It's 7.30 pm on a Saturday evening here in England. I got home from the hospital an hour ago. Taken in last night. I have many medical problems but it is what it is. I now have an ear infection a chest infection and a sinus infection. My balance is off. So Miss Becky work your magic. My feet are up, I have a pot of tea, and all is well. I truly love coming to your channel. It's with young women like yourself that gives me hope that the future isn't so dire. THANK YOU. Those truffles you made I do something like those for Christmas gifts also but each batch I do one has rum added to it and then coated in vermicelli chocolate. I melt some caramels and add them to the inside and once set cover them in caramel crunch sprinkles. I also make Baileys ones.

An easy way to make rice crispy treats is to melt the butter in a bowl in the microwave and add the marshmallows , melt them in the microwave in 30 to 40 second intervals and stir, like you do with the chocolate. You can also just dip your hands in water to press the mixture into the pan. It works better than the pan spray. All your treats look delicious!
Metal clips you buy in a office supply store can be used to hold the parchment paper to the sides of the pan. If it’s going to go in the oven, they need to be removed before going into the oven. But if you’re going in the refrigerator like your fudge, they can stay clipped to the sides
Best invention ever! I even use them to make corners on silicone mats for the dehydrator instead of buying the expensive liners with edges on them. I use them to dehydrate my leftover whey from making yogurt which becomes an unflavored protein powder. I love not wasting food. Works perfectly! 🎉
I just started to use those clips for holding the paper in the tins. I thought I'd hit on an original 💡 idea. Guess not lol. I keep them on in the oven. No problem if they are all metal, they come out as they went in.

Another way to make sure parchments paper stays in place is to oil container or pot you are putting it in, this way you do not get a crinkled bottom on whatever is going into the container 😊
Another way to reduce crystalization is to put the lid on the pot for a moment and the steam that accumulates condenses and drips down the sides of the pot. Takes a couple of minutes and works well for me. Hope this helps someone.
No it wouldn't hurt them. They soften just a little and then you stick them in the center and then dip them. I make all kinds of bon bons and dip them that way. Then you can cover the small hole easier also. I have also used a little paraffin wax in my chocolate to make it shiny and it dries faster.

We just learned from our amish friend who's been making coconut bon bons for over 40 years how to dip them. She uses the same method but will flip them over when she sets it on the tray and uses the little drizzle from what's on the fork to make a super easy decorative swirl on top. She sells them so they have to be pretty. All your treats look delicious
Always use silicone brushes in cooking. The bristles can come out of others brushes and get in your food and Lodge in your intestines and cause life-threatening problems.

Becky I have a candy recipe that everyone loves even those that don’t like white Chocolate (like me). Melt 2 cups white chocolate in microwave. Add 1 cup broken up pretzels, 1 cup of rice crispy cereal, 1 cup captain crunch peanut butter crunch cereal, 1 cup peanuts. Mix together and spread on a baking sheet very thin. Set in refrigerator till set up and hard. Use a turner to break up into whatever size pieces you like. Store in airtight containers. I have been making this recipe for about 30 years and every year friends always ask for it. So so easy to make but it’s delicious. You want only a thin layer of white chocolate to coat the cereals and pretzels so don’t over measure the chocolate.

Becky since you're doing candy every year you might buy a reusable piping bag and tip set. ... It's reusable and MUCH easier to control for decorating. 😀
If you put a small amount of oil on the bottom of your baking pans, your parchment paper will stick and not move 😊 makes pouring mixture in so easy as the paper stays still

I hope you don't mind some input from a professional baker/decorator. You can avoid the dribbled chocolate on top of your finished candies by dipping the far side of the pan first. Keep the undipped ones off to the side so any chocolate that drips while you are working falls on the empty space instead of building up on the finished treats. It's a bit hard to put into words, I hope you can follow my thought. For the cookie butter hearts you can optimize the # of hearts you get by flipping the cutter point up-point down, so the candies share a cut side. The downside to this method is less for the cook to snack on. I was in Portland last weekend. I really wanted to see if you were available for a meet-up, but I couldn't find any way to contact you privately.

Hi Becky! Just wanted to give a small tip on the oreo truffles (or anything else you are dipping in chocolate). After you dip the truffle, place it on the furthest edge of the pan instead of closest to you. That way you don't drip chocolate on top of what's already done. Thank you for all your videos!

