    Recipe for 2 9 inch cakes
    12 eggs
    8 oz butter
    1 lb dark raisins, ground or chopped
    ½ lb prunes, ground or chopped
    1 teaspoon grated or ground nutmeg
    Red Label Wine and Wray and Nephew Overproof Rum
    A splash of Rose Water
    1 teaspoon cinnamon powder
    1 teaspoon mixed spice for baking
    ½ teaspoon salt
    3 teaspoon baking powder
    3 cups baking flour
    2 cups brown sugar
    3 tablespoon browning
    2 teaspoon vanilla

    😊 you've been doing a very good job by teaching these people about that part of the eggs. From I have sense I've seen my MOM remove it from WHATEVER she was doing with eggs and that's why I don't eat fried eggs from no one and no yolks for me. Thank you sir. 🙏 blessings from God.

    The best way to remove the eggs eye is to whisk the eggs and pour it true a strainer in that way it will also catch any eggs shell

      I used a Jamaican brand , possibly grace .
      As long as you use the right amount of, it shouldn’t be bitter .

    Sir a spray bottle works better for putting the rum and wine on the cake. Just spray your cakes. 👍🏾

    _...that little white part of the egg is the chick...if the egg was allowed to hatch, that little white part is what the chick forms from...the egg yolk feeds the chick...the egg white is a protective sack..._ 🤔...

      Thank you. Seriously I was waiting patiently for you to cut into it and put it on the fork and say to me taste and see how moist it is. My mouth was so watering for that black cake. I learn something from you though to put water in the oven on the bottom help make the cake moist and not dry

      Inspite of you not giving me a taste of 5he good old Jamaican fruit cake I also learn from you that you can remove the eye of the egg to reduce the rawness. I never like egg because it was too raw but not too long ago I made some scrambled eggs and I remove all that white stuff from it and it was awesome. I didn’t even realize I was eating eggs. Thanks for sharing that

    I do black cakes but like to watch other people how they do theirs when ever I start watching and I see someone doesn't take the eye out of the eggs I stop watching and go to a next one

      The recipe is in the description , it is for two nine inch cake. If you need just one cake , you would use half the measurements .

      For that recipe , yes. You could add fruit wine if you like . Some persons do, some don’t . The traditional recipe uses Red label wine and Wray and nephew rum.

      I used all purpose flour and I always use Salted butter , it doesn’t really make much of a difference , anyone will work.

    How long in advance did you dry your orange peel for stewing the fruits?

      It was about a week , as long as it is dried it is fine . Some persons put it in the Sun to speed up the drying process .

    Did you really use baking flour? You have it on your ingredient list but you didn't mention it while baking

      All purpose flour and baking flour is interchangeable in the recipe , either one works

    You should use 1 lb of butter and 1 tablespoon baking powder since you are using 1 1/2 lbs flour.

      Recipe is for two 9 inch cakes . 6 eggs per cake .
      If you are only doing one cake you would only need 6 eggs

    Every video I watch on TH-cam is showing dry ingredients being added to the batter then going back again to add more wet ingredients to the dry ingredients… 🤦🏽‍♀️

      Marly, that's because these cakes are not normally cut until a few days to a week after baking/ filming to facilitate the soaking with rum and wine. Also we want to upload as soon as possible so persons can prep and be able to bake this cake for Christmas. That's what I explained at the end of the video. I am sorry the thumbnail doesn't show the texture clearly.

      Hi Jennifer, if you read the recipe , it was just 3 table spoons of browning and that mixture was for two 9 inch cake. The browning used was way less than any recipe you would find out there. Look at the cake before I added the rum and you will see the color better.
