We're making Red Velvet Cupcakes (obvs), ingredients are listed below with what you'll need to bake 12 perfect cupcakes!
RED VELVET CUPCAKES:
1 ½ tbsp Buttermilk
¼ tsp Red Colour Paste
¼ tsp Vanilla
135g Soft Butter
115g Self Raising Flour
10g Cocoa Powder
125g Caster Sugar
¼ tsp Salt
2 Eggs
¾ tsp Vinegar
½ tsp Bicarb
CREAM CHEESE BUTTERCREAM:
125g Soft Unsalted Butter
¼ tsp Sea Salt
200g Full Fat Cream Cheese
700g Icing Sugar
EQUIPMENT NEEDED:
Stand mixer with paddle attachment or electric hand mixer
Multiple bowls for ingredients/mixing
Sieve
At least one rubber spatula, preferably a few
Teaspoon measures
Mini whisk (not essential though)
A 12-hole regular sized cupcake tin
Paper cupcake cases that for it snuggly
Large piping bag
Large round nozzle
Microplane or regular grater
Cling film

The story I always heard was that back-in-the-day, they used beets as a sweetener because it was cheaper than sugar, hence the reddish colored cake.
