    I had all my cookies planned out…… ho humbies, now I want to add two of these recipes! lol. Becky, you have not only inspired me to do canning but I have upped my game in baking and cooking. Meals in a jar, frozen cookies in freezer, I even planted hordes of garlic into my flower beds. Age 76 isn’t so old anymore……. Thank you

      Debbie Lavigne here ❤. I will be 70 in March. I too have changed up my kitchen shenanigans. I have always thought about canning but working 2 jobs and balancing my life with my husband and 3 very active kids left no time. My late husband and I pretty much cooked the tried and true recipes. This year, I planted some herbs and vegetables I've never grown before. I also learned to waterbath can and pressure can. It definitely makes you feel young again.

      I thought the same thing when she apologized for tasting the cookie batter. I was like what, doesn't everybody do that? 😂 One of my fondest memories of my mom baking was the anticipation of waiting for her to hand me a beater to lick. Did that with my kids too and now my grandkids ❤

    just a quick note about cracking eggs directly into your batter. I once had ordered a banana bread sandwich (2 slices of banana bread with a cream cheese frosting in the middle...delicious!) BUT!!! I it was ruined when I bit into a spot where the shell was in the banana bread portion...absolutely ruined it for me. I couldn't eat another bite. when you crack your eggs directly into your batter with the machine running you take the risk of shells falling in and there's no way you can retrieve all of them. love watching your videos! You are so authentic and realistic! we all make mistakes and I love that you're not afraid to share them with us. Thank you for being you and for sharing all your love of homesteading with all of us.

    My mother always taught me to pre measure my ingredients. If you pre measure your ingredients instead of doing them on the fly, you have time to double check yourself and you don’t ruin a whole batch by adding too much or omitting something critical. You also know if you have all the ingredients you will need and you don’t forget to add something. It takes pre-planning but has saved me on many occasions!
    If a person doesn’t have time to do it right the first time, when will you have time to do it over?

    • @Sanity_Faire
      @Sanity_Faire ปีที่แล้ว +9

      I took an online class recently with a French pastry chef….she insists we must weigh our ingredients and hers were metric, naturally. I ordered a scale in case I want to bake appropriately in the future because trying to convert a recipe from metric is math and, EW!

    • @maryjanew20
      @maryjanew20 ปีที่แล้ว +16

      I agree that it is very useful to measure out all your ingredients before you start. What I like to do is make a bunch of different dough recipes in one day, refrigerate them, then bake on another day. I so admire Becky’s tremendous ambition but sometimes trying to do too much at once can lead to mistakes.

    • @lindameyer3005
      @lindameyer3005 ปีที่แล้ว +9

      Another strategy is to use a highlighter over every second line of the recipe ingredients.

    • @titasmom678
      @titasmom678 ปีที่แล้ว +19

      Just a friendly suggestion. Take heed and pre measure your ingredients when baking. Not only are you dealing with dyslexia, talking while you measure ingredients, but you are making a lot of different recipes and new recipes to boot. I used to make and sell cookies for the holidays and always found pre measuring my dry ingredients saved me a lot of heartache and made my days go much smoother. The other option is make less recipes so you don't have to rush to get your content out. Have an enjoyable holiday season.

    I have made this same mistake more times than I can count. One tip I learned is to use a sticky note to hide the next step or ingredient and move it down as you work through the recipe. This will keep your eyes focused on one line.
    So glad you didn’t beat yourself up about it. Live and learn. That’s all we can do.

    A word to the wise: Move the scale out from under your bowl when you are finished weighing. You will ruin its calibration if you continually add pressure to the bowl (i.e., using it as a platform for beating or stirring ingredients, etc)
    BTW, Google for charts to convert cups to grams... very handy tool!

      @renaerolley5670 Gentle comment: I've found that different flour types have different weights. I reference the King Arthur Flour "Ingredient Weight Chart" as my guide, which indicates that an unsieved cup of AP flour is 120 grams.

    Also, a quick and easy no-bake cookie is melting Andes mints and dipping Ritz crackers. They taste very similar to the Girl Scout mints. Just add festive sprinkles 😊
    And…Andes makes a chip just like the chocolate and butterscotch. They’re so easy to use😊

This is so comforting as we all have been there and you show us it doesn't have to be stressful. That's a ton of cookie recipes - so hats off to you to taking all of this on in one day. This is exactly the type of Christmas cookie baking video I hoped to find! I’m also very dyslexic and I’ve done the same or similar more than I’d like to admit haha. I appreciate you leaving that part in the video because we’re all human. 🙂

    The recipe with the Andes mints that you linked to says, to melt the butter, chocolate chips and Andes mints, allow to cool, before adding to the whipped sugar and eggs. It also says to FOLD in the flour being sure not to over mix.

    Thanks for sharing part of your lives with others throughout our world via You Tube and Social Media. You are a beautiful family and very inspiring and entertaining! Thank you! I found You Tube and your wonderful channel a few years ago. It is like chatting with a great, precious friend. Thank you! What you share has helped me over come my anxiety. I love watching your channel when I might be feeling a little overwhelmed from having anxiety about different things, needing some mama time, doing household chores, cooking for our precious family of four and needing recipe and meal inspiration and or just wanting to relax a little. I look forward to seeing what God has for your channel in 2024. Much love, prayers and God Bless for CHRISTmas and the New Year from our family to yours from Australia . xxx

    A couple years ago I started baking a different kind of cookie with my kiddos every week of December, and they love it. It's challenging to bake with kids, but they are learning and starting to get more and more helpful. I think their favorite part though; we pick the two best looking cookies of every batch, and put them in a bag in the freezer. Those cookies come out on Christmas Eve for Santa! 😉 Obviously it's way more cookies than Santa needs, but they love guessing which ones he will eat, and they enjoy having the leftovers while we open gifts.

    Your cookie-palooza is incredible. I love what you assemble for your Xmas recipe line up. By the way, melted butter that is not hot means to melt it completely, and then let it cool for 10 minutes, and not par-melted to be warm.

    Be careful! We have lots of sprinkles without articial colours in the UK, but they tend not to be heat stable, sometimes not the dye OR the sprinkle! So fine if you're using to decorate, but for the cookies you cover in sprinkles and then back, they might a) melt and b) lose their colour! I always save my small stash of American sprinkles for those :)

      That explains why they don't do well here then! 😂 I don't often use sprinkles ,but the few times I have here in the uk, they have been oddly disappointing with the color loss. I never noticed it they were all natural colors, but reading this leads me assume they have been.

    Becky, dont fret about the cookie fails, this is how we learn. I just made my homemade chocolate covered cherries and the expensive chocolate seized on me and ruined the batch. Oh well, i will learn from this mistake. I enjoy your cooking and I know Josh's coworkers appreciated your efforts! This is going to be good training for when Baby Acre is ready to bake and decorate cookies with his mom.

    Its never a mistake, its an improvement, so you meed milk with them only makes them better or vanilla ice cream between the two...plus the colored sugar, put a couple of drops of food color in a cup and shake, you can always add more color if not dark enough ❤❤❤

    I usually pre measure all my ingredients, especially if I'm doing multiple baking recipes to avoid a mixup. I also put the double or triple amount on the recipes so that if I have to refer back to the recipes, I dont have to do math on the fly.

    Hi Becky,
    Took me awhile to learn, but mise en place for baking is a must for me. Too many times have I missed reading a recipe properly! It's especially helpful to me when I'm batch baking. I've been doing what my family calls "cookie sunday" (all day baking session for Christmas) for years. The mise en place really helps. Merry Christmas (or however you celebrate the season)! Cheers 🎉
