A small suggestion. You know one of the nice things about parchment paper? You can write on it... If, say, you wanted to label to distinguish two visually identical baked products on the same sheet, one with fresh garlic and the other with the jarred version.
He said the test was if he got them mixed up and couldn't tell the difference, then that said everything that needed to be said. He wasn't trying to keep track. Just the opposite. He was testing if you could replace fresh garlic and get away with it.

When working in a professional kitchen you can order bulk fresh garlic that is already peeled and ready to chop and it only takes 10-15 min to prep by putting in the food processor or similar. It would be unrealistic for a kitchen that is known for a garlic product to use Jarlic, as its distinct flavor doesn't match fresh garlic.
My opinion is that pre-peeled garlic tastes incredibly similar to pre-minced garlic. There's more of a garlic taste, but not enough to convince me that it's worth the time to mince it myself. When I really want a garlic taste, I grate fresh peeled garlic and mix in a pinch of sea salt.
For those wondering about the inconclusive fresh-minced vs jarred garlic: The fresh-minced has a stronger flavor, but it can occasionally be overwhelming. The jarred is much milder, but is a lot easier to regulate flavor with.
@ArtzyZero Even if there were no difference, it would be nice to know not to bother going through the effort of using fresh garlic was worth it. As is, it's a bit too ambiguous.
To me fresh garlic has alot more spicy pungent flavor. Jarlic is much more muted and consistent in flavor. With a slightly pickled/preserved flavor. But that's me. If you have a Costco they have refrigerated peeled whole garlic in a massive bag. That can be frozen. 😊
I just came from a video about buffets where the solo presenter gets like 7 heaping plates of food and takes a couple bites from each before cutting to the next scene and doing it again for lunch. Anyway, what I'm getting at is I really appreciate that you take the time to show us at the end that the food wasn't wasted.

okay but like, garlic custard brushed on sourdough or brioche, with cheese layered inside (like a gruyère or white cheddar) and then toasted into garlic bread grilled cheese?! well now i need it
Nice video Alvin. I was thinking with the spare custard & bread you could do a savoury bread & butter pudding. Would be great with a sprinkling of nigella seeds on top! 😋
You could just throw a bunch of garlic cloves in a robo coupe and be done with it. Additionally if you need to tell the difference, write which is which on the parchment
Do it again but this time compare fresh chopped garlic pre-minced garlic in a jar black garlic (fermented) garlic powder oven-baked garlic squeesed out of the peel
I knew it _probably_ wasn't exactly butter, but didn't know what else it could be, so I assumed butter as well.. also glad I never tried to make it lol
So, did you make the cream cheese sweet? Most other recipes I have seen for this make the cream cheese sweet like a dessert, which I'm not a fan of. So I'd be happy if you just used unadulterated cream cheese for this.
Kinda forgot to give a conclusion regarding fresh vs jar garlic, but I guess that's an statement on itself
Yeah, that's exactly what he said in his video
Do it again but this time compare
fresh chopped garlic
preminced garlic in a jar
black garlic (fermented)

I'm convinced they created this channel just to make whatever food they want and eat it, I don't blame them
Babish did once start a show with welcome to "I saw it in a movie and now I want to eat it" or something similar, can't remember the episode though.
Isn’t that true of pretty much any cooking channel?
No one remembers living with babish: kratos training which was the actual main purpose of the channel.
Isn't that why anyone does anything
@@bondfool Especially ones with high budgets lol.
I still hope Andrew makes the various “foods in a cup” from Wall-E for his Binging series.
That is an amazing idea!

@@thevrifiedlosr you know what else is an amazing idea?

"We're still gonna do the thing in the thumbnail,
but hey, how about we *feed* some people, too?"

