    Very nice recipe and video. I love how calm and lovely your voice is (not like a few other Trinidadians that try to fake an American accent), and the way you've explained everything so nicely, anyone making this for the first time could easily understand how to do it. Great job!
    Btw, just my way, but I've NEVER proofed yeast in my 58 years of baking!

      Thank you for the wonderful comment! It's funny how we have different ways of baking - my mom always, always proofed the yeast. Hope the recipe came out great for you and I highly recommend making a panini with the coconut bake - it'll be amazing!

      You're welcome! My late mom used to as well, and almost everyone I know, but I experimented as I wanted to know if it was necessary, I did, and realized it wasn't, so I stopped doing it 😅, keep up the good work👍 and may God bless you 🙏
      Btw, I've been making coconut bake for the past 58 years since I learned baking from my late mom, hence I know that your recipe is good, but I haven't tried it.
      I only watch these videos when I see them show up on my feed, as I like to see how others make the same things that I make. We all do things differently, but once you know what you're doing, the end results are the same!
      When I do see something that I've never made, I'll surely try it and let you know how well I did.

    How does everyone get the coconut open so easily? When I do it it’s in pieces on the ground with bits of shell embedded in the meat. Then it’s basically ruined. Unless I want to grab a tweezers and have at it for over an hour. Frustrations aside. I will make this with store bought shredded coconut . Thank you.

      *Opening the coconut*: It's not ruined I promise. Hold your coconut in the palm of your hand with the 3 holes touching your fingers. Give a couple sharp taps across the center (perpendicular to the grain on the shell). It should split across the center in half.
      *Extracting the coconut*: The age of the brown coconut also has a role in how easy the meat is to remove. An older coconut will pull away from the shell slightly. After purchasing the coconut you can leave it in the fridge for a week or two before trying to open it. In the post, I mention a coconut shredder you can use too once you get the coconut open in halves. And.... it also takes me a long time to remove the meat - it took about 30 minutes for the one in this video so you're not alone at all.
      *Shredded coconut*: check the frozen section of the supermarket to see if they have grated coconut. Asian and Caribbean supermarkets may have. Trini groceries always have.

      There are supermarkets that sell the coconut already extracted and placed in containers. Giant supermarkets sell them , they do sell quickly.
