    Just finished making this for our Fourth Of July celebration later today. The only thing I changed was using 1/4 c of sugar instead of 1/2 c. It is unbelievably delicious! The best potato salad I've ever made.

    Ingredients were weird but decided to give it a go. It tasted great the first time around, just substituted celery with garlic chives. Now, I am doing it with celery! Thanks! My wife who didn't like potato salad now asks me to make 'em!

    Anyone shying away from this recipe due to sugar, evaporated milk and corn starch is missing the delight of a lifetime as far as potato salad goes! I thought I knew everything there was to know about making great potato salad since I inherited my great grandmother's recipe and have spent years tweaking it to perfection. But, compared to this delicious concoction, I feel like an amateur. This will be my potato salad recipe from now on. Thank you so much for posting this! Everyone I've shared it with LOVES it!

    I find it hysterical and albeit ignorant that usually those making negative comments, have never ever made or tried the recipe and it's not just this one. You can't say, "too salty, too, sweet, yuck or really any valid comment until you have prepared and tasted the recipe for yourself. Period. Usually what we say we would never eat ends up being wonderful once we actually try it. It's not rocket science. I'm trying recipe now.

      I agree wholeheartedly with your comment! I dislike reviews that say "5 stars- looks good!" because they haven't tried it. But the "0 stars- looks gross" kind are even more annoying. Make the recipe if you're going to rate it! And don't complain- nobody's forcing you to make it or eat it! :)

    I saw this about 3 years ago, a d tried it, and it was so good, then I forgot about it, until when I had thanksgiving dinner last week, and I wanted to make it, but didn't remember the the full recipe,and was looking for it and couldn't find it, now today I remember again, and said let me go check another time, and I found it, thank you for this, it was delicious 🤗

    I made this potato salad this morning and it is chilling in the fridge for my son's after school potluck. This was so simple to make, and I've never made potato salad before, I have to say, it was delicious, the sauce is sooo creamy, won't be buying store bought anymore, when it's soooo easy to make 😋

    I love trying different potato-salad recipes. With a million views, and people who actually made it saying it's a 10, I will give it a go. The Hollandaise sauce is a twist I never thought of. It's so tempting to sub the mayo for Greek yogurt; but, I'll make it to recipe just to see if it's my new fave.

    Thank you for your question. We'd recommend trying a few things - use 1/4 cup of vinegar instead of 1/2 and try a mild vinegar like champagne vinegar. Enjoy!

    I made this salad and It was too sweet. I'd probably leave out the sugar all together next time and go for a more mustardy/salty flavor.

      Even with reduced sugar it was sweet. I'd say a couple tablespoons is enough.

    Thanks for your question, Tawar Sardar. You may substitute natural milk (you mean regular whole milk with 3% butterfat, right?) for the evaporated milk. It won't have quite the same rich taste as evaporated milk, but it will be fine. Enjoy the salad!

    Today I make this recipe, like everyone else, first thought like it’s weird to put the sugar and corn starch on potatoes salad, but then..at the end ..omg .. it’s BOM 💥 💥 taste it’s sooo delicious!! Whole family luv it !!💕

    I've never seen/heard of anyone making potato salad this way; milk, butter, raw eggs, sugar? But, rather than criticize, I think I may just try it. I do like a bit of sweetness though so I'd substitute the sugar with a little sweet relish. Someone mentioned that sugar "does not belong in potato salad". But that's what a RECIPE is...everyone has their own version, so what "belongs" in it is what you like. There's no "law" to say what goes in and what doesn't.

    I have been making potato salad for 35 years, and I thought mine was hard to beat, and everyone loved it. After trying this, I will never go back to my old way. While it's on the order of the flavor of mine, comparing the two, mine was a 9, while this is a 10! This is just perfection to me. THANK YOU for posting this!
    I have even used this method now for making macaroni salad. I had to add more milk because I didn't have enough elbows cooked up. I will also be trying it in my coleslaw. I may have to tweak a bit more for either of those things, but I will figure it out :D

      OhioAngel How can you rate a potato salad a 10 when it has more egg than potato? To me that is worth at least a three point deduction. I like egg in my potato salad, I do not like potato in my egg salad though.

