Everything looks so good! As a swede and near professional lussekatt-eater, I have to say that there should be more saffron in them. The dough should be bright yellow. It also helps to boil the milk with the saffron the night before baking, that also brings out the most flavour (and makes the most out of your money…). I grew up near Nanaimo, British Columbia (where Nanaimo bars were invented) and the authentic way to make the base is actually with shredded coconut not cookies!! Tones down the sweetness a lot and adds more texture.😊
In Manitoba we don't put almonds in the base, usually walnuts, which have a more acidic taste to balance out the graham cracker, but if you couldn't find graham crackers I would suggest digestive biscuits, Biscoff are way too sweet and have the wrong flavor profile
I didn't expect bejgli to make an appearance here haha :D I usually prefer the walnut version (although not a big fan of either walnut or poppy desserts or pastries). That and the poppy seed are the more traditional flavours, but others exist too. A neighbour brought over chestnut filled ones a couple years back, I really liked them. I should probably give them a try with this dough recipe, thanks for including bejgli in the video! :)))

Hi Mina, loved seeing you make Aletria. But as a portuguese person, I suggest you try making Arroz Doce (Sweet Rice/Rice pudding). It's very similar to Aletria, but with rice. Arroz Doce is one of the main sweets we make for Christmas or any other festivity here in Portugal, it's a portuguese staple (and its better than aletria in my opinion). Most recipes call for eggs, but its optional (for coloring and what not), which makes it easy to veganize it, you only need rice, soy milk, cinnamon, lemon zest and any sugar of your choice. Hope you try it!
where i'm from we call it "Arroz con leche", I'm not a big fan but I've made the recipe (veganized obviously) without the sugar or cinnamon, more like a savory dish, similar to oatmeal porridge but without the slime texture. And, oh boy! It's delicious!

as a Canadian I can say you're totally fine to make changes to the Nanaimo bars to suit your taste! There's dozens of different versions of Nanaimo bars out there, using peppermint, coffee flavouring, dried fruit, etc. So no worries there!
I was waiting until the end for which desert you would make for Portugal. I totally forgot about aletria! But I do recommend you try sonhos, some very fluffy bits of dough, covered in sugar. Or my favs, the fried pastries filled with sweet potato and spices - azevias! :)
Heyyy Mina, loved this!!! In Brazil the Ultimate christmas eve dessert is pudim (a mixture of condensed milk, eggs, milk and caramel, something like the creme caramel French recipe). Also most familys love to do Pavê, with a biscuit base and some sweet cream with fruits, kinda of a English trifle

I wanted to suggest frustingo, from my region Marche in Italy, it is naturally vegan and the ingredients are basically spices and dried fruits cacao and coffee added to raisins scraps (used to make wine)
That’s so funny I do the same thing I just buy a box that I’m gingerbread cookie mix. Think it’s like Betty Crocker or some thing and instead of adding egg to it I just add like a fourth a cup of ground flaxseed egg, and I dip half and melted chocolate and they’re so good it’s my daughter’s favorite holiday treat
The last recipe reminds me of Sevai (Indian vermicilli noodles). It is made into both a savory breakfast and a sweet dessert. I prefer it sweet with chopped nuts!

just wanted to say, you have to either get ground poppyseeds for the first recipe or grind them yourself :) i know in a lot of countries ground poppyseeds is not really a thing. if you're in the uk, you might find them in a polish shop :)
I'd recommend trying the Nanaimo bars with bird custard powder for a more authentic version I think. though I think you'd have to order it online as it's only sold in canada...i think. love to see the canadian treat. Thanks ^_^
The dessert from Portugal looks so much like "shemai" which is a famous dessert here in Bangladesh where we use vermicelli. We heat our milk up with spices such as cinnamon, cardamom and add sugar or molasses(molasses based desserts are very popular here) and allow the milk to thicken up and then the vermicelli gets added into it. Since majority of the people over here are Muslims, we have this in Eid which is a religious celebratory day for us. So I guess you could call this a festive dessert as well!!!
I love Lussekatter! I make them for my Swedish husband. Took them to my in-law’s for the holidays last year, and they fed them to the dogs. I will NOT be taking them Lussekatter ever again.

The quantity of liquid for the filling of the poppy seed cake is wrong, in my view. It's very liquid. I'll try to add some breadcrumbs. 🤔 It's also important to grind the poppy seeds otherwise they are too rough in the mouth and throat.

we eat and bake them in Norway as well!! being a student I've found using tumeric is a good sub, taste still as good

Yes it is. In german recipes you find some measuring in TL (that's a small spoon "Teelöffel" ) and EL (big spoon "Esslöffel"). 😊

soon we have the holiday "Hannucka" in Israel, the tradition of this holiday is cooking everuthing in oil. my favorite dish is Sufganiyot/ sfinj. evey year i cant wait to make it again!!