Hey Becky, great content again, so calm and enjoyable, quick tip...if you lightly oil both sides of the parchment it will adhere to the 9x13 pan and not move around when adding ingredients to it, when cooked it will just come away as normal ❤

I have used freeze dried fruits in American buttercream. It give great color as well as taste. When I use raspberries, I do strain out the seeds. I’ve used pineapple on white cake, blueberry on lemon cake and raspberry on chocolate cake. I am allergic to strawberries so I don’t use them. Your candies look wonderful and your neighbors are super lucky!
Those all sound wonderful (although I'm not a fan of raspberries). I bet cherry would be delicious on chocolate cake... maybe a cherry 🍒 filling and chocolate 🍫 frosting.😋

For truffles I find it easier to roll them in my hands. I put on gloves, put some chocolate in my hand and roll them. Put them aside and repeat once more to have a plenty thick layer. Love that method cuz the chocolate temperature doesn't matter that much and I don't need as much as with dipping. Love those recipes and inspirations, thx a lot

I need to be your friend & move back home to Vancouver so I can get some of these delicious goodies. We are totally enjoying the honey mustard chicken marinade I use it to make my husband sandwiches & make the marinade separately & use as a dressing for salad and sauce for over his sandwiches or for dipping veggies in. I am so happy that I found & followed you.
My mom was a fudge expert. She would stir constantly, but only the bottom, not sides. Then pour it out into prepared pan again, only scraping the bottom. Then scrape all the side's onto a separate plate. That was the tasting plate. That was if there were any sugar crystals on the side's, it was confined to the plate and not the main pan. Never had and turn to sugar unless it was frozen for months.

I used the freeze dried strawberry idea to flavor basic white frosting. It really elevated my yellow cupcakes that I put a teaspoon of a strawberry rhubarb jam in the center.
I love your channel. You inspire me to get in the kitchen and cook. Lastweek I made pizza dough for freezer and my told me it was national pizza day. So I made some pizza using parchment paper instead of corn meal because of the mess and it sets off the smoke alarm the next day. what a game changer! I didn't know that it would help me stretch the dough because it holds it in place!!!! I ended making another on super bowl (2 days later) my husband loved it so much. Thanks for all you do!

Wonderful treats, my mouth was watering. I am going to try to make some of them, but probably not for Valentine's Day. Our Anniversary is next month so I will make them closer to our 18th Anniversary. I am extremely Blessed to be married to my amazing husband. According to my daughter (his step) he is the best man I have ever had in my life. She introduces him as her Dad. Her biological father is alive but he unfortunately decided she wasn't his daughter when she turned 40. I feel sorry for him because I know this is based on mental illness. I totally love all of your videos and I am excited to see your garden videos. We are going to do a small raised garden, probably only 4. It's just my husband and I. We are both older, I am71 and he just turned 69. Sorry being very chatty.

Love these recipes, when you were piping the chocolate on the pretzels the bag kept touching the ones you had already done, you would find it easier to start at the top of the baking tray and then work your way down
I've made the oreo truffles before. There always a hit. One year for Christmas I got the mint oreo and used green chocolate to coat them in and they were delicious.

I love using freeze dried blueberry powder for baking. Tip. It freeze dries easier if you blend the fresh berries before freeze drying because the blueberry skin is thick

She uses the same method but will flip them over when she sets it on the tray and uses the little drizzle from what's on the fork to make a super easy decorative swirl on top. Always use silicone brushes in cooking. The bristles can come out of others brushes and get in your food and Lodge in your intestines and cause life-threatening problems.

Becky I have a candy recipe that everyone loves even those that don’t like white Chocolate (like me). Melt 2 cups white chocolate in microwave. Add 1 cup broken up pretzels, 1 cup of rice crispy cereal, 1 cup captain crunch peanut butter crunch cereal, 1 cup peanuts. Mix together and spread on a baking sheet very thin. Set in refrigerator till set up and hard. Use a turner to break up into whatever size pieces you like. Store in airtight containers. I have been making this recipe for about 30 years and every year friends always ask for it. So so easy to make but it’s delicious. You want only a thin layer of white chocolate to coat the cereals and pretzels so don’t over measure the chocolate.