      I rate it a 10 for the flavor. I don't usually add any eggs to any potato salad I make, so I don't to this one either. And it's not because I don't like them, I just think potato salad is rich enough without them.
      But I'm mature enough to realize that just because a recipe CALLS for something, doesn't mean you have to add it, or as much.
      I made this for the last holiday, and several people who were attending like eggs, so I put 4 eggs in a double batch.
      With the eggs, without the eggs, this is great potato salad. I also add more mustard than this calls for, but that's because that's how we like it. I'm not going to deduct points because it doesn't call for as much as I like personally. Same with the eggs--just because I don't need them in mine to be happy, doesn't mean I'm going to deduct points because it calls for them, or more than I think it should have. Someone else may LOVE that many.
      That's the fun and the art of cooking!

      OhioAngel Well, you just mentioned a huge pet peeve of mine. Rating a dish based on a recipe you didn't use. If you would have made it per the directions would you rate it a ten? I'm guessing the answer is no.

      bkpickell I have made this dish with every ingredient called for, (one ingredient a little more, and one ingredient a little less) and I would still rate it a ten without either of those slight changes, as the basic flavor remains the same.
      What is a rating anyway--other than one person's opinion? I could make it EXACTLY as called for, rate it very high (or low) and someone with a different palate would still very likely disagree. Take Karon Last on here for example--she already rated it "disgusting" and she didn't even bother to MAKE it.
      I rate them how I see fit--if you don't like it, I guess that's your problem, not mine. I actually have enough else going on in my life, than to worry about, or be upset over something so minor as to how someone rates a recipe. In fact, that's laughable.
      So grow up, or get a life (or both) and worry about grown up, ACTUAL problems.

    I’ve never used a cooked dressing for potato salad, but this was pretty good. I reduced the sugar to a 1/4 cup, and used a double boiler method to cook the dressing. A couple of folks who don’t like potato salad because of all the mayo, as well as others, really did like this. ~ It’s not the potato salad I grew up on, but it’s a good potato salad.

    we came from Canada and it's customary to put maple syrup on baked beans, not barbecued, but old fashioned baked beans with salt pork. The maple sweet flavor adds another amazing dimension to baked beans.

    using a cooked dressing is very Southern old school-- like before mayonnaise became widely available, I use cooked dressings for potato salad, chicken salad, even cole slaw. If you have family members who do not like mayo you can use this cooked dressing as a substitute. If you ever get to Richmond VA stop by Sally Bell's Kitchen on Broad Street to taste the absolutely best potato salad ever.

    I first made this years back when i lived in the Middle east, My wife has asked me to make Xmas lunch with our Boiled shrimp. A real Australian Summer Xmas lunch... i cant wait to make this again, may have loved the tast... it is all in the sauce... for sure

    Oh, I wanted to tell you, I used this recipe every year for Thanksgiving. And the only adjustment I make is for the topping, many may opt to use paprika, but I use Cayenne pepper. It's the same color, but man, oh man, does that cayenne pepper add a PUNCH! It makes the best potato salad in the world even better. Thank you for this awesome recipe!

      The sugar, the butter, the milk and everything else was just way too much. No wonder people give it rave reviews - there's so much in it, it better taste good. I just rather do without all those things.

    People saying that sugar doesn't belong in this recipe REALLY??
    How about the Potato Salad you buy already made in SaveMart and other grocery stores? They have sugar in them and they are subtly sweet!!!
    Didnt you see the other ingredients put in it to equal the variables of sugar like the vinegar, onions, celery, mustard,and butter and added salt put in 2 different times??
    Salt goes into cookie and cake baking whats difference here only sugar should be put into it.
    They go together to bring a balance to the flavor!!

