    Thank you, your tamales look delicious. We cook a big pot of tamales for only 45 mins to an hour and they are done beautiful and delicious. Also, if you ever want to test and see if your tamale has the taste you want, all you have to do is put a tamale in a plastic bag and put it in the microwave for 1 or 2 minutes, depending on the size and you get a perfect cooked tamale, just let it cool for about 30 to 45 seconds before you taste.

    This is the best recipe for masa, made it this year and I won’t use any other ever again. I appreciate that you gave instructions for using a hand mixer as well, and specific times. Even my mom, who’s in her 80s, liked it because it was so smooth and easy to spread. Thanks Claudia for sharing 😋

    Omg ty so much! We've been trying for days to pass the float test but now we've learned that the masa was too thick and dry. I searched everywhere and even followed the recipe on the tamal package and it was also too dense. It seems like everyone on the internet likes tortilla style masa because after watching this video the difference is night and day in the consistency. I thought it was close and kept beating for hours but after I saw this I added about a 1/3 cup of water mixed for 10 mins and bam passed the float test! Ty ty ty ty!!! My fiance and I only started this project because I live in a town full of immigrants selling tamales in the parking lot for $2 a piece and they are all so dense and dry but now we can make our own and they will be moist and yummy thanks to you!

    I did it Claudia!!!! I got the masa right with my stand mixer and used your method to spread the masa like butter. It went faster than my usual attempts and my family loves them!!! Seriously delicious. You would be so proud to know how much you are helping me with Mexican style cooking!!!

    Tried this out last night for Xmas Eve, I modified with hatch green chile instead of red - I added 1 1/2 cup of chile too - they really came out good for a first timer!! The masa was super easy to spread - thanks so much for this wonder step by step tutorial!

      Another thing I just made my masa and it actually floated this time my masa has never floated!!! I mixed 20 mins and added about 1/2 more of warm water 🤗

    I made my first batch of tamales this weekend thanks to your videos. My masa never passed the floating test, however I got a consistency I was happy with and every single person who tried my tamales has now labeled me as the tamale guy because of how tasty they were. None of them know that my masa didn't pass the floating test so shhhh :). I made the red chili sauce ones all by myself and they came out great. It's the masa I need to work on so thank you for this video!
    Hopefully you can make Chile con Carne y Tortillas (from scratch) some day! Thanks for your videos!

    Thank you. I used the recipe on the bag for a smaller quantity and instead of melting the shortening (I have to use this because some of my family members don't eat lard for religious reasons) like it says on the bag, I whipped it like you did with the lard. Then I added more water because that ratio of liquid to masa is way off. I needed at least 3/4 cup more of water. I have yet to steam mine but I have confidence that they will steam okay.

    Ok...I'm back. Last year was my first time making these and it didn't come out well. Very flavorful but I put too much broth in it! Yesterday...I made chicken and ground beef, and just masa tamales and it came out very well. I used a hand mixer and I thought I wasn't going to finish! 😂 I didn't know I was to drop a big enough masa in the cold water. I kept putting small pieces. We'll almost 2 hours later! Finally done!
    Now...that sauce is Delicious! I saved some, I said I can just put that on anything! I put them in the pressure cooker! And...doing this as one person...I started at 12 p.m. and ended after 2 am. So, I am Tired! 😂 Thank you for your videos! The food is great!❤

    In the past my tamales were way too thick so I watched your video for tips/tricks on making perfect tamales and OMG they came out amazing I made turkey mole tamales yesterday for the feast today. I cooked my turkey in an instapot for a little over an hour could have done a little less time but I compensated for the moisture loss with the mole sauce and a can of diced tomatos as well as mashed in the onions and juices from the pot to add moisture and they came out amazing!

    This was super helpful. My biggest complaint with Tamales is that the Masa is so thick with very little filling. Your's look just perfect! I will give your method a try!

      When you make your own tamales you can decide how much filling you want to add. When buying someone's tamales they try to make as many as they can, thus less filling. More cost effective for them.

    OK, so I've made tamales before in my life, but I always used the prepared masa. This time I followed your recipe ingredients to the T. Exact brand and everything g. Could not get the dough to float, even added more liquid as you stated, but no luck. Made them anyway. They are steaming right now. Hope for the best.
