How to use Blendy® Chorizo Seco

Learn how to use Blendy® Chorizo Seco Affari.
Blendy® Chorizo Seco is a total optimizer for the production of dry sausages, which cures, preserves and controls the shrinkage of sausages, providing flavor, aroma, shine and binding.
How to prepare dry sausages with Blendy® Chorizo seco?
1- For 1 kilo of minced meat, weigh 70 grams of Blendy® Chorizo Seco.
2- Add Blendy® Chorizo Seco and 50 ml of water to the meat.
👉🏻 Optional: Replace the water with sherry, port or brandy.
3- Knead until a homogeneous mixture is obtained.
👉🏻 The intensity and time of kneading have a direct influence on the bond and texture of the final product.
4- Stuff the mixture in beef casing, making sure to eliminate air, to avoid pockets inside the pieces.
5- Take the pieces to the refrigerator for 24 hours.
6- Hang the pieces separately from each other at an ambient temperature of 15° to 22°C, with a relative humidity of 70% / 80%.
📌 Drying time will vary between 15 and 30 days, depending on the temperature and humidity conditions of the environment.
It is important that both the drying room and the cellar are well ventilated but without direct air currents.
This could dry the surface of the sausage and negatively affect the maturation process.
The time and quality of drying are crucial and may vary according to environmental conditions.
