    INGREDIENTS & NOTES
    #1 Beigli
    FOR THE DOUGH
    80ml (1/3 cup) non dairy milk
    1 tbsp powdered sugar for yeast mixture
    3 tbsp apple sauce
    1 packet dry active yeast (7g = 0,25oz)
    270g flour (2 cups + 3 tbsp) (+ a little more for the surface+)
    3 tbsp powdered sugar for flour bowl
    1/3 tsp salt
    100g vegan butter, cold and cut into cubes
    1 tsp orange zest
    1 tsp vanilla
    FOR THE FILLING
    200g (7oz) poppy seeds
    180ml (3/4 cup) non dairy milk
    70g (1/2 cup) powdered sugar
    1 tsp lemon zest
    1 tsp vanilla
    Brush with: 2 tbsp non dairy milk + 1 tbsp date syrup
    *knead until not super sticky anymore, add a little more flour if needed
    Yields 2 rolls
    #2 Lebkuchen
    200g ground almonds (2 cups)
    100g finely chopped almonds (3/4 cup)
    200g ground hazelnuts (2 cups)
    1/4 tsp salt
    80g powdered sugar (1/2 cup + 1 tbsp)
    2 tsp gingerbread spice*
    1 packet of vanilla sugar (or 1 tsp vanilla)
    80ml chickpea water (1/3 cup)
    2-3 tbsp date syrup (or maple or rice syrup)
    A few almond aroma drops
    A few rum aroma drops
    2 tbsp candied chopped orange**
    2 tbsp candied chopped lemon**
    About 15 oblates wafers
    For the glaze:
    150g dark chocolate chips, melted (5.3oz)
    A pinch of cinnamon
    1-2 tsp vegan butter
    Yields around 15 ginger bread cookies
    *or 1/4 tsp each: cinnamon, ground ginger, cloves, cardamom plus a pinch of nutmeg
    ** sub w 1/2 tsp fresh lemon and orange zest
    Adapted my Mum’s recipe :)
    #3 Nanaimo Bars
    FOR THE BASE:
    1/3 cup (85g) vegan butter, diced into pieces
    1/4 cup (30 g) unsweetened cocoa powder
    (3.5oz) graham crackers or other vegan cookies of choice (90g)
    2/3 cup (70g) quick cooking oats OR sub w 70g more vegan cookie crumbs
    1/4 tsp salt
    1 1/2 tbsp flax seeds
    1 cup (80g) sweetened shredded coconut 80g
    3/4 cup (100g) almonds, finely chopped
    FOR THE FILLING:
    2/3 cup (150g) vegan butter, softened
    1 pack (37g or 1.3oz) vanilla custard powder
    1 1/2 cups - 2 cups (180g - 240g) powdered sugar, added 1/2 cup at a time
    4-5 tbsp vegan cream added 1 tbsp at a time
    FOR THE TOPPING:
    150g (5.3 oz) dark chocolate chips, melted
    1-2 tsp vegan butter / coconut oil
    Yields a 8 inch / 20 x 20 cm baking tin
    #4 Lussekatter
    180ml lukewarm non dairy milk (3/4 cup)
    1/2 teaspoon saffron threads
    50g sugar (1/4 cup)
    1 (7 grams or 1/4-ounce) packet active dry yeast
    415g all-purpose flour (3 1/2 cups or 14.6oz)*
    3/4 tsp salt
    1/2 tsp cardamom
    1 tsp vanilla or 1 pack vanilla sugar
    1/4 cup (4 tablespoons, 56g) vg butter, softened
    2 1/2 tbsp vegan sour cream (or thick yogurt)
    1 small handful of raisins (or choc chips)
    *would almost recommend weighing your ingredients when baking w a scale rather cups !
    Yields 12 - 14 buns
    #5 Aletria
    1 cup water (250ml)
    1 cup milk (250ml)
    1/2 cup vegan cream (125ml)
    1/2 tsp lemon zest
    2/3 tsp cinnamon OR 2 cinnamon sticks
    1 tsp vanilla
    1/4 tsp salt
    1/4 tsp turmeric, optional
    1/4 cup + 1 tsp (55g) sugar
    100g - 125g glass noodles / angel pasta (3.5 oz - 4.4 oz)
    4 tbsp of corn starch OR vanilla custard powder mixed into 60ml (1/4 cup) water
    (4 tbsp = a 40g packet of custard powder)
    1 handful raisins, optional
    Mix frequently all throughout !
    Yields a 20 x 20 cm (8 x 8 inch) baking tin