I've worked in multiple professional kitchens that use both. Jarlic has its time and place.

its a completely different flavor
I absolutely love how you make the actual recipes, but you don't waste anything either, you just use it in different things. I love it.
So was the fresh garlic different from the pre-minced garlic?
Yeah, what was the point of doing both if he didn't compare 😂
@@che3se1495 He did say if they couldn't tell the difference then it proved his point, so perhaps that's what happened?
I's got's to know! Never thought I would quote a Dirty Harry line for cooking, Lol!

He started packing them away and I'm like "wait no!!! I wanted to know if it made a difference!!!"
so I noticed you didn't really mention a difference between the taste of the minced vs fresh garlic does that mean it wasn't really noticeable?
I was just asking myself the same question. I guess it wasn't worth mentioning
Honestly I never notice one so I just use the preminced garlic you can get in a jar
I don't think he remembered to try. All three on one side of the baking sheet got packed away before being compared 😔.
I generally find it isnt until you get to granulated/ground garlic that there's a noticeable difference between garlic in it's various forms.

Its pretty much confirmed: Andrew wont allow Alvin to do the "Proofing hands" gesture when the dough has doubled in size
Alvin, your commitment to not wasting food is almost as amazing as your ability to turn your scraps into absolute gold.
I just finished kneading dough and wondered what I should do with it. Thank you for the advice.

I was thinking about making garlic bread at home, and then I opened up TH-cam on my phone and saw this. The TH-cam algorithm works in mysterious ways.
The studio probably smells like heaven
Thinking the same thing. When I first saw that video of the bakery/vendor making these, I've always wanted to give it a go. Looks like I can now!
As a vampire I would say that's a matter of perspective.
I feel like Alvin's reaction to eating the food has become homogeneous. Every time it looks like he's thinking, "yeah, that's what I expected."
You should put all of the larger rolls on one sheet tray and the smaller on the other to be able to bake them properly.

Didn't Arnold Rimmer try it, and described it as like "having a baby"? xD
I need to go watch that series again :D
Better ask Alvin to do it.
You'll have to pay for it if you want, babish to do it. 🤡
The way the knife slices through the bread makes me realise that I definitely need new knives 😂
Alvin... don't you have your own channel
I saw a tweet about this bread once like five years ago and have thought about it at least once a week ever since
If someone thinks you stink of garlic, that's just because they themselfs made the mistake of not eating delicious garlic.

Interesting note: Alvin distinctly used Fresh Garlic and Chopped Garlic but then seemingly forgot to mention which version tasted better. Oops.

The pour of the bread dough into the container to proof made me laugh so much. It’s just a tiny bit of dough😭 I though they’d be so much more

Thank you for doing this recipe. I saw the video for this bread years ago and I've always wanted to make it.
A "cheese shower" sounds like something we could all use once in a while.

You should make the pimento cheese sandwich Mike made from Better Call Saul and Breaking Bad
I was just in South Korea. In the local grocery store you can buy pounds of garlic cloves already peeled.
I absolutely love when my Mom made these...
It's like garlic french toast! Without the syrup, yum!

so which one was better, fresh or jarred garlic?
Overwhelming temptation to try using that garlic custard to make eggy bread (aka French Toast)
Never have I clicked on a video so quick. lol
Saw the words Cream Cheese and Garlic Bread and now I'm here. xD
I've heard of French Toast. I have now heard of Italian Toast.
My family makes garlic bread with just fresh garlic and butter spead on sourdough and toasted under the broiler.
So which tasted better: fresh garlic or jarred garlic? I wish you would’ve followed through on your experiment and provided results.
I've used both and never really notice a difference
The thing is, ALL GARLIC BREAD HERE IN KOREA IS SWEET it's the biggest betrayal. They sprinkle sugar on top most of the time too.

Dude! Savory garlic bread pudding! That's brilliant!
I miss being in Japan and hitting up every single bakery, I loved the bread 🤤

You can use pre-made bread rolls, that way you can make the cream cheese filling and garlic butter only
I'm hoping to see Alvin make a GIANT Wedding Cake from One Piece that Big Mom went berserk over.