      +hollaitsadinosaur hi!!! this recipe calls for 2.5-lb russet potatoes. It could fit a small aluminum tray. So what I did was I doubled up the recipe! I used 5 lbs of russet potatoes. Use the whole 12 oz can of evaporated milk too. Doubling it will fit a large size aluminum tray and can feed 15+ people. Make sure to add bacon! It took me a total of 3 hours to make these (including peeling of potatoes, boiling, refrigerating the dressing before adding the mayonnaise)... it will be GREAT. It has been a highly requested dish ever since I made it... and worth the 3 hours too

      This is an old fashioned cooked salad dressing originally meant to be a replacement for or a way to stretch mayo during hard times. It's kind of like a sweet hollandaise sauce. My mother in law made this often.

      You can make some substitutions if you are on a restricted diet. I make mine quite a bit simpler and without some of the fatty ingredients and mine tastes pretty good. The primary flavors come from the seasonings and onions anyways

    This is the most non-traditional dressing I have ever seen for potato salad, but it looks very interesting. Initially, it looked like you were making a custard. I will make two batches of potato salad today, one traditional and one with your recipe. My family always enjoys a side-by-side taste test.

      Americans are fat because they put additives in the food that cause you to Crave. Restaurant and fast-food also have two to three times calories that homemade does. The salad, I will grant you, is a little heavy, but anything homemade is better than purchased out.

    I will be honest.. I am a bit frightened by this recipe but I believe I will try it, nonetheles :) It is really different in almost every way from recipes I typically follow for potato salad!       SAN DEE: thanks for the reminder ;) I just watched the video again to refresh my memory and I honestly could not remember watching it ever before! It seems slightly weird (the recipe) and it's a bit hard to imagine trying, but I think I will. Here in Sweden I don't usually crave potato salad until the spring/summer so it's a little ways off still from warmer weather :) But thanks to your reminder, I will get around to making it for the family and I will try to recall your comment about the outcome and post here :)

    Guess what, Danica Kim? Some potatoes have red skins. Also violet, soft purple, deep brown, and pale brown. Some potatoes with purple skins also have purple flesh inside. Lots of options!

      I know right? There's not even that much sugar there to make a difference so it seems. You can probably add agave nectar instead or manuka honey, or regular honey. I could never understand why recipes like this call for salt and sugar.

    Made recipe yesterday & took to gathering of 40plus people today - this was the first thing to go, many wanted seconds and I made enough to use at least 5 pounds of potatoes! This is a keeper! It is sweet but like it was posted, you can adapt to suit your tastes needs, like you do everything else you prepare anyway! Tastes far better then cook potatoes and throw in mayo and mustard, etc.. Try it, take the time and taste the difference!

    Thank you! I made Potato salad, and followed this recipe but with apple cider vinegar, regular D milk, red onion, banana peppers, and Spanish olives. Also probably more eggs and potato. Turned out fucking amazing. Especially with some weed and coffee.

    Scathing remarks are due to the amount of sugar added, just don't add that much sugar to it or just don't add it. I made this and it turned out to be great, I just didn't add onions, I hate onions, another thing which I didn't do is that I didn't keep inside refrigerator. I ate it on the spot.

    Wow so many say how unhealthy this is. If we stayed at home eating this food instead of fast food or junk food there would be less obesity here in North America.....One serving has probably less sugar and fat than a double double Tim's coffee, and has essential vitamins and minerals much healthier. No one is supposed to eat the whole recipe!

      This recipe is called a cooked salad dressing meant to replace or stretch your mayo. It is an old recipe. My mother in law made it often. She would be 100 if still alive.

    This is basically how I make mine, without making a sauce, I just add mayo mustard sweet cubes vinegar sugar eggs to mine and my whole family loves it, I have to make it for my 2 sisters and my mother every thanksgiving and Christmas...

    If you have only sweetened condensed milk, you can use it with similar effect, just reduce the amount of sugar. This is one of those recipes that that seems like unnecessary work but takes it to another level if you have time.

    I use the scallions and sliced black olives. I also add some course ground pepper and some parsley straight from my garden. Everyone says they love it.