    Everything looks so good! As a swede and near professional lussekatt-eater, I have to say that there should be more saffron in them. The dough should be bright yellow. It also helps to boil the milk with the saffron the night before baking, that also brings out the most flavour (and makes the most out of your money…). Anyhow, very nice to see your take on something Swedish! 😁 xox

      we eat and bake them in Norway as well!! being a student I've found using tumeric is a good sub, taste still as good

    I grew up near Nanaimo, British Columbia (where Nanaimo bars were invented) and the authentic way to make the base is actually with shredded coconut not cookies!! Tones down the sweetness a lot and adds more texture.😊

      In Manitoba we don't put almonds in the base, usually walnuts, which have a more acidic taste to balance out the graham cracker, but if you couldn't find graham crackers I would suggest digestive biscuits, Biscoff are way too sweet and have the wrong flavor profile

    I didn't expect bejgli to make an appearance here haha :D I usually prefer the walnut version (although not a big fan of either walnut or poppy desserts or pastries). That and the poppy seed are the more traditional flavours, but others exist too. A neighbour brought over chestnut filled ones a couple years back, I really liked them. I should probably give them a try with this dough recipe, thanks for including bejgli in the video! :)))

    Thank you for letting me know that custard powder is accidentally vegan! I had no idea, this would have saved me so many failed attempts at vegan custard making over the years omg 😭❤ I just checked and the ones in my shops are vegan I'm so excited to use it!

    Hi Mina, loved seeing you make Aletria. But as a portuguese person, I suggest you try making Arroz Doce (Sweet Rice/Rice pudding). It's very similar to Aletria, but with rice. Arroz Doce is one of the main sweets we make for Christmas or any other festivity here in Portugal, it's a portuguese staple (and its better than aletria in my opinion). Most recipes call for eggs, but its optional (for coloring and what not), which makes it easy to veganize it, you only need rice, soy milk, cinnamon, lemon zest and any sugar of your choice. Hope you try it!

      where i'm from we call it "Arroz con leche", I'm not a big fan but I've made the recipe (veganized obviously) without the sugar or cinnamon, more like a savory dish, similar to oatmeal porridge but without the slime texture. And, oh boy! It's delicious!

      We don't eat arroz doce here in the north, aletria is for sure the queen of Christmas! But I never had a well made arroz doce either. Gotta try it one of these days.

      The thing is... aletria is much more unique than arroz doce. Rice pudding is basically everywhere you have rice and sugar. I'm glad Aletria was chosen

    I feel like everyone hates aletria here in Portugal because of the textura so I loved the appreciation😊 we also have a similar desert called arroz doce (sweet rice) which instead of pasta includes rice. It’s done basically the same way with same ingredients

    i'm so happy you did a portuguese recipe, i think our traditional treats are very easy to veganize. you did so well with aletria! i honestly just boil some water with cinnamon, sugar and lemon and throw the noodles!

    Heyyy Mina, loved this!!! In Brazil the Ultimate christmas eve dessert is pudim (a mixture of condensed milk, eggs, milk and caramel, something like the creme caramel French recipe). Also most familys love to do Pavê, with a biscuit base and some sweet cream with fruits, kinda of a English trifle

    A note, saffron buns are usually made with mandelmassa / sugared almost paste in them, it really enhances the taste

    OMG you made Lebkuchen! These have always been my favourite so thanks for including them (but the wafer is a must)! And poppy seed bejgli is so delicious! Aletria seems so strange to me, but perhaps it would be good...

    I was waiting until the end for which desert you would make for Portugal. I totally forgot about aletria! But I do recommend you try sonhos, some very fluffy bits of dough, covered in sugar. Or my favs, the fried pastries filled with sweet potato and spices - azevias! :)

    Thank you for doing aletria! It's one of my favorites. Another good and easy one is rabanadas. It's basically bread dipped in sweetened milk with cinnamon and lemon zest. Wich is later fried and covered with sugar. Amazing!!!!

