Just WOW! I am an Irish Breakfast tea guy (prefer non floral flavoured tea), but the bergamot from the Earl Grey in this recipe, would be a perfect marriage of flavours in this cupcake!
I prefer Earl Grey tea to 'builder's tea' (I'm not posh, I swear!) and these cupcakes really remind me of lazy breakfasts at my grandma's house in Liverpool. It might sound a bit weird but I'm telling you, it all makes sense ones you pop one in your gob!
I've just baked these and the tea flavour isn't as prominent as I hoped it would be. I added half of the icing sugar to make the butter cream and baked them in a 180°C oven for 22 minutes (20-25 minutes would be a good range)
I made these yesterday and they are amazing! My new favourite cupcakes. I was super sceptical about the marmalade but they're perfect. As for the baking time, I found that 10 mins at gas mark 3 and then 10 at 4 was best otherwise they rose too quickly. :)

I wish we could have seen the inside when you cut it in half to see the crumb texture and also to see how the marmalade looked inside. Also, would love to have heard details such as how moist it is and how much Earl Grey flavour you noticed when you tasted. Sounds like a yummy cupcake though.

can i use lady grey tea instead? and if i'm mixing it using hand, so i cream my butter and sugar first til pale and fluffy and then add eggs bit by bit while mixing, add sifted flour , bicarb soda and the milk? thanks for the recipe, might try this one after exam haha

The problem is the butter cream is toooo sweet. What should I Jemma Y_Y Is that possible to cut haft of icing in the butter cream? It going to change the consistency of the butter cream or not? Peppamint Chuanpanyo It will change the consistency. Have you already made it and decided it is too sweet? Because i find that it is perfect when combined with the cupcake itself. The sponge kind of takes the edge off the sweetness, y'know? Try reducing by 100-300g only at first. This won't make it too different.

2 sticks unsalted butter
2 cups self raising flour
1.25 cups sugar
0.5 tsp bicarb soda
4 large eggs
3 tbs earl grey milk

Earl grey is my favourite tea :) would they taste plain if i didn't make the 'breakfast version' and left out the toast and jam?

Jemma! How do we get a smooth buttercream? Because i always get icy sugary buttercream😭 anyways, love this recipe!!
Mix it reeeally well, for 5 minutes before adding the icing sugar and at least 5 more after adding it!
