One additional point for " Why Briyani" is the convenience. Just like Burgers, Pizza, Tacos - biriyani is no mess and convenient to consume dish. You just need a spoon at the max fingers that are not dripping at the end of the meal. It can be eaten just by standing outside a thallu vandi on a street side shop, sit on a crowded 10by10 feet shop or eat in a well established ambience type restaurant. This is not possible with regular Indian food like meals or Dosa or roties with some curries. At the end Conveniences plays a big role in customer alignment to a product.