    I wanted to suggest frustingo, from my region Marche in Italy, it is naturally vegan and the ingredients are basically spices and dried fruits cacao and coffee added to raisins scraps (used to make wine)

    We eat bejgli in Croatia as well, we call it makovnjača (mak means poppy seeds). I love this version! Also love the video and you could do a part 2 of last year´s video. :D

    The hungarian one is popular in Croatia as well, and the filling can be walnut, carob, poppy seed, even fruit jam or cottage cheese.

    as a Canadian I can say you're totally fine to make changes to the Nanaimo bars to suit your taste! There's dozens of different versions of Nanaimo bars out there, using peppermint, coffee flavouring, dried fruit, etc. So no worries there!

    10:20 The Lussekatter are as you said for st Lucy’s day and not for christmas.
    For christmas treats in scandinavia we have Klenät, Rosette and Ginger bread as good examples

    just wanted to say, you have to either get ground poppyseeds for the first recipe or grind them yourself :) i know in a lot of countries ground poppyseeds is not really a thing. if you're in the uk, you might find them in a polish shop :)

    I'd recommend trying the Nanaimo bars with bird custard powder for a more authentic version I think. though I think you'd have to order it online as it's only sold in canada...i think. love to see the canadian treat. Thanks ^_^

    The last recipe reminds me of Sevai (Indian vermicilli noodles). It is made into both a savory breakfast and a sweet dessert. I prefer it sweet with chopped nuts!

    Hi Mina! Do you think at some point you could make eastern european inspired dessert? Such as tumbochky, medovik, or cottage cheese pancakes? I grew up on these and haven’t had them in forever and unfortunately there aren’t many vegan eastern europeans that have veganised these recipes.     The dessert from Portugal looks so much like "shemai" which is a famous dessert here in Bangladesh where we use vermicelli. We heat our milk up with spices such as cinnamon, cardamom and add sugar or molasses(molasses based desserts are very popular here) and allow the milk to thicken up and then the vermicelli gets added into it. Since majority of the people over here are Muslims, we have this in Eid which is a religious celebratory day for us. So I guess you could call this a festive dessert as well!!!

    I love Lussekatter! I make them for my Swedish husband. Took them to my in-law’s for the holidays last year, and they fed them to the dogs. I will NOT be taking them Lussekatter ever again.

    Excellent video as always! I notice you use regular eating spoons for measuring rather than measuring spoons - is that typical in Germany?

      Yes it is. In german recipes you find some measuring in TL (that's a small spoon "Teelöffel" ) and EL (big spoon "Esslöffel"). 😊

    Laughing at you saying the Biscoff makes the Nanaimo bars insanely sweet! They're just as teeth-achingly sweet with graham crackers 🤣As a kid I used to love that sensation, but now I genuinely worry about the state of my teeth enamel... can't wait to try these recipes for my vegan brother!

      yeah try my oat version then, the base is not sweet at all, almost salty and if use really dark chocolate as well; that really balances out the sweetness of the filling :)

    Ten years with a Portuguese, lived and studied in the country, est and cook Portuguese food on the reg and all, but aletria is still the ONLY thing I find absolutely disgusting 😂 must be my Italian aversion to overcooked pasta 🤢 BUT, if anyone is interested in these flavours and doesn't like the idea of the pasta either, I highly recommend arroz doce instead!

    The quantity of liquid for the filling of the poppy seed cake is wrong, in my view. It's very liquid. I'll try to add some breadcrumbs. 🤔
    It's also important to grind the poppy seeds otherwise they are too rough in the mouth and throat.

    I don't know why that list had Nanaimo Bars as a "Christmas food" -- they are a dessert eaten year round and have nothing really 'Christmasy" about them. I associate them more with birthdays and office/school parties (an easy to share dessert as they are bars) than for Christmas, and we have plenty more traditionally Christmas desserts here than that.

      I disagree as it’s definitely a Christmas treat for us, that yes, people eat all year but especially during holidays.
      Name one better choice that is unique to Canada?😅 We eat a lot of snowballs or jello balls in Newfoundland too but that’s not as universal.

    soon we have the holiday "Hannucka" in Israel, the tradition of this holiday is cooking everuthing in oil. my favorite dish is Sufganiyot/ sfinj. evey year i cant wait to make it again!!
