This is HUGE, not only a christening, yet a proposal all in one episode. Things have certainly changed in Panama. Jibsea II is so much more boat than I in all respect's. We are all wishing you both HAPPINESS and HEALTH in the future.

It ware really good to see you controlling the unfurling of the genoa. So many sailors just release the furling line and let the sail pull it out with no tension on the furling line. That can cause a tearrible override on the drum as the furling line slips down between the loose and sloppy wraps.

Think about fitting some line bags to the cocpit sides.. and a boom slop preventer harness to stop it from janking around when its not in use. It will keep things quieter and reduce wear on the goosneck.
I would also put up a coule of stern gate lines or better a bar for rough conditions.
I can see wanting to raise the roof on that little hard dodger. Not sure if it will work with the sightlines, but that should be a straightforward welding project on an aluminum boat.
Congratulations on your engagement. You should have a safety line connected to another line just in case that line snaps. You have such a nice boat. Aluminum is the best material for a cruising boat. I'm about ready to start building an aluminum boat myself. Looks like you need to raise up your aluminum companion way spray hood. I would get comfortable with your boat and then do some aluminum aluminum cutting and welding to change things if that's what you think is good. You can also move that grinder from underneath the spray hood. That zipper boom bag thing is the first time that I've seen that. That's pretty cool. I see Onboard Lifestyles and that other pink catamaran TH-cam channel.

Good news you found the loose auto pilot bolts .
You will have to set up the cockpit..aka the sailing office. If you have pads on the seats you will protect your knees... Theres an option. To have your pads two sided ...one side finished in an active sailing step on fabric the other a more docside and sitting out fabric..
As for the winches under the cockpit hood you may have to try placing yourself
in different ways ennitialy or use a powered winch handle.. they work normally or have powered modes ...not a bad idea with a bigger boat and stiffer pullys and main tracks.... from standing so long.
They also enable smaller and weakened persons to handle really heavy loads. I was watching a couple in their 60s sailing their 60ft 60tonne dutch steel explorer yatch using one .
They never had to go forward out of the cockpit whilst under sail.. and they could handle all the sheets and raise the main without breaking a sweat.

Careful, as we are now in Peak Hurricane Season, and Tropical Depressions that can spin up seem to be heading into the Gulf and Nort West Caribbean, so make sure to have safe bolt holes lined up for your Trip, a d keep an eye on the Mr Weatherman Channel on TH-cam. It feels a little like JibSea II was commissioned by someone who wanted all the best parts, but hadn't done very much actual sailing and didn't know exactly how to put them together? What an odd winch location! Boat looks bulletproof but I can see that you'll have a lot of work to make parts work together, and I'm looking forward to watching you turn her into a smooth long-distance sailing machine.
