    My family loves tamales. Every year they promise they're going to help make them and every year it's 2am on Christmas Eve and I'm by myself in the kitchen making tamales. I'm going to have to try this!

    Where I grew up, in AZ, we used to make "Tamale Pie". Basically what she made, but in a glass baking pan. It was so easy and yummy

      @@monicarichards3439 yes, we did. I don't remember the temp though. 😳🤔. I would suggest using an air fryer if you have one. Maybe around 375-400. Same temp in a regular oven. Take out and add and melt cheese on the top at the end. Also great with chili put on top

      Bundt pans are nice, because they just bake more evenly, no raw center. Just about any recipe that you make in a square pan will do well in a bundt pan.

      I did them as masa-filling-masa layers in a regular casserole, and baked it until the masa was firm. It was great, although not quite the same as steamed tamales because the top was browned a little. You could probably lay corn husks or banana leaves on top to keep it moist if you preferred a soft, steamed top.

      @@beberivera7011 so I’m an old white guy but I married into a Puerto Rican family 32 years ago and discovered a love for pasteles and after retiring a few years back I discovered a passion for cooking but I won’t attempt to make pasteles because that’s my wife and mother in law’s thing and I don’t want to offend them lol but I’m definitely going to try this recipe.

    Whooeee! I made this yesterday and it was a smash success! Thank you for this, what a great meal. It was so scary lifting the bundt pan off at the very end, I was worried it would stick and break apart, but it was perfect! Deliciously spicy and flavorful. I will make this frequently!

    We used to make tamales as a family. Family picked the corn, ground the corn, cooked the meat, everything. We spent days at Nana’s house. This looks so good. I gotta try it.

    Thank you so much! We had never thought of making tamales this way. I made a 1/4 recipe of the masa recipe and then built them in ramekins. Finally, we both got what we want (him red chili pork, me green chili cheese chicken). They worked out great! We will keep this as a regular recipe in our cookbook!

    I've made Mexican tamales and Guatemalan tamales and now I will make these. I like my tamales spicey. This looks so much easier and not as messy with no wrappers to deal with. Awesome.

    So I made it today!!!! It was a test run before our Christmas party we have every Christmas Eve. I made it with your red pork tamale recipe for the filling and substituted 1 cup of the chile sauce for one of the cups of water to season the masa. FLAVOR WAS ON POINT!!! my kids said it was their favorite meal I made them so far. My one problem was I think there was too much moisture in the meat and masa so I guess it needed to cook longer. It presented well once I took the pan off, but "melted" after a couple of minutes. Parts of the masa were fully cooked, but not all. I will DEFINITELY be making this again. Hopefully next time it stays standing tall after cutting into like yours. ❤️

    I have done something similar, the difference was that I made it in a 9 x 13 baking dish and baked it in the oven until the masa was set. It came out awesome.

      @@joyell222 shoot i am not sure i remember but as i recall … covered with foil, 350 until done , start checking after 45 minutes, depending on you masa moisture it can take a while

      @@joyell222 nope, just foil but if you have the husks it might be a good idea to use them, be sure to soak them really well. But I did not use them and it came out great. Be mindful of how thick you make the masa crust because it does expand, mine was a little on the thick side the first time I made it but it was still great.

    I was thinking I might try this, but I think I’m going to line the bottom of Bundt pan with the corn husks, as well as putting them on top. I enjoy the flavor the corn husks give to the masa. I’ll let you know how it turns out!😊

      My grandma made something she called Scrabble, her name I’m sure.
      I added corn husks and it was so good!
      Scrabble- tamale masa prepared as normal, then line masa into baking dish, add filling in a layer, cover with the rest of the masa. Tamale casserole maybe?
      She said it was what they prepared for a quick meal in the coal mining housing

      @@agapitacordova3850 Agapita..my mother made something similar to yours but she called it a Tamale Pie because she started making hers in a pie pan and then later into a oblong pyrex baking dish, we all wanted more and a pie size tamal pan wouldn't be enough,it would always come out so delicious that we wanted more than a piece of pie. ;-) Happy Holidays and may the Lord bless you.

    Okurrr literally last night my mom looked at me & said "hay que hacer tamales" & i was like ok.. cos 1, we're trying to start keto LOL & 2, she's never made tamales, I've helped my grandma assemble them but never seen my mom help & 3, we live on opposite ends of the country from my grandma after relying on her to cook for our family for years so tamales 🫔 are just out of reach!
    But this!! This is an excellent start & I might just surprise my Mom one evening where she didn't even have to help LOL

      @buttlesschap yes it fit over a big pot. I didn't have husk, so I used wet paper towels. Cover with foil. Then towels and cover with pan lid. Steam for 50 minutes. I'm going to make another for Christmas, but want the husk.

    What a fantastic idea! This way, you can still use your own families' filling recipe, so it will still have that, "Grandmother made it" flavor, without being in the kitchen (probably more often than not) alone, in the wee hours of the night, trying to wrap all the tamales in preparation for the next day cooking!

My family loves the tradition of making tamales for Christmas but my mom (and not to mention abuela) are getting too old and tired so the job is passed to me but I'm going to be in the middle of a big move back home from accross the country right at christmas time.     This is such a great idea! I’m looking to create a hybrid Cuban tamale meets Venezuelan hallaca and last year I tried making them in small individual cocottes - which I loved and thought so much easier than husks - but it is cumbersome. This year I’m trying THIS. Thank you!!!
