I'm looking for freezer meals for baby on the way. This one looks like it would be great, and I could totally sub the meat for beans (vegetarians here). :) Thanks for sharing it!
I've seen recipes for beans & rice in it, too. I wish I had more vegetarian-friendly freezer ideas for you but, sadly, most of our freezer meals center around meat. If you like veggie enchiladas or burritos, those work well in the freezer. I have a video about our stir-fry kits, if you like stir-fry. It includes a sauce we like.
Oh no worries! We have so many food allergies in our family, I can very rarely use a recipe as it is. I mostly like to use them as idea starters and then make lots of substitutions for my family. I had just never thought of taquitos before, and I struggle with knowing methods for freezing meals, so this is super helpful. :) I want to do enchiladas too . . . those are on my list. :)
For enchiladas, I don't put sauce on them. I roll them up & freeze them the same way I do the taquitos. But I will make enchilada sauce & freeze it with the enchiladas so they are all ready to go. To cook from frozen, I generally only need 5-10 more minutes.
