Having found mould, several times over the years, in bought home made jam ,I now believe the American canning method of boiling the finished jars is way safer . I do prefer the cheap one piece jam lids with reusable jam jars but wonder if they will withstand a boil ? What do you think?

Just an fyi, if you are doing a bigger batch of strawberries or if many are very ripe, after adding your pectin and sugars, you will need it to cook longer than stated. I had enough for 11 small jars, and it took a solid hour to cook down to the state I needed. As long as you do not pet it burn on the bottom is it okay.

i dont put pectin in my jam. i use sugar and lemon juice and that will help the jam set.
its easy with strawberries ! i let mine cook down to 220 degrees and its always perfect jam!