Becky since you're doing candy every year you might buy a reusable piping bag and tip set. ... It's reusable and MUCH easier to control for decorating. 😀
For health reasons I no longer eat sugar, but in my fantasy, that fudge has salted macadamia nuts in it 😋
If you put a small amount of oil on the bottom of your baking pans, your parchment paper will stick and not move 😊 makes pouring mixture in so easy as the paper stays still

This reminds me of my friend and coworker who makes about 3000 ❤ cut out iced cookies every year and delivers to friends and family. It usually takes her a few days to make them but she loves to do it every year. I always think of her each year around Valentine’s Day working hard in the kitchen. She actually brought me some to work Monday to enjoy.

I hope you don't mind some input from a professional baker/decorator.
You can avoid the dribbled chocolate on top of your finished candies by dipping the far side of the pan first. Keep the undipped ones off to the side so any chocolate that drips while you are working falls on the empty space instead of building up on the finished treats. It's a bit hard to put into words, I hope you can follow my thought.
For the cookie butter hearts you can optimize the # of hearts you get by flipping the cutter point up-point down, so the candies share a cut side. The downside to this method is less for the cook to snack on.

You could make red, white and blue rice crispy treats for 4th of July. For the blue layer, you could use freeze dried blueberries. All the rents look delicious.
A tip : when scraping out a blender it easier to twist the bottom off and get it out that end

Hi Becky! Just wanted to give a small tip on the oreo truffles (or anything else you are dipping in chocolate). After you dip the truffle, place it on the furthest edge of the pan instead of closest to you. That way you don't drip chocolate on top of what's already done. Thank you for all your videos!

Hey Becky, great content again, so calm and enjoyable, quick tip...if you lightly oil both sides of the parchment it will adhere to the 9x13 pan and not move around when adding ingredients to it, when cooked it will just come away as normal ❤

I have used freeze dried fruits in American buttercream. It give great color as well as taste. When I use raspberries, I do strain out the seeds. I’ve used pineapple on white cake, blueberry on lemon cake and raspberry on chocolate cake. I am allergic to strawberries so I don’t use them. Your candies look wonderful and your neighbors are super lucky!
Those all sound wonderful (although I'm not a fan of raspberries). I bet cherry would be delicious on chocolate cake... maybe a cherry 🍒 filling and chocolate 🍫 frosting.😋

For truffles I find it easier to roll them in my hands. I put on gloves, put some chocolate in my hand and roll them. Put them aside and repeat once more to have a plenty thick layer. Love that method cuz the chocolate temperature doesn't matter that much and I don't need as much as with dipping.

I need to be your friend & move back home to Vancouver so I can get some of these delicious goodies. We are totally enjoying the honey mustard chicken marinade I use it to make my husband sandwiches & make the marinade separately & use as a dressing for salad and sauce for over his sandwiches or for dipping veggies in. I am so happy that I found & followed you.
My mom was a fudge expert. She would stir constantly, but only the bottom, not sides. Then pour it out into prepared pan again, only scraping the bottom. Then scrape all the side's onto a separate plate. That was the tasting plate. That was if there were any sugar crystals on the side's, it was confined to the plate and not the main pan. Never had and turn to sugar unless it was frozen for months.

I used the freeze dried strawberry idea to flavor basic white frosting. It really elevated my yellow cupcakes that I put a teaspoon of a strawberry rhubarb jam in the center.

I love your channel. You inspire me to get in the kitchen and cook. Lastweek I made pizza dough for freezer and my told me it was national pizza day. So I made some pizza using parchment paper instead of corn meal because of the mess and it sets off the smoke alarm the next day. what a game changer! I didn't know that it would help me stretch the dough because it holds it in place!!!! I ended making another on super bowl (2 days later) my husband loved it so much. Thanks for all you do!

Our Anniversary is next month so I will make them closer to our 18th Anniversary. I am extremely Blessed to be married to my amazing husband. According to my daughter (his step) he is the best man I have ever had in my life. She introduces him as her Dad. Her biological father is alive but he unfortunately decided she wasn't his daughter when she turned 40. I feel sorry for him because I know this is based on mental illness.

I am chuckling because I have been making the Oreo truffles for years but called them "Reindeer Poop". LOL I took them to a clinic full of physical therapists and the receptionist hid them for herself. LOL I do stick them in the freezer before I dip then. Love these recipes, when you were piping the chocolate on the pretzels the bag kept touching the ones you had already done, you would find it easier to start at the top of the baking tray and then work your way down

I've made the oreo truffles before. There always a hit. One year for Christmas I got the mint oreo and used green chocolate to coat them in and they were delicious.
Such a good idea using the freeze dryed strawberries to color your goodies.
