    2 medium zucchini
    2 medium carrot
    1 small onion
    Salt, pepper, turmeric powder, to taste.
    4 tbsp plain flour
    1 egg
    Indonesian
    Zucchini Carrot Fritter
    2 zucchini sedang
    2 wortel sedang
    1 bawang kecil
    Garam, merica, bubuk kunyit, secukupnya.
    4 sdm tepung terigu
    1 butir telur
    French
    Courgette Carotte Beignet
    2 courgettes moyennes
    2 carottes moyennes
    1 petit oignon
    Sel, poivre, poudre de curcuma, au goût.
    4 c. À table de farine nature
    1 oeuf

    For an excellent vegan version, omit flour and egg, then mix half a cup of chickpea flour (Besan flour) with equal amount water and add to the grated vegetables.

    Alright I straight had some fun with the recipe! Used buckwheat flour and had to play with the amounts because the zucchini I got was the little old rejects, same with the carrots. It was jucy, too much and they fell apart. I added more buckwheat flour then something came to mind. I have a bag of road Flax seed mixed with chia seeds I didn't know what to do with, but was aware of chia and Flax seed being like an egg. It totally worked! The spices I decided to try out curry like someone else said, and I added nutritional yeast in hopes for a cheese flavor. They are great! I want play with this some more, thinking of a yogurt dressing! Thanks had fun!

      Thanks! I thought of adding coconut flour to absorb all that liquid, but will try almond flour first, as I am not too keen on coconut flour flavor.

      Lucie Salat i just tried these fritters and they turned out super tasty.. I added half chickpea flour and half flour... But these fritters soaked up all my oil at the end😞
      So i would rather squeeze them up next time before shallow frying!!

    My mother tought me how to make this fritter: grated zucchini, chopped green fresh onion, ment (nana), salt and pepper, anise, or the green of a finoccio, parsley, a few eggs, smashed feta cheese and some of edam or gouda grated and some semolina or flour to mix the dough until get so thick you can get with the spoon and put it in the pan in olive oil to fritte or bake in oven as a pita. You should try this way and tell me your opinion, please! Have a happy and creative new year!😍

      Update! I've made these twice now. Both as a half batch. I used almond flour, and about the same ratios of ingredients in the video. I used maybe a pinch less carrot, and 1 whole egg each time, and cooked them with a blend of pasture raised butter and algae oil. The second batch I added garlic powder, chili powder, and paprika to the original seasonings in the video. I cooked them on medium high flame. The second batch I also accidentally peeled them because I was also making another recipe. I think these were delicious both times! Although, a lot like pancakes, (for me) the first ones were tougher to cook, and then each set after that I knew more what I was doing, so they came out better! So the second batch cooked up nice and golden brown! I like them most straight out of the pan, hot and crispy (no waiting)! Great recipe! Highly recommend! Easy, tasty, and healthy! Great for winter!Thanks again for the recipe! :)

    Just made 9 from 1 zucchini and 1 carrot put more self raising flour because of the liquid. Mines came out darker how I like it. Not tasted yet but smells good. Thanks for an easy recipe.

    I just followed this recipe I added plain flour and it came out very dredgy and gloopy... so I added self raising to the rest of the mix and that saved the day! (Very delicious, thanks for sharing!) I wonder why plain flour didn't work for me?

      Hi Sumaeyya, thanks for making it. You might use self-raising flour which is contained baking powder. Use only little plain flour just to bind the ingredients together.

      I read your comment and I know I am late for this, but I have just made them.
      Turned out great, I grated the zucchini onto three sheets of towel paper. I squeezed the excess moisture out of the zucchini
      Before I added it to the bowl to mix in, as I only had a fat ones so more white in the middle. They are still moist on the inside but not watery. Hope this helps.

    I like your pastry recipes. Thanks. I enjoyed watching this one also. In Indian homes we use a similar recipe using chickpea flour 4tbs + rice flour 1Tbs ( gluten free) instead of all purpose flour and egg ( Vegetarian, Vegan option). We jaz it up with optional ingredients like finely chopped hot green chillies, cilantro, little anise seeds or crushed coriander seeds as per taste. Rice flour makes it crispy. Very quick to make, easy and very tasty coming right out of the fryer, crispy and delicious. Sugar free savory snack! Air fryer set with correct temperature and time rejuvenates left over fritters, if any, or even frozen fritters like almost freshly made. Other vegetable options include thinly sliced cabbage, red, yellow and green peppers, shredded potato, spinach or kale etc in various combinations as per liking. As a low calorie version the same dough made slightly thin with water can be pan fried like pan cake, though not as fluffy but yet tasty.

    Yum, I would not fry in oil though, I would fry them on a nonstick skillet, much healthier.

      ingrid, I use a non-stick pan too, without oil is healthier but not so delicious, missing the crispiness

    You don't have to put this all oil you can cook on non stick pan with no oil.

      I was wondering that also. Make into patties and bake at 375 for 10 min each side, use parchment paper.

      You can substitute the flour for old bread .. Its good

      Yes I understand. substitution is good. You could almond flour without the egg and put them in the oven on parchment?🤷‍♀️

      tasha K no baking - she said so up there. I can verify that. Use nonstick pan with teeny bit oil, GF flour and a flax egg. I did and it all worked DELICIOUS

      Maybe the zucchini was too watery. You might squeeze the zucchini or add more flour.

    Wow, Ninik, I made these for dinner tonight and they were fantastic! I also grated 1 garlic cloves and added curry along with the tumeric. I guess that's why I was instantly addicted, Lol! 💜 Thanks again for sharing 🙂
