How To Make Jamaican Black Cake | A Caribbean Christmas Cake Recipe

  • In this video, I'm sharing a traditional recipe for Jamaican Black Cake, a delicious and indulgent dessert staple at Jamaica's holiday gatherings. This Caribbean fruit cake is made with a blend of dried fruit, spices, wine, and sometimes rum, and it's the perfect way to add a touch of Caribbean flavor to your holiday celebrations. You'll also find this cake at many Caribbean celebrations, like weddings.
    This recipe needs some prep, such as soaking the dried fruit in wine for a few days...or even weeks/months. For full additional information, check out the link to the full blog post.
    Ingredients Needed:
    For the Fruit Blend
    8 oz pitted dried prunes, about 1 ¼ cup
    5 oz raisins, about 1 cup
    5 oz golden raisins, about 1 cup
    5 oz dried cherries, about 1 cup
    2 ¾ cups sweet red dessert wine separated
    For the Cake
    1 cup all-purpose flour
    1 cup plain breadcrumbs
    1 Tablespoon baking powder
    1 teaspoon cinnamon
    ¾ teaspoon nutmeg
    ¼ teaspoon allspice
    ¼ teaspoon salt
    ½ lb butter 2 sticks, softened
    1 ¼ cups dark brown sugar
    5 large eggs
    1 Tablespoon lime juice and lime zest
    1 teaspoon vanilla extract
    1 teaspoon almond extract
    Fruit bend mixture
    2 Tablespoon browning
    2 Tablespoons burnt sugar

    Shalom Shalom black fruit cake is what i was told it is called.
    It is so delicious. I have to make it. The one I tried was made by my friend and I was lucky enough to get it big piece of it

    After all was said and done last night I ordered a 10-inch Fat Daddio cheesecake pan with removable bottom and some 10-inch parchment rounds! They should arrive by the time the fruit has marinated for the necessary time! I'll post the pics of it when I make it on my FB page and of course give the link to your amazing recipe!

    Thank you for giving us a recipe with the right fruit and wine proportions! :) So many of the black cake recipes online assume those of us that didn't grow up with it somehow know how much of the fruit mixture to use when making the cake. This one turned out delicious and it was exactly like the one I had at my friend's wedding! :) (FWIW, I've made 23 recipes so far and yours is the first to nail it!)

    Made this yesterday and it was so moist and yummy. 😋 I didn’t have bread crumbs so I just doubled the flour. Thanks for your clear and thorough instructions.

    I made this today and now it's sitting in the icebox with the last of the wine I soaked the fruit in and I can't wait to taste it tomorrow! I'll probably have to cut it into small pieces and freeze them because it's probably a bit sweeter than I should eat a lot of at one time nowadays. Not diabetic but trying not to be! So far so good! I filled up the 10X3 pan to the top but it didn't go over! Thanks for this great recipe!!!!

    A few questions! I have the fruit soaking in the wine and rum! I also don't plan on pureeing the fruit after it soaks for the requisite time. Do I keep the same cook time or will it take longer with it not pureed? Also, would a square pan work as well as a round one? I guess it would. I don't have a 10-inch round pan but I can find a Fat Daddio 10-inch square pan if I can't find a 10-inch round foil pan. It looks to me that the browning called for is something that Gravy Master or Kitchen Bouquet should work for. I'm going to see if I can find the Burnt Sugar at my local international grocer tomorrow. Or would Molasses work? Sorry for all the questions but this looks really really interesting to me and I look forward to making it right after Christmas! Thanks for another great recipe!!!!       Hey! So excited for your cake. It’ll likely cook a bit faster. I’d suggest checking on it around the 1 hr 30min mark. A square pan will work fine. I’ve used Kitchen Bouquet in place of browning. Works just fine. Molasses is a wee bit thicker than burnt sugar and won’t get the cake as dark as mine, but should work fine as a sub.

      She did that days ahead with dried fruit and wine......prep for 10 days if I'm not mistaken

      You soak the dried fruits in a mixture of rum and wine to your taste. Approx 2 cups of wine to 1 cup of white rum. It is better to soak for at least 5-10 days. A lot of people soak it a year ahead!. Good luck..🥳

      whatever you like, raisins, maraschino cherries, prunes, mixed fruit, candied citron or citrus, any or all, according to your liking. Some people don't like mixed fruit in theirs.

      For soaking the fruit. Only if you want though. If using rum, sub 1/4 of the wine you use for soaking with rum.
