them, or else they will just fall apart. Once they are browned, they stay together quite well and have a good firmness. I think next time, I may add more of a rounded 1/4 cup of gluten rather than a leveled cup though. My rice may have been a little too fresh LOL

You don't need anything. They hold together just fine without any additions. I use this recipe all the time, change it up according to my mood and it works every time.
no, the gluten flour is basically regular flour with the starches removed, which is how it can mimic a meatier texture, so use Gluten flour, as long as you aren't intolerant or have celiac disease
honestly I'm not sure why he's soaking them, I've made lentil meatloaf without a soak, just rinse and sort, bring to a boil, then lower and simmer for 20 minutes. Let them cool and proceed to use them as a meat sub!
My partner is particularly sensitive to beans 💨💨💨if they aren’t soaked before cooking and will create stomach issues. I don’t know if boiling them has the same effects as soaking, but thanks for the suggestion. I will research that.

I just made a version of these and they are FIRM. Finally no more mushy vegan meat. I think the combination of blending them like that plus the gluten flour really is the secret.
This specific recipe was made to imitate meat, thus “better than meat” When I make recipes that have nothing to do with meat, I don’t label them “better than meat”

I really like your channel and like to experiment with your recipes. I will say this up front. I eat meat but also love vegetarian and vegan dishes. I am not aggressive to eating lifestyles either. Just saying that there are multiple types of protein essential to the human body and are obtained in different ways. Several of these proteins are densely packed in animal protein however, can also be sourced in a plant based diet. Everyone should do their own research as the label "protein" is a blanket statement to different essential protein types.

I cook my lentils in a rice cooker they come out almost like mashed potatoes, then you can make whatever you want with them. So easy and no mess.

Splash of red wine would be good I reckon. Any leftover red wine can be put in ice cubes trays in the freezer.

they should freeze quite well! I'd say they should last frozen for at least 6 months, if they even last that long!

I just made a version of these and they are FIRM. Finally no more mushy vegan meat. I think the combination of blending them like that plus the gluten flour really is the secret.
As a vegan, I really dislike seeing things being described as "better than meat", as if meat were some kind of gold standard for flavor.
This specific recipe was made to imitate meat, thus “better than meat”
When I make recipes that have nothing to do with meat, I don’t label them “better than meat”
That bread looks great and I know sponsors help the channel but I know you can make bread like that. Give it a go. It's easy. The lentil balls look great too!

I really like your channel and like to experiment with your recipes. I will say this up front. I eat meat but also love vegetarian and vegan dishes. I am not aggressive to eating lifestyles either. Just saying that there are multiple types of protein essential to the human body and are obtained in different ways. Several of these proteins are densely packed in animal protein however, can also be sourced in a plant based diet. Everyone should do their own research as the label "protein" is a blanket statement to different essential protein types.
